AWESOME PULLED PORK BBQ
This is a pulled pork BBQ that is sure to please everyone's taste. Best to use a slow cooker!

Steps:
- Place pork in a slow cooker and season to taste with garlic powder, poultry seasoning, salt, and pepper. Add quartered onion, apple, and 3 celery stalks. Pour chicken broth into slow cooker.
- Cook on Low until very tender, about 8 hours. Transfer pork to a large platter and discard juice and vegetables. Shred pork with a fork and return to the slow cooker.
- Prepare barbecue sauce while pork is cooking. Melt butter in a large saucepan or small Dutch oven over medium heat; cook and stir 2 cups celery and 1 1/2 cups onion until onion is translucent, about 5 minutes. Add ketchup, water, vinegar, brown sugar, Worcestershire sauce, mustard, liquid smoke, and 1 tablespoon garlic powder; mix. Reduce heat to low and simmer, stirring occasionally, until sauce is thickened, about 10 minutes. Pour barbecue sauce over shredded pork.
- Continue cooking pork on Low heat until flavors combine, about 2 hours.

BBQ PULLED PORK STUFFED JALAPENOS
BBQ Pulled Pork Stuffed Jalapenos are a great party appetizer or snack!

- Heat oven to 375° degrees. *Wear gloves to handle jalapenos. Using a sharp knife, slice peppers lengthwise through the center to create two halves.
- Discard the seeds. Depending on how hot you prefer the dish to be, either leave the white rib inside the pepper intact for more spicy-heat, or remove and discard before stuffing.
- Mix the pulled pork with enough barbecue sauce to lightly coat the pork, or as you prefer it. Fill each half of the peppers with approximately 2 tablespoons of the pulled pork (this will depend on the size of the peppers) and place in a greased baking dish.
- A 9x11-inch dish is usually big enough, depending on the size of the peppers. Repeat until all the peppers are stuffed.
- Pour 2 tablespoons of water in the bottom of the dish, under the peppers. Top with cheese and bake for 25 to 30 minutes, until cheese is browned and bubbly. Serve with sour cream and extra barbecue sauce at the table for garnish.

FOX BROS. BAR-B-Q SMOKED PORK JALAPENO POPPERS
Steps:
- Bring a few inches of canola oil to 350 degrees F in a deep pot.
- Trim the tops from the jalapenos, then fry until blistered and soft, 5 to 8 minutes. Cut in half and remove seeds and membranes. (Keep oil warm.)
- Mix the cream cheese and Cheddar Jack together in a bowl.
- Open a jalapeno half and spread some Chopped Pork along the bottom of the jalapeno, making a 1/4- to 1/2-inch layer. Spread the cheese mixture along the top of the pork mixture. Repeat until all jalapeno poppers are prepped.
- Beat the eggs in a bowl. Add the flour to a second bowl. Add the breadcrumbs to a third.
- Roll the stuffed jalapeno in the flour first, then submerge it in the egg, then move to coat in the breadcrumbs. Set on a rack. Repeat until all jalapenos are breaded, then repeat the breading process one more time on all jalapenos.
- Bring frying oil back to 350 degrees F.
- Fry poppers until golden brown. Remove to a rack to dry. Serve with ranch dressing or your favorite dipping sauce.
- Preheat a smoker to 225 degrees F.
- Stir together the paprika, salt, chili powder, garlic powder, onion powder and pepper in a bowl. (See Cook's Note.)
- Season the pork butt liberally with the dry rub (save the remainder for another use). Place on smoker and let smoke, adding wood chips as necessary to provide smoke, until the internal temperature registers 200 degrees F, 10 to 12 hours. Let rest for 2 hours, then chop.

- mix cream cheese, cajun spice, and garlic powder together make sure they are well mixed.
- (you can add more cajun spice to give these guys a real kick).
- remove stems from jalapenos and cut lengthwise remove all the seeds and as much of the white veins as possible to allow room for filling.
- fill each jalapeno half with some cream cheese mixture.
- wrap a half slice of bacon around the half and secure with a toothpick.
- when coals are ready place jalapenos on the grill filling side up and cook for 10 minutes or until bacon is done (changed color and sizzling).
- these little guys can get real hot if you want them to or they can be as mild as i make them.
- just be sure to mix the cream cheese mix well or you will get a few hot and the rest mild.

- In a bowl, stir together the sausage, panko crumbs, and bbq sauce. Spoon roughly a tablespoon of the sausage mixture into each jalapeno half. Wrap each in half a strip of bacon. Place on a ventilated grill or broiling pan. Sprinkle fresh cracked pepper over top of the wrapped peppers.
