Time 10h30m

Yield 10

Number Of Ingredients 20

1 (5 pound) boneless pork loin roast
1 pinch garlic powder, or to taste
1 pinch poultry seasoning, or to taste
salt to taste
ground black pepper to taste
1 large onion, quartered
1 apple, cored and quartered
3 stalks celery
1 (14.5 ounce) can chicken broth
½ cup butter
2 cups chopped celery
1 ½ cups chopped onion
4 cups ketchup
2 cups water
⅔ cup cider vinegar
½ cup brown sugar
¼ cup Worcestershire sauce
2 tablespoons prepared mustard
1 tablespoon liquid smoke flavoring
1 tablespoon garlic powder

Steps:

  • Place pork in a slow cooker and season to taste with garlic powder, poultry seasoning, salt, and pepper. Add quartered onion, apple, and 3 celery stalks. Pour chicken broth into slow cooker.
  • Cook on Low until very tender, about 8 hours. Transfer pork to a large platter and discard juice and vegetables. Shred pork with a fork and return to the slow cooker.
  • Prepare barbecue sauce while pork is cooking. Melt butter in a large saucepan or small Dutch oven over medium heat; cook and stir 2 cups celery and 1 1/2 cups onion until onion is translucent, about 5 minutes. Add ketchup, water, vinegar, brown sugar, Worcestershire sauce, mustard, liquid smoke, and 1 tablespoon garlic powder; mix. Reduce heat to low and simmer, stirring occasionally, until sauce is thickened, about 10 minutes. Pour barbecue sauce over shredded pork.
  • Continue cooking pork on Low heat until flavors combine, about 2 hours.

BBQ PULLED PORK STUFFED JALAPENOS

BBQ Pulled Pork Stuffed Jalapenos image

BBQ Pulled Pork Stuffed Jalapenos are a great party appetizer or snack!

Provided by Judy Purcell

Categories     Appetizer

Time 45m

Number Of Ingredients 6

4 jalapeno chile peppers
1 cup pulled pork -- approximately
1/4 cup barbecue sauce -- to taste (, plus more for garnish)
2/3 cup cheese -- any favorite mix
Sour cream (, for garnish)
Oil or butter to grease baking dish

Steps:

  • Heat oven to 375° degrees. *Wear gloves to handle jalapenos. Using a sharp knife, slice peppers lengthwise through the center to create two halves.
  • Discard the seeds. Depending on how hot you prefer the dish to be, either leave the white rib inside the pepper intact for more spicy-heat, or remove and discard before stuffing.
  • Mix the pulled pork with enough barbecue sauce to lightly coat the pork, or as you prefer it. Fill each half of the peppers with approximately 2 tablespoons of the pulled pork (this will depend on the size of the peppers) and place in a greased baking dish.
  • A 9x11-inch dish is usually big enough, depending on the size of the peppers. Repeat until all the peppers are stuffed.
  • Pour 2 tablespoons of water in the bottom of the dish, under the peppers. Top with cheese and bake for 25 to 30 minutes, until cheese is browned and bubbly. Serve with sour cream and extra barbecue sauce at the table for garnish.

Number Of Ingredients 16

Canola oil, for frying
8 jalapenos
8 ounces cream cheese
6 ounces shredded Cheddar Jack cheese
4 ounces Fox Bros. Chopped Smoked Pork, recipe follows, tossed in barbecue sauce
2 eggs
1/2 cup all-purpose flour
1 cup panko breadcrumbs
Ranch dressing or your favorite dipping sauce, for serving
1 1/2 cups paprika
1 1/4 cups kosher salt
3/4 cup chili powder
1/2 cup granulated garlic powder

1/2 cup ground black pepper
One 8- to 10-pound pork butt

Steps:

  • Bring a few inches of canola oil to 350 degrees F in a deep pot.

  • Mix the cream cheese and Cheddar Jack together in a bowl.
  • Open a jalapeno half and spread some Chopped Pork along the bottom of the jalapeno, making a 1/4- to 1/2-inch layer. Spread the cheese mixture along the top of the pork mixture. Repeat until all jalapeno poppers are prepped.
  • Beat the eggs in a bowl. Add the flour to a second bowl. Add the breadcrumbs to a third.
  • Roll the stuffed jalapeno in the flour first, then submerge it in the egg, then move to coat in the breadcrumbs. Set on a rack. Repeat until all jalapenos are breaded, then repeat the breading process one more time on all jalapenos.
  • Bring frying oil back to 350 degrees F.
  • Fry poppers until golden brown. Remove to a rack to dry. Serve with ranch dressing or your favorite dipping sauce.
  • Preheat a smoker to 225 degrees F.
  • Stir together the paprika, salt, chili powder, garlic powder, onion powder and pepper in a bowl. (See Cook's Note.)
  • Season the pork butt liberally with the dry rub (save the remainder for another use). Place on smoker and let smoke, adding wood chips as necessary to provide smoke, until the internal temperature registers 200 degrees F, 10 to 12 hours. Let rest for 2 hours, then chop.

  • In a bowl, stir together the sausage, panko crumbs, and bbq sauce. Spoon roughly a tablespoon of the sausage mixture into each jalapeno half. Wrap each in half a strip of bacon. Place on a ventilated grill or broiling pan. Sprinkle fresh cracked pepper over top of the wrapped peppers.
  • Heat grill to high heat. Put in the grill pan on indirect heat (meaning, turn off the burners directly under the peppers). Cook 20 minutes until and stuffing is cooked through and bacon is starting to crisp. During this time, watch the grill temperature to keep it ~375-400F, turning on the direct burners under the peppers occasionally if necessary to maintain temperature.
  • Using thongs, gently turn each pepper over onto the grill grate over direct heat, top side down - this will drain off the fat from the sausage and crisp the tops of the bacon and peppers. Grill another minute or two until they are a little charred and awesome. Yield: 36 appetizers.
