MOM'S JIFFY CINNAMON ROLLS
This is my favorite recipe because it is so quick. Frost if desired.

Steps:
- Combine 3 cups flour, cake mix, yeast, and salt in a large bowl; beat warm water into flour mixture until thoroughly combined. Mix remaining 1 cup flour into batter to make a soft dough.
- Turn dough out onto a floured work surface and knead until smooth, 6 to 8 minutes. Roll dough into a 9x18-inch rectangle. Spread softened butter over dough and sprinkle evenly with sugar and cinnamon. Roll dough into a log, starting with a long edge, and pinch edges together to seal.
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Cut dough into 1-inch thick slices and arrange on prepared baking sheet. Cover rolls and let rise in a warm place until doubled, about 15 minutes.
- Bake in the preheated oven until cinnamon rolls are lightly browned and cooked through inside, 15 to 18 minutes.

Steps:
- In a large mixing bowl, dissolve yeast and 1/3 cup sugar in warm water. Stir in salt and 2 cups flour. Beat mixture for 2 minutes. Beat in eggs and oil. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition.
- When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 5 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes. In a small bowl, stir together 1/2 cup sugar and 2 teaspoons cinnamon; set aside.
- Divide the dough into twelve equal pieces. Take each piece of dough, roll into a log and roll in cinnamon sugar mixture. Place the knots in a lightly greased 9x13 inch baking pan. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 30 minutes, until golden.

MRS. MANWARREN'S CINNAMON ROLLS
Steps:
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan.
- For the dough: Scald the milk. In a stand mixer with the dough attachment, combine the salt, butter and 1/2 cup granulated sugar. Add the scalded milk. Add the eggs and vanilla and mix until combined.
- In a separate bowl, add the yeast to the hot water with 1 teaspoon granulated sugar. Let the yeast mixture sit for 3 minutes to make sure the yeast activates. It should foam and start to bubble.
- Add the yeast mixture to the mixer. Add 4 cups flour and Clear Jel Instant, if using, to the mixer. Mix on low speed for 3 minutes. If the dough is too sticky, add flour in 1/4-cup increments, using no more than 5 cups of flour total.
- Let the dough rise in the mixer bowl until it doubles in size, 1 to 1 1/2 hours. Punch down the dough. Roll out on a floured surface to a 12-by-8-inch rectangle.
- For the filling: Spread the melted butter on the rolled-out dough.
- In a bowl, combine the brown sugar, cinnamon and salt. Spread the filling mixture on top of the buttered dough. Lightly dust with 1 teaspoon flour.
- Roll the dough into a log. Cut the log into 8 pieces. Place in the prepared pan. Let the dough rise again until it doubles, 1 to 1 1/2 hours. Bake until golden brown, 20 to 30 minutes.
- For the glaze: Mix the confectioners' sugar, maple extract and milk in a bowl.
- Allow the cinnamon rolls to cool a bit, then drizzle with the glaze.
BA'S BEST MORNING BUNS
Steps:
- Dough:
- Whisk yeast, 1 cup warm milk, and 1 tsp. honey in the bowl of an electric mixer fitted with paddle attachment to combine, then let sit until foamy, about 5 minutes. Add egg whites, 2 cups bread flour, and remaining 1/4 cup honey and beat with paddle on medium-high speed until mixture is very light and thick, about 3 minutes. Remove paddle, scrape mixture back into bottom of bowl, and sprinkle whole wheat flour and 1 1/2 cups bread flour over top (do not stir). Place bowl in a warm spot and let sit uncovered until mixture is bubbling up around flour, 30-40 minutes.
- Add salt, orange zest (if using), vanilla extract, 5 egg yolks, and remaining 1/4 cup cold milk to mixture and mix with dough hook on low speed until a shaggy dough forms. Increase speed to medium and work dough until it is smooth, soft, and elastic and climbing up the hook, 8-10 minutes (it will clear the sides of the bowl but still stick slightly to the bottom; if after 5 minutes the dough is still very sticky, add bread flour a tablespoonful at a time until dough is just tacky). Reduce mixer speed to medium-low and add butter pieces one at a time, letting dough absorb butter completely before adding the next piece. This part takes a while, so be patient. Dough should be very smooth and slightly tacky and have a soft, buoyant texture. Cover and chill at least 8 hours and up to 16 hours.
- Filling and assembly:
- Cook brown sugar, cinnamon, cardamom, 1/4 cup honey, and 8 Tbsp. butter in a small saucepan over low heat, stirring constantly, just until butter is melted and mixture is smooth. Let cool.
- Punch down dough and turn out onto a lightly floured surface. Divide in half, place 1 piece back into bowl, cover, and chill while you work. Roll out remaining piece of dough on a sheet of lightly floured parchment paper to roughly a 16x12" rectangle. Spread half of brown sugar mixture over dough. Starting at side closest to you (make sure it's a long side) and using the parchment paper to help you, roll dough into a tight log. If dough gets too warm or sticky to work with, slide (with parchment) onto a baking sheet and chill until firm, then proceed. Place log, seam side down, on a rimmed baking sheet. Chill until firm, 20-30 minutes.
- Repeat process with second half of dough and remaining brown sugar mixture. Spray cups of two 12-cup muffin pans with nonstick spray. Place a rack in center of oven and preheat to 350°F.
- Trim chilled dough logs about 1/2" from ends and cut each on a slight diagonal into 12 equal pieces. Place, cut side up, in prepared muffin pan and cover loosely with plastic wrap. Let sit at room temperature until puffed and expanded to edges of muffin cups (dough will spring back when poked but hold a slight indentation), 25-35 minutes.
- Bake buns, rotating pans once left to right and front to back, until golden brown all over, 20-25 minutes.
- Meanwhile, heat remaining 4 Tbsp. butter and remaining 1/4 cup honey in a small saucepan over low, stirring a bit, until smooth. Remove from heat.
- Pull buns out of oven and brush tops with butter mixture; sprinkle with sanding sugar. Transfer buns to a wire rack (if sugar cools in pan, it will harden and buns will stick); let cool.
MY MOM'S STICKY CINNAMON BUNS
A recipe handed down from my Mom. We tweaked and tweaked till we got it just right! If Pillsbury Hot Roll mix ever goes off the market, I'll have a lot of recipes that don't work anymore. I use it as a base for everything!

- COMBINE contents of box, sugar and yeast packet in large bowl; MIX WELL.
- STIR in hot water, butter and egg until dough pulls away from sides of bowl.
- Turn dough out onto lightly floured surface.
- With greased or floured hands, shape dough into a ball.
- KNEAD dough for 5 minutes until smooth.
- Cover dough with large bowl' let rest 5 or 10 minutes.
- (skip steps 5 & 6 if making icing topped cinnamon buns).
- Make pan coating, if using, by mixing all together in a small bowl,.
- microwave for about a minute until blended.
- Make filling and set aside.
- At this point, if making stickies, spread into a buttered 9"X13" pan or two 9" pans.
- TO SHAPE roll dough to about a 10" X 15" rectangle.
- SPREAD filling mixture evenly over dough.
- Starting with narrow side, roll tightly and pinch edges to seal.
- Cut into 12 or 16 even pieces and place cut side down in prepared pans.
- Twelve look nice in the 9" X 13" pan,eight each make nice 9" pans.
- Cover loosely with plastic wrap or clean towel and let rise in a warm place 30 minute.
- Uncover rolls, bake at 375o F. for 20 to 30 minute or until golden brown.
- Cool one minute, remove from pans by flipping onto serving plate for stickies.
- You can frost right in pan when almost cool but still warm for plain cinnamon rolls.
- NOTE: prep. time includes rise time. if you have extra time, do a rise in the bowl first then go on to the shaping step. Extra rising gives a tender bread.
- The topping is only used when making sticky-style.

- Preheat oven to 400°. In a food processor, combine the first 5 ingredients; cover and process until smooth. Add the flour, baking powder, baking soda and salt; cover and pulse until mixture forms a soft dough., Transfer to a lightly floured surface; knead 4-5 times. Roll into a 15x12-in. rectangle. Brush butter to within 1/2 in. of edges. Combine the pecans, brown sugar and cinnamon; sprinkle over dough. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Place cut side down in a greased 9-in. round baking pan., Bake until golden brown, 20-25 minutes. Cool for 5 minutes. Combine glaze ingredients; drizzle over rolls. Serve warm.

Steps:
- Divide Sweet Dough in half.
- Roll out each half into an oblong 14x9 inches.
- Brush lightly with melted butter.
- Sprinkle each oblong with a mixture of sugar, cinnamon and raisins.
- Roll up as for jelly roll to make roll 9 inches long.
- Seal edges firmly.
- Cut into nine equal pieces.
- Place cut side up about 1/3 inch apart in a greased pan.
- Cover, and let rise until doubled in bulk.
- Bake at 350 degrees for about 35 minutes.
- Top with icing if you like!
