CLASSIC BBQ SAUCE

3 tablespoons vegetable oil
1 large onion , finely chopped
2 garlic cloves, minced
1 cup ketchup
1 cup American-style chili sauce
1/2 cup packed light brown sugar
1/2 cup cider vinegar
2 tablespoons steak sauce
2 tablespoons spicy brown mustard
2 tablespoons Worcestershire sauce

Steps:

  • In a heavy bottomed medium saucepan, heat the oil over medium heat. Add the onion and the garlic and cook, stirring often, until the onion is golden, about 8 minutes.
  • Stir in the remaining ingredients and bring to a boil. Reduce the heat to low. Simmer, stirring often, until slightly thickened, about 40 minutes. Cool completely. (To store, refrigerate in an airtight container for up to 1 week)
  • Brush onto food during the last 10 minutes of grilling.

2 cups Worcestershire sauce
3 cups catsup
1 1/2 cups apple cider vinegar
1/2 cup Dijon mustard
1 1/2 cups brown sugar
1/2 cup honey
1/2 cup sweet soy sauce
1 large onion, chopped
1 anaheim chili, chopped
8 garlic cloves, minced
5 tablespoons chili powder
1 tablespoon crushed cumin
1 lemon, juice of

Steps:

  • In a larger pot, combine all ingredients.
  • Bring to a slow boil, lower heat and simmer for at least 2 hours.
  • Then strain before using.
  • Makes 8 cups.
