EASY GRILLED POTATO PLANKS RECIPE
You will love everything about these grilled potato 'planks' - how easy they are, how they go with everything, and how crisp and tender they turn out.

Steps:
- Wash and cut the potatoes in about 1/4" slices lengthwise. Try to make the slices all the same width for even cooking.*
- Lay the planks in one layer on a cookie sheet and brush one side with a little olive oil. Sprinkle with seasonings, turn and repeat on the other side with the oil and spices.
- Heat your grill on high.
- Turn the heat to low while adding the potatoes to the grill in a single layer, then turn the heat up, close the lid and grill about 3-5 minutes (or until the potatoes have grill marks). Turn and grill 3-5 more minutes before checking each potato and removing any cooked planks to the warming level.
- Continue cooking until all potato planks are cooked through.

This is a recipe I use to throw a potato on the grill while I am grilling. I like how it makes the skin crispy and the center soft. Use whatever toppings you like, as in butter, sour cream, cheese, and bacon bits.

- Warm up the grill to medium heat.
- Wash and dry potatoes. Poke potatoes all over with a fork. Rub with olive oil and sprinkle with salt. Roll each potato up in aluminum foil and fold the ends in. Place potatoes on the grill and close the lid. Grill until fork-tender, rotating every 15 minutes or so, about 1 hour.

Steps:
- Preheat oven to 400 degrees.
- Cut the potatoes into wedges and place the wedges in a large bowl. Cover the potatoes with water and allow to soak for 10 minutes. Strain the potatoes and dry each wedge, then return to the bowl.
- Toss the potatoes with the vegetable oil.
- In a small bowl, combine the paprika, salt, sugar, mustard powder, chili powder, cumin, pepper, garlic, and cayenne. Whisk to mix.
- Add the seasoning mixture to the bowl and toss the potatoes to coat.
- Spread the potatoes in an even layer over a large baking sheet.
- Bake in the preheated oven for 30 minutes, turning the potatoes halfway through the cook time, until the potatoes are golden brown on each side.
