BC SEAFOOD CHOWDER "POUTINE"

BC Seafood Chowder

This recipe makes a wonderful chowder. Most of the time at the restaurant, I use it over our house-made French fries but it's really quite versatile. Certainly you can cook your own, but even fries out of the oven make the perfect host. As a base for a piece of seared fish, a soup, or, if thickened a little more, a great dip for chips.... think spinach and seafood dip hot out of the oven.

Provided by Food Network

Time 1h

Yield 12 servings poutine or 4 servings chowder

Number Of Ingredients 24

2 shallots, finely diced
1/2 cup white wine
1/2 cup all-purpose flour
4 cups cold whole milk
1 cup 1/3-inch-diced carrots
1 cup 1/3-inch-diced celery
1 cup 1/3-inch-diced fennel
4 tablespoons finely chopped fresh flat-leaf parsley
Salt
Finely sliced chives or green onions, for garnish
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 teaspoon white peppercorns
4 cloves garlic, sliced
4 shallots or 1 small onion, sliced
1 tablespoon butter
2 pounds fresh clams
1 1/2 cups dry white wine (I use sauvignon blanc)
6 to 8 sprigs fresh thyme, plus more if desired
3 bay leaves
2 pounds fresh mussels
1 pound smoked bacon, cut into 1/2-inch lardons
1 stick plus 3 tablespoons butter
2 cloves garlic, finely chopped

Steps:

  • For the stock: Sweat the coriander, fennel seeds, peppercorns, garlic and shallots in the butter in a heavy-bottomed pot (this will help control the heat so you don't burn the ingredients). When the shallots are translucent, add the clams, white wine, thyme and bay leaves. Cover the pot to steam the clams, and as they begin to open, add the mussels. Gently simmer, covered, until the mussels and remaining clams open, about 3 minutes.
  • When all the shells are open, strain off the liquid and reserve, setting aside the shellfish to cool slightly until you can handle them. Shuck the meat out of all the shells, refrigerate and reserve for the sauce. Discard the vegetables and herbs.
  • For the sauce: Cook the bacon in the same pot over medium heat to render the fat. This will help to make the roux later. When the bacon begins to brown, add 3 tablespoons of the butter, the garlic and shallots. Continue to sweat over medium heat until the shallots are translucent. Add the white wine and reduce until it's almost dry (au sec). Add the reserved shellfish stock and reduce by half. Remove from the heat and set aside on the stove.
  • Melt the remaining 1 stick butter in a separate small pot or deep saute pan to its bubbling point and stir in the flour very well with a wooden spoon, incorporating it while removing clumps. Cook 3 to 5 minutes over medium heat while stirring regularly. Add the roux to the bacon pan, and place over medium heat. Add the cold milk to the hot roux while stirring constantly. Bring to a boil, then reduce to a simmer. You will have to monitor it carefully and stir frequently so the flour doesn't stick to the bottom (if it does, don't panic! You can remove the sauce, clean the bottom of the pot and put it back in... phew!) Simmer 10 minutes, then add the carrots, celery and fennel, and continue cooking until the raw flour taste has been cooked out and the vegetables are tender (they will add texture to the finished chowder), 10 minutes longer.
  • Add the reserved mussels and clams. I use trim from the other fish I cook every day. Simmer 1 minute to heat through and add the parsley. Season with salt, garnish with the chives and serve immediately. Enjoy!

SEAFOOD CHOWDER

Seafood Chowder image

This chowder of root-cellar vegetables, clams and fish is one of the easiest and best things to cook for a weekend dinner with family and friends. Use a mixture of butter and the powdered dried seaweed called dulse as the flavored fat in which you sauté the vegetables before deglazing them, and each individual flavor in the resulting stew will pop - from carrot to leek, parsnip to potato, bacon to clam to scallop to fish. The seaweed is a powerful flavor enhancer. You can omit it if you want, but really, you shouldn't.

Provided by Sam Sifton

Categories     soups and stews, main course

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 16

36 medium-size quahog clams, usually rated "top neck" or "cherrystone," scrubbed under cold water to remove sand and grit
2 tablespoons unsalted butter
1/4 pound thick-cut bacon, diced
2 tablespoons dulse flakes
2 leeks, tops removed, halved and cleaned, then sliced into half-moons
2 carrots, peeled and halved, then sliced into half-moons
2 parsnips, peeled and halved, then sliced into half-moons
2 medium-size all-purpose potatoes, like Yukon Gold, cubed
1 cup dry white wine
3 sprigs thyme
2 bay leaves
2 cups heavy cream
Freshly ground black pepper to taste
1 pound firm white fish fillets, like cod, tautog or sea bass, cut into fingers
1/2 pound sea scallops, sliced into coins if very large
1/4 cup chopped parsley

Steps:

  • Put the clams in a large, heavy Dutch oven, add about 4 cups water, then set over medium-high heat. Cover, and cook until clams have opened, approximately 10 to 15 minutes. (Clams that fail to open should be discarded.) Strain clam broth through a sieve lined with cheesecloth or doubled-up paper towels, and set aside. You should have 5 or 6 cups. Remove clams from shells, and set aside as well.
  • Rinse out the pot, and return it to the stove. Add 1 tablespoon of the butter, and turn heat to medium-low. Add bacon, and cook, stirring occasionally, until the fat has rendered and the pork has started to brown, approximately 5 to 7 minutes. Use a slotted spoon to remove pork from fat, and set aside.
  • Add the dulse and the leeks to the fat, and cook, stirring frequently, until the leeks are soft but not brown, about 10 minutes. Add the remaining 1 tablespoon butter, then stir in the carrots, parsnips, potatoes and wine, and continue cooking until wine has evaporated and the vegetables have just started to soften, approximately 5 to 7 minutes. Add enough clam broth to just cover them, approximately 4 to 5 cups, reserving the rest for another use. Add the thyme and the bay leaves.
  • Partly cover the pot, and simmer gently until vegetables are tender, approximately 10 to 15 minutes.
  • Meanwhile, chop the clams into bits about the size of the bacon dice. When the vegetables are tender, add the cream, and stir in the chopped clams and reserved bacon. Add black pepper to taste. Let come to a simmer. (Do not let chowder come to a full boil.) Remove the thyme and the bay leaves, and discard.
  • If serving right away, slip the fish fingers into the chowder, place the scallops on the surface and allow them all to cook into translucence in the heat, approximately 5-7 minutes. But chowder improves mightily if it sits overnight to cure. If you have the time, don't add the fish and scallops right away, but allow the chowder to chill in the refrigerator overnight, then reheat it to a bare simmer before adding and cooking them through. Season to taste with salt and pepper, and serve, garnished with the chopped parsley.

Provided by Danielle Girouard

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Seafood     Shrimp Soup

Time 50m

Yield 8

Number Of Ingredients 16

⅓ cup butter
1 teaspoon olive oil
1 onion, minced
⅓ cup all-purpose flour
1 quart half-and-half, or as needed
2 cups bar clams, drained with juice reserved
⅓ cup grated Parmigiano-Reggiano cheese
2 potatoes, cubed
2 cups cream-style corn
1 large ear corn, kernels cut from the cob
1 cup sliced cherry tomatoes
1 ½ cups water, or as needed
sea salt and coarsely ground black pepper to taste
1 fresh haddock fillet, cut into 1-inch pieces
2 cups large shrimp, peeled and deveined
1 cup canned lobster meat, with juice

Steps:

  • Melt butter with olive oil in a large pot over medium-low heat; stir in onion and sauté until translucent, about 5 minutes. Whisk flour into butter mixture; whisk in half-and-half and juice from drained clams.
  • Stir Parmigiano-Reggiano cheese into onion mixture until melted, about 2 minutes; stir in potatoes, cream-style corn, corn kernels, and cherry tomatoes. If soup is very thick, stir in water, about 1/2 cup at a time, as desired; bring soup to a simmer and cook until potatoes are tender, about 15 minutes. Season with sea salt and pepper.
  • Stir drained clams, haddock, and shrimp into soup; simmer until haddock and shrimp are fully cooked for 5 minutes. Stir in lobster and its juice; cook just until heated through.

MOM'S NOVA SCOTIA SEAFOOD CHOWDER

Mom's Nova Scotia Seafood Chowder image

Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

4 ¼ cups heavy whipping cream
2 cups half-and-half

EASY SEAFOOD CHOWDER

Easy seafood chowder image

Make this creamy seafood chowder for one using any leftovers you might have in the fridge or freezer. Garnish with parsley and serve with crusty bread

Provided by Liberty Mendez

Categories     Lunch

Time 28m

Number Of Ingredients 13

1 small potato (about 150g), cut into 2cm cubes
½ tbsp vegetable oil
1 celery stick, finely chopped
1 shallot, peeled and finely chopped
1 garlic clove, grated
1 tbsp plain flour
200ml semi-skimmed or whole milk
100ml vegetable or fish stock
80g frozen prawns or smoked fish
75g fresh or frozen sweetcorn or peas (or use a mixture)
1 small lemon, zested and juiced
½ tbsp roughly chopped flat-leaf parsley, plus extra to serve (optional)
crusty bread, to serve (optional)

Steps:

  • Tip the potatoes into a small saucepan and cover with cold salted water. Bring to the boil over a medium heat , then reduce the heat and simmer for 5-6 mins until just softened. Drain and set aside.
  • Heat the oil in a medium saucepan over a medium heat and cook the celery and shallot for 3 mins until softened. Add the garlic and fry for another 30 seconds until fragrant.
  • Stir in the flour and cook for 1 min. Reduce the heat to low and slowly pour in the milk, whisking until you have a thick sauce. Stir in the stock and simmer for 2 mins until the sauce has thickened slightly again.
  • Tip in the fish, vegetables and cooked potatoes, and simmer for 4-5 mins until the veg has defrosted (if frozen) and the fish is cooked through. When the mixture is creamy and coats the back of a spoon, add the lemon zest and juice and up to 50ml water if the chowder is too thick. Season with black pepper, salt and the parsley.
  • Pour the chowder into a bowl, top with more black pepper, the extra parsley and serve with crusty bread, if you like.
