  • Cook potatoes in boiling water in large saucepan 20 min. or until tender.

1 1/2 pounds russet potatoes, rinsed
1 tablespoon white vinegar
Kosher salt
1 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
1 tablespoon Dijon mustard
1 teaspoon sugar
2 anchovies, chopped
2 cloves garlic, minced
2 tablespoons extra-virgin olive oil
1/4 cup panko breadcrumbs
Handful of fresh flat-leaf parsley, chopped

Steps:

  • Put the potatoes in a saucepan with enough water to cover by 2 inches. Bring the water to a boil and cook the potatoes until tender, 15 to 20 minutes. Drain and let cool for 5 minutes. Peel the potatoes and cut them into chunks. Put in a medium bowl and sprinkle with the vinegar while still warm; season with 1/2 teaspoon salt.
  • Whisk together the mayonnaise, lemon juice, mustard, sugar, anchovies, garlic and 1 teaspoon salt in a large bowl. Add the potatoes and toss to coat.
  • Heat the oil in a skillet over medium heat. Add the panko and cook until brown, about 3 minutes. Stir in the parsley.
  • Transfer the potatoes to a serving dish and sprinkle with the parsley breadcrumbs.

  • Preheat the oven to 400 degrees F. Butter a 13- by 9- by 2-inch baking dish. Set aside.

Boil until the potatoes are very tender, about 15 minutes. Drain the potatoes and return them to the same pot. Using a potato masher, mash the potatoes until smooth. 1 large onion, finely chopped
1/4 lb fresh mushrooms, sliced
2 large carrots, finely chopped
2 celery ribs, finely chopped
3 tablespoons flour
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried tarragon
1/4 teaspoon pepper
1 teaspoon kitchen bouquet browning sauce
3 cups hot mashed potatoes
3/4 cup shredded cheddar cheese, divided
paprika

Steps:

  • In a skillet, cook beef until no longer pink; drain.
  • Toss onion, mushrooms, carrots and celery in flour; add to skillet with the broth, Worcestershire sauce, tarragon and pepper.
  • Bring to a boil; reduce heat. Simmer, uncovered for 15-20 minutes or until the vegetables are tender. Add Kitchen Bouquet and stir to combine.
  • Transfer to a 2-qt baking dish. Combine potatoes and 1/2 cup cheese; spread over beef mixture.
  • Sprinkle with paprika and remaining cheese.

24 baby red potatoes
2 tablespoons olive oil, or as needed
cracked black pepper to taste
⅓ cup Caesar salad dressing
4 green onions, diced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until slightly tender, about 8 minutes. Drain and transfer potatoes to a baking dish. Drizzle olive oil over potatoes and season with black pepper.

1 minced small garlic clove

  • In a large pot, bring potatoes to a boil in salted water over high. Reduce to a simmer and cook until tender when pierced with a knife, 15 to 20 minutes. Drain and let cool completely. Cut potatoes into 1 1/2-inch pieces.

8 small russet potatoes, preferably the same size and shape
6 tablespoons olive oil, divided
kosher salt, to taste
freshly ground black pepper, to taste
3 tablespoons fresh lemon juice
1 ½ tablespoons dijon mustard
1 ½ tablespoons garlic paste
1 ½ tablespoons anchovy paste
2 oz grated parmesan cheese
2 tablespoons panko breadcrumbs, plus 2 teaspoons
16 leaves romaine lettuce, ribs removed, thinly sliced into ribbons
2 lemons, sliced into 8 wedges each, for serving

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Place the potatoes on the prepared baking sheet. Brush with 3 tablespoons olive oil and season with salt and pepper.
  • Bake until the potatoes are tender and golden brown, 40-50 minutes. Let cool for 5 minutes.
  • Transfer the potatoes to a cutting board and cut in half lengthwise. Using a small spoon, scoop out the potato flesh and save for another use or discard, leaving a ⅛-inch-thick shell of potato and skin on all sides. Return the potato shells to the baking sheet. Turn the broiler on high.
  • In a large bowl, whisk together the remaining 3 tablespoons olive oil, the lemon juice, mustard, garlic paste, and anchovy paste until smooth.
  • Brush some of the dressing over the insides of the potato shells. Sprinkle each with 1 teaspoon Parmesan cheese and ½ teaspoon bread crumbs.
  • Broil the potato skins until the outsides are crisp and the cheese is browned, 5-10 minutes.
  • Meanwhile, add the lettuce to the bowl with the remaining dressing and toss to coat well.
  • Transfer the hot potato skins to a serving platter. Divide the lettuce among the potato skins. Serve with lemon wedges for squeezing.

1 tbsp vegetable oil
50g bacon , thinly chopped
1 garlic clove , crushed
400g can chopped tomatoes
2 tsp tomato purée
1 tsp treacle or brown sugar
1 tbsp malt vinegar
400g can haricot beans , drained, rinsed
300g potato , peeled and cubed
2 tbsp milk
1 tbsp cream cheese

Steps:

  • Soften onion and celery in pan with oil for 10 mins. Add bacon, then fry for 3 mins, until beginning to brown. Add garlic, then cook for 30 secs. Pour in tomatoes and stir through tomato purée, treacle or sugar and vinegar. Simmer over a high heat until thickened, between 5-10 mins, stirring often to make sure mixture doesn't catch. Gently stir beans through, then cook for a further 2-3 mins on medium heat, until heated through.
  • Meanwhile, make mash. Boil potatoes until tender, about 15 mins, then drain. Mash with milk, cheese and seasoning. 3 Fill 2 small microwave-safe bowls three-quarters full with bean mixture. Add a generous dollop of mash to top, smooth over with a spoon. Chill when cool (or freeze for up to a month at this stage). Place small plate on top of dish, then microwave on High for 3 mins or until piping hot.
