GRANDMA'S CORN BREAD DRESSING
My grandmother often made this for my family at holidays and also just with good homemade meals. I hope you enjoy it as much as I have!

Steps:
- Prepare the dry corn bread mix according to package directions. Cool and crumble.
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
- In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
- In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
- Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

MAMA'S SOUTHERN CORNBREAD DRESSING
I grew up on mama's cornbread dressing. I have come across many cornbread dressing recipes; however, this is still the best. This stuffing has cubes of cornbread with the addition of onions, celery, eggs, and stock. It's the perfect Southern souffle!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x13-inch baking dishes.
- Combine cornbread and stale bread cubes in a large bowl. Set aside.
- Melt butter in a large skillet over medium heat. Add onions and celery and cook until transparent, 5 to 10 minutes.
- Pour onion mixture over the cornbread mixture. Add turkey broth, chopped turkey, soup, giblets, hard-cooked eggs, and flour. Mix so that all the cornbread is wet. Mix in parsley, sage, bay leaves, salt, and pepper. Add beaten eggs. Mixture should be "soupy." Pour mixture evenly into the prepared pans.
- Bake in the preheated oven until cooked through and set, 1 hour to 1 hour and 20 minutes.

- Prepare cornbread according to directions on package. Cool and crumble. Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the crumbled corn bread, onion, garlic, celery and eggs. Gently stir. Sprinkle with salt, pepper and sage.
- Add the chicken and turkey broth 1 cup at a time until the cornbread becomes moist but not wet.
- Place stuffing into a Dutch oven or loosely pack into a turkey. Bake for 1 hour or until stuffing reaches a temperature of 175 degrees F (80 degrees C).

- Preheat oven to 350°.
- Mix cornbread, celery, onion, eggs and 1 can of broth together.
- Add salt, pepper and sage to taste.

- Half way through cooking check moisture; slowly add other can of broth if needed.

- Preheat oven to 425 degrees.
- Combine first 6 ingredients in a large bowl. Stir together 2 eggs and buttermilk and add to dry ingredients. Stit until just moistened. Heat 2 tbls butter in a cast iron skillet until hot, pour batter into skillet and bake for 25 minutes until cornbread is golden brown. Cool and crumble.
- Melt 1/2 cup butter in large skillet over medium heat, add green onions and celery saute until tender.
- In a large roaster, combine crumbled cornbread, onion/celery mixture, chopped boiled eggs, coutons, 1 can of chicken broth, sage, and pepper. Refrigerate overnight.
- Stir in remaing 4 raw eggs and 3 1/2 cans of chicken broth. Bake in at 350 degree oven for 1 1/2 hours until golden brown.

MOM'S CORNBREAD DRESSING
A wonderful cornbread dressing that my Mom always served with our Thanksgiving Meal. Great served as a homey sidedish with a roasted chicken, too. You can bake the cornbread and biscuits a day or two ahead, which saves time and makes the preparation easy.

- Crumble the cornbread and biscuits into a large mixing bowl.
- Add salt, pepper, onion and sage.
- Mix well by hand.
- Slowly stir the chicken broth into mixture until it is well moistened.
- You may not need all of the broth, depending upon how moist/dry your cornbread and biscuits are. Do make the dressing moist tho - more moist is better.
- Using an ice cream scoop, scoop mounds of dressing into a greased baking dish.
- Bake at 350 drgrees for 30 minute.

- Boil chicken (or turkey), onion, and celery until meat is done and veggies are tender.
- Remove meat from broth and debone.
- Preheat oven to 400°F.
- In a large bowl, crumble cooled cornbread.
- Pour chicken (or turkey) broth over cornbread.
- Season with salt, pepper, garlic powder, poultry seasoning.
- In a separate bowl, tear bread slices.
- Pour 1/2 can of Pet Milk over the bread and allow to soak for 2 minutes, and then add to dressing.
- Pour the rest of the milk into the cornbread mixture.
- Add eggs and stir. (You may add meat if desired.)
- Pour into a 13" x 9" baking dish.
- Bake for 1 hour, or until firm.

- Boil together: chicken breasts,onion,celery,chicken broth,and bellpepper.
- Crumble cooled cornbread in large bowl.
- Add peeled and chopped eggs.
- Remove chicken when done and debone,if necessary.
- Chop up and add back to pot.
- Remove from heat.
- When cooled, add chicken and liquid to cornbread/egg mixture in bowl.
- Make sure all the cornbread is thoroughly wet,but NOT soupy.
- Use a slotted spoon to add as much of the onion,celery,bell pepper as possible.
- If not wet enough,add either more chicken broth or a can of cream of chicken soup.
- Add salt and pepper.
- Add ground sage a little at a time and taste test.It is EASY to add too much.
- so add it SLOWLY.
- I add a little Tony's seasoning,to taste.
- After this mixture has cooled,add 5-6 raw,beaten eggs,stirring well after each.
- More bell pepper can be added at this point(if you feel necessary).
- Place in baking pan.
- Bake at 350.
- Let the top brown.
- This can be made ahead and frozen,but be sure to take it out 1 day in advance to thaw before baking or can be refrigerated overnight to bake the next morning.

- Mix with broth from turkey or hen (Boil poultry in water with salt, pepper, onions, celery to make broth. Save rest of broth for Giblet Gravy. Bake at 350 degrees until browned and most of broth has been absorbed. Giblet Gravy: Boil together broth, two boiled eggs and chopped giblets, until giblets are done. I usually boil for about an hour to make sure it is really done. Thicken with flour paste. OR: GIBLET GRAVY 1 pack Gizzards 1 teaspoon Salt 1 teaspoon Pepper 1 Celery Stalk (diced) 1 small Sweet Vidalia Onion 1 quart Water 4 Eggs 1 cup Half and Half 3 Chicken Bouillons 2 Smoked Turkey Necks 1 Clove Garlic (diced) 1/2 cup Butter 1/2 cup All-Purpose Flour Salt and Pepper In a large pot, boil Water, add Eggs and Turkey Necks. Sauté Onions, Celery, Garlic and Gizzards in Butter. Remove Eggs and Turkey Necks and add sautéed Giblets and Veggies. Add Salt and Pepper to taste, add Bouillon, pull turkey and add Half and Half and bring to a boil. Combine Butter and Flour and cook until it starts to brown, add to Gravy. Add diced Egg and cook on low until thick. Adjust seasoning.
NANNY ROSALIND'S CORNBREAD DRESSING

- Stir together salt, dried basil, oregano, thyme, white pepper, black pepper, cayenne pepper, and onion powder in a small bowl for seasoning mix.
- Cook pork in a 5- to 6-quart pot over medium-high heat, stirring to break up meat, until browned, 8 to 10 minutes. Transfer to paper towels; discard grease.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
- Add oil to the same pot and heat over medium-high heat. Add onion, bell pepper, celery, and garlic. Cook, stirring, until softened, about 5 minutes. Stir in seasoning mix. Add cooked pork, broth, and bay leaves; bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Remove and discard bay leaves. Mix in cornbread.
- Transfer dressing mixture to the prepared baking dish. Cover with foil.
