Chinese Beef & Green Beans image

Easy to make beef stir fry with green beans.

One third cup low sodium beef or chicken broth
2 TBS low sodium soy sauce
1/4 cup oyster sauce (found in international aisle)
2 tsp rice wine vinegar
1 tsp red pepper flakes
3 TBS canola or vegetable oil
1 pound green beans, trimmed and cut in half
1 pound flank steak, trimmed and sliced thinly into strips
6-8 scallions, sliced diagonally into 1 inch pieces
4 garlic cloves, minced
1 inch knob ginger, peeled and minced

Steps:

  • In a small bowl, whisk broth, soy sauce, oyster sauce, vinegar, and red pepper flakes; set aside.
  • Heating 1 TBS of the oil in a large skillet over high heat for 1 minute. Add green beans and saute for 4 minutes. Transfer green beans to a plate; set aside.
  • Heat 1 TBS oil in the same skillet (empty), add the beef strips and cook for one minute without stirring. Saute beef for 3-4 more minutes, or until cooked through; set aside on plate with green beans.
  • Add remaining oil to skillet and add scallions; saute for 1-2 minutes, or until browning a bit. Add ginger and garlic and saute with scallions for 30 seconds. Add beef and green beans back to skillet and stir to combine.
  • Stir broth mixture then add to skillet; stir continuously until the sauce has thickened, about one minute.
  • Serve immediately

1 sweet red pepper (or green)
1 lb lean ground beef
1 tablespoon vegetable oil
2 garlic cloves, minced
1 tablespoon gingerroot, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cups green beans (diagonally halved and trimmed)
1/2 cup beef stock
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon cornstarch
2 green onions, thinly sliced

Steps:

  • seed, core and cut red pepper into thin strips, set aside.
  • in a wok stir fry beef over high heat until no longer pink, about 3 minutes. using a slotted spoon, transfer beef to plate.
  • drain fat from wok, add oil, stir fry garlic, ginger, salt and pepper over medium heat until fragrant, about 1 minute.
  • add green beans, red pepper and 2 tablespoons water, cover and steam until beans and pepper are tender-crisp, about 3 minutes.
  • return beef and any juices to wok. whisk together beef stock, hoisin sauce, soy sauce, and cornstarch. stir into wok.
  • bring to a boil, boil stirring until sauce is thickened and glossy, about 1 minute.
  • sprinkle with green onions and serve.

2 large egg whites
1 teaspoon sesame oil
2 tablespoons cornstarch
Kosher salt and freshly ground black pepper
1 pound boneless beef top round, sliced paper-thin against the grain
8 fresh chives, minced
1/2 cup peanut oil
1-inch piece fresh ginger, peeled and minced
2 garlic cloves, minced
2 green onions, white and green parts, chopped
1 dried red chile
3/4 pound green beans, halved on the bias
1/2 cup chicken broth
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon sugar
3 tablespoons creamy peanut butter
2 strips orange peel
1/4 cup roasted peanuts, chopped

Steps:

  • In a mixing bowl, whisk together the egg whites, sesame oil, and 1 tablespoon of the cornstarch until foamy; season with salt and pepper. Add the beef and chives, toss to coat in the marinade and stick it in the refrigerator for 30 minutes.
  • Pour the peanut oil in a large skillet or wok and place over high heat. When the oil is smoking hot, add 1/2 of the beef. (If you fry all the meat at once the oil temperature will drop and the beef will stew instead of crisp.) Fry for 2 minutes then remove to a paper towel to drain; repeat with the remaining beef. Very carefully drain all but 2 tablespoons of the hot oil into a safe container.
  • Stir-fry the ginger, garlic, green onions, and chile in the remaining oil until they perfume. Add the green beans; season with salt and pepper. Stir-fry the beans for 2 minutes until crisp-tender; remove from the pan. Mix the chicken broth with the remaining tablespoon of cornstarch to make a slurry and add it to the pan. Add the soy sauce, vinegar, sugar, peanut butter, and orange peel. Simmer until the sauce is thick, about 5 minutes. Return the beef and green beans to the pan, tossing to coat in the sauce. Garnish with chopped peanuts and serve with rice.

1 1/4 pounds beef sirloin, cut into 2-inch-long slices about 1/4-inch thick
1/4 teaspoon salt
1/4 teaspoon pepper

2 bunches watercress
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar

Steps:

  • Season 1 1/4 pounds beef sirloin, cut into 2-inch-long slices about 1/4 inch thick, with 1/4 teaspoon each salt and pepper. In a large skillet, heat 1 tablespoon canola oil over medium-high heat. 1 pound green beans, trimmed
Salt to taste
1 tablespoon soy sauce, low-sodium if desired
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 tablespoon peanut oil or canola oil

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.
