2 packages (3 ounces each) beef ramen noodles
2/3 cup hoisin sauce
2-1/4 cups water, divided
2 tablespoons olive oil, divided
1 pound fresh asparagus, trimmed and cut into 2-1/2-inch pieces
1 small garlic clove, minced

Steps:

  • Toss beef with 1/2 teaspoon seasoning from a ramen seasoning packet (discard remaining opened packet). In a small bowl, mix hoisin sauce and 1/4 cup water. , In a saucepan, bring remaining water to a boil. Add noodles and contents of the unopened seasoning packet; cook, uncovered, 3 minutes. Remove from heat; let stand, covered, until noodles are tender., Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat; stir-fry beef until browned, 3-4 minutes. Remove from pan., In same pan, heat remaining oil over medium-high heat; stir-fry asparagus with garlic until crisp-tender, 1-3 minutes. Stir in hoisin sauce mixture; bring to a boil. Cook until slightly thickened. Stir in beef; heat through. Serve over noodles.

1 pound beef tenderloin or top sirloin steak, cut into 3/4-inch cubes
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
2 garlic cloves, minced
1 green onion, sliced
1/4 cup butter, cubed
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1/2 pound sliced fresh mushrooms
1 tablespoon reduced-sodium soy sauce
1-1/2 teaspoons lemon juice
Hot cooked rice

  • Toss beef with salt and pepper. In a large skillet, heat oil over medium-high heat; saute beef 2 minutes. Add garlic and green onion; cook and stir until beef is browned, 2-3 minutes. Remove from pan., In same skillet, heat butter over medium-high heat; saute asparagus and mushrooms until asparagus is crisp-tender. Steps:

  • In a bowl mix together, soy,rice vinegar, hoisin sauce, brown sugar, chopped ginger, 2 tsps. sesame oil cornstarch and pepper flakes, set aside.
  • To 2 cups boiling water andd two beef ramen noodles, 1 seasoning packet, 4 scallions and 1 teaspoons sesame oil. Cook one minute, remove from heat; let stand covered.
  • In a large skillet heat oil, add boneless sirloin and garlic and stir fry until lightly browned. Remove beef, keep warm. Add second Tbls. of oil add asparagus; stir fry until done to your taste.
  • Add beef and soy mixture to skillet. Stir fry until thickened. Sprinkle with toasted sesame seed and more green onions. Toss with noodles and serve.

½ cup less sodium soy sauce
½ cup cold water (plus additional as needed)
3 tablespoons cornstarch
½ teaspoon minced fresh ginger ((or about ¼ teaspoon dried ginger))
1 tablespoon minced garlic ((or about ½ teaspoon garlic powder))
¼ cup brown sugar
1 lb. asparagus, trimmed and cut into 1-inch pieces
1 small red bell pepper, cut into thin strips
1 small onion, diced
1 lb. beef top round steak or flank steak, trimmed and sliced thin against the grain
For serving: rice (or cauliflower rice); noodles; sliced green onions

Steps:

  • Prepare the Sauce: In a bowl whisk together soy sauce, cold water, cornstarch, ginger, garlic, and brown sugar until completely combined. Set aside.
  • Heat 2 tablespoons of canola oil in a large skillet over high heat. Add the asparagus and stir-fry for about 2 minutes (or until crisp-tender). Add the red bell pepper and onion. Stir-fry for about 2 more minutes, or until crisp-tender. Remove to a plate and set aside.
  • Add meat to the skillet in a single layer (still over high heat) and cook for about 1 minute - do not stir or move the meat while it is browning. Flip the meat, cook on the other side for about 30 more seconds, and then remove to the plate with the vegetables. Drain the fat from the skillet.
  • Pour the sauce into the skillet and bring to a boil; reduce heat to low and simmer while whisking until the sauce thickens (about 1-2 minutes). If the sauce gets too thick, just add additional water until it reaches desired consistency. Return beef and vegetables to the skillet and stir to coat with the sauce. Serve with rice and garnish with sliced green onions, if desired.

The second of my three favorite Chinese recipes, adapted from The Frugal Gourmet. Since I don't like CRISP asparagus that tastes like grass to me, I make below the suggestion that you steam the asparagus briefly. I serve this over rice but it'd be good over noodles too.

1 1/2 lbs asparagus
1 lb flank steak, sliced thinly across the grain
3 tablespoons peanut oil
3 tablespoons soy sauce
1 teaspoon grated fresh ginger
3 tablespoons dry sherry or 3 tablespoons chinese rice wine
1 1/2 tablespoons cornstarch
2 -3 garlic cloves, thinly sliced
1 tablespoon fermented black beans, rinsed and chopped
1 pinch salt
1 pinch sugar
1/4 cup chicken broth

Steps:

  • Prepare the asparagus by washing, breaking the stem at the "natural" break point and slice diagonally into 1/2 to 1 inch pieces.
  • (OPTIONAL: Steam the asparagus pieces for 3-4 minutes.) Put aside.
  • Combine the marinade ingredients in a small bowl (soy sauce, ginger, sherry and cornstarch) then add the sliced meat. Mix well and let sit for about 15 minutes, stirring occasionally if you wish.
  • Head a wok or large frying pan, add the oil. When it is is just beginning to smoke, add the meat, laying each piece on one side in the pan, Do not turn but cook over high heat for a moment, until the one side begins to brown. Toss-stir the meat for a moment and remove from the pan, allowing the oil to drain back into the pan. You may want to do this in two batches to keep the meat sizzling.
  • Heat the pan to hot again and add the garlic. Stir-fry for a minute then add the rinsed, chopped black beans and stirfry another bit. Add the asparagus, toss with the vegetables then add the other T of soy sauce and the pinches of sugar and salt. Stirfy until the asparagus is done to your liking (probably about 5 minutes if you didn't steam it first; less if you did).
  • Add the meat and its drippings and the chicken broth. Stir to make a sauce, then serve.

1 pound fresh Chinese wheat noodles
½ pound fresh asparagus
2 tablespoons canola oil
2 cloves garlic, minced
1 teaspoon minced fresh ginger root

1 tablespoon fermented black beans
8 ounces spinach with stems, rinsed

Steps:

  • In a large pot of water boil noodles until al dente. Drain well. Rinse with cool water until the noodles are cool.
  • Break off the tough ends of the asparagus, and cut the rest of the spears into 2-inch lengths. In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the garlic and ginger, saute for 1 minute, make sure not to brown the garlic. Add the asparagus and 1/2 cup water. Simmer for 2 minutes.
  • Put the cornstarch into a small mixing bowl, stir in the remaining 1/2 cup water and the rice wine or sherry. Stir well. Add this mixture, the soy sauce, and the fermented black beans, if you're using them, to the simmering vegetables. Let the sauce boil for a few seconds, add the spinach and stir until it wilts. Remove the skillet from the heat
  • Heat the remaining oil in a skillet over high heat. Divide the noodles into four mounds, and place the mounds of noodles in the hot frying pan. Flatten the mounds in the frying pan so that more surface area will brown, reduce the heat to medium-high, and fry the cakes for at least 5 minutes, until they develop a golden-brown crust on the bottom. Turn the cakes over, and fry them for 3 minutes
  • While the noodle cakes cook, reheat the vegetables and the sauce slightly. Add the sesame oil, salt and pepper to the vegetable mixture. Place the noodle cakes on plates, spoon the sauce and vegetables over and around the cakes, and serve.

2 tablespoons Chinese rice wine
1 tablespoon hoisin sauce
1 teaspoon cornstarch
12 ounces flank steak, sliced into 1/4-inch strips
3 tablespoons dark soy sauce
1 tablespoon soy sauce
1/2 teaspoon sugar
2 tablespoons peanut oil
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1/2 teaspoon minced green onions, plus 1 cup cut-on-a-bias green onions
3 cups julienned Napa cabbage
1/2 teaspoon minced jalapeno

Steps:

  • In a large pot of boiling salted water, cook the noodles until al dente, about 8 minutes. Rinse under cold running water and drain well. Set aside. In a small bowl, combine the rice wine, hoisin, and cornstarch. Add the beef, toss to coat, and marinate for 15 minutes. In another bowl, combine the dark soy, soy sauce and sugar, and stir well to dissolve the sugar. Place a wok over a high heat and add 1 tablespoon of the peanut oil, swirling to coat. When hot, add the garlic, ginger, and minced green onions, and cook, stirring quickly, for 10 seconds. Add the beef and stir-fry for 3 minutes. Add the cabbage and stir-fry for 3 minutes. 1 teaspoon cornstarch
1 teaspoon soy sauce
1 teaspoon vegetable oil
1/4 teaspoon baking soda
1 tablespoon light soy sauce
1 tablespoon oyster sauce
2 teaspoons dark soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon salt ((or to taste))
1/4 teaspoon sugar
1/4 teaspoon white pepper
1 pound fresh lo mein noodles
1 clove garlic ((minced))
1 carrot ((medium carrot, julienned))
1/2 red bell pepper ((julienned))
1/2 cup mushrooms ((sliced))
1/2 cup bamboo shoots ((strips or sliced))
2 cups Napa cabbage ((shredded))
2/3 cup snow peas
2 cups mung bean sprouts
2 tablespoons vegetable oil ((divided))
1 tablespoon Shaoxing wine
2 scallions ((julienned, white and green parts separated))

Steps:

  • Slice the beef into thin strips against the grain. Place the sliced beef in a small bowl with baking soda, corn starch, soy sauce, and oil. This velveting step will make the beef tender and flavorful, with a glistening look. Set aside to marinate for 30 minutes.
  • Prepare the lo mein sauce by combining the soy sauce, oyster sauce, dark soy sauce, sesame oil, salt, sugar, and ground white pepper in a small bowl.
  • If using cooked lo mein noodles, rinse them under hot tap water to loosen them and drain thoroughly. If using uncooked noodles, cook them according to package instructions until they're al dente, and drain thoroughly. Set aside. Prepare the garlic and all the vegetables to have them ready for cooking. Arrange them in the order you will add them to the wok.
  • Place your wok over high heat until it's smoking lightly. Add 1 tablespoon of vegetable oil to coat the wok, and add the beef so it's all in one layer on the hot wok surface. Sear each side for about 30 seconds. Remove the beef from the wok and set aside.
  • Add another tablespoon of oil, along with the garlic, carrots, peppers, and mushrooms. Stir-fry for 30 seconds.
  • Add the bamboo shoots and the white parts of the scallions. Stir-fry for another 20 seconds, and then add the napa cabbage. Make sure your heat is at its highest now, and stir-fry everything together for another 30 seconds.
  • Add the prepared noodles. They should be warm or at room temperature, and not stuck together! If they are, just rinse them in hot water to loosen them up.
  • Add the Shaoxing wine around the perimeter of the wok, and toss the vegetables and noodles together using a scooping motion. After the noodles are warmed up (about 30 seconds to 1 minute), and your pre-mixed sauce.
  • Continue stir-frying with a scooping motion until the sauce is evenly distributed, making sure to scrape the bottom of the wok to prevent the noodles from sticking. High heat and a well-seasoned wok should also prevent any sticking.
  • Next, add the snow peas, mung bean sprouts, and beef (along with any juices that may have collected in the bowl). Continue stir-frying until the noodles are heated through and everything is thoroughly mixed.
  • Toss in the green parts of the scallions, and taste the lo mein. Adjust the seasoning to your liking (feel free to add more salt, soy sauce, oyster sauce, sesame oil, or white pepper according to your own palate). Plate and serve with homemade chili oil or hot sauce on the side!

1 tsp onion powder
12 oz noodles (measured uncooked)
1 lb asparagus
1 tbsp olive oil
2 shallots (diced)
1 tbsp minced garlic
3/4 c parmesan cheese (shredded)

Steps:

  • In a large greased skillet, brown hamburger with salt, pepper, garlic powder, and onion powder.
  • While beef is browning, cook pasta in boiling water for 10 minutes. Then add chopped asparagus to boiling water. Continue boiling until pasta and asparagus are tender.
  • Drain well when done. When beef is thoroughly cooked, spoon it out of the skillet and drain off any excess grease. Add shallots and garlic to the same skillet and cook over medium heat until they become transparent.

8 oz chinese egg noodles
2 Tbsp peanut oil
8 fresh asparagus trimmed and chopped
4 clove garlic minced
1 inch ginger grated
1/2 red onion thinly sliced
4 Tbsp beef stock
2 Tbsp rice wine
4 Tbsp oyster sauce
black and white sesame seeds for garnish
MARINADE
1 Tbsp each soy sauce and rice wine
1 tsp toasted sesame oil

Steps:

  • 1. Mix the ingredients for the marinade together. Add the steak and let marinate for 30 minutes. Cook the noodles according to package directions and drain.
  • 2. Add 1 tbsp oil to a wok or skillet. Add the asparagus and stir fry for 2 minutes then add the steak with the marinade. Cook until steak is at desired doneness.
  • 3. Remove the steak and asparagus and set aside. Add the other tbsp of oil to the pan and add the onion, garlic, and ginger. Cook 1 minutes. Add the stock, rice wine and oyster sauce and bring to a boil. Add the steak and asparagus back in the pan. Cook 30 seconds.
  • 4. Serve over the noodles and garnish with sesame seeds.

1 pound sirloin steak, cut into 1-inch cubes
2 tablespoons butter
1 large onion, sliced
1 cup beef stock
2 bay leaves
1 pinch dried thyme
salt and ground black pepper to taste
1 cup frozen peas
1 tablespoon cornstarch
4 cups egg noodles

Steps:

  • Heat a skillet over medium-high heat; cook steak, working in batches, until seared and browned on all sides, about 5 minutes. Transfer seared steak to a plate.
  • Melt butter in the same skillet over medium heat and saute onion until softened, 5 to 10 minutes. Add steak to onion and pour beef stock over steak; season with bay leaves, thyme, salt, and pepper. Bring to a boil, reduce heat to low, cover skillet with a lid, and simmer until steak is tender, 50 minutes to 1 hour 50 minutes.   • Heat your wok until smoking. Add a couple tablespoons of oil and swirl it around to coat your wok. Quickly spread the beef slices around the wok in an even layer. Let it sear for 15-30 seconds without stirring. Then give it a quick stir to sear the other side. The meat should be browned and no sticking should happen if you got the wok hot enough! Take the meat out of the pan and set aside.
