CREAMY PASTA CASSEROLE
This easy meal uses cream cheese to add an extra creamy texture to ingredients that are usually on hand. Quick and delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and return pasta to pot. Melt cream cheese into the pasta. Stir pasta sauce, Italian seasoning, and red pepper flakes into the pasta mixture.
- Heat a skillet over medium heat. Break ground beef into small pieces and add to the skillet; cook and stir until some of the fat has rendered, 2 to 3 minutes. Add onion and garlic to the beef, continue cooking until the ground beef is completely browned, about 5 minutes more. Stir beef mixture into the pasta mixture.
- Pour pasta-and-beef mixture into a 3-quart casserole dish. Sprinkle mozzarella cheese over the dish.
- Bake in preheated oven until the mozzarella cheese melts, 5 to 10 minutes.

- Preheat oven to 375F and spray a 9×13-inch casserole dish with cooking spray; set aside.
- Cook pasta according to package directions and drain.
- While the pasta is cooking, to a large Dutch oven, optionally add the olive oil (my beef was very lean and the oil was necessary), beef, onion, red pepper, and cook over medium-high heat until beef is cooked through and vegetables have softened; stir frequently and crumble the beef while it cooks; do not drain.
- Add the garlic, oregano, salt, pepper, and stir to combine. Cook for about 1 minute, or until garlic is fragrant.
- Add the cooked pasta to the beef mixture, add the marinara, and stir to combine and coat evenly.
- Add 1 1/2 cups cheese and stir to combine until the cheese has melted.
- Turn mixture out into the prepared baking dish and evenly sprinkle the remaining 1 1/2 cups cheese over the top.
- Bake for about 15 to 20 minutes, or until the cheese has melted on top.
- Optionally garnish with fresh herbs and serve immediately.

BEEF CASSEROLE WITH CREAMY CHEESE PASTA

- Tips: This is an excellent casserole for children and teenagers. Adults love it too! Substitute ground chicken or veal for beef. Its great to reheat. Make ahead: Prepare up to a day ahead but do not bake until ready to eat. In large nonstick skillet, heat oil; saute garlic and onions for 4 minutes. Add beef and saute until no longer pink, approximately 4 minutes. Add stock and tomato sauce; simmer on low heat for 12 minutes or until thickened, stirring occasionally. Set aside. Cook pasta in boiling water according to package instructions or until firm to the bite. Drain and place in baking dish. In medium nonstick saucepan, melt margarine, add flour and cook for 1 minute, stirring constantly. Add stock and milk; simmer on medium heat until slightly thickened, approximately 5 minutes. Add Cheddar cheese and Parmesan cheese. Add tomato sauce mixture to pasta. Mix well. Pour cheese sauce over top. Cover and bake for 15 minutes or until hot. Let rest for 10 minutes before serving. Steps:
- Preheat oven to 325 degrees.
- Brown meat in large skillet. Drain and return to pan. Stir in tomatoes, tomato sauce, and garlic. Simmer for a few minutes. Season to taste.
- Meanwhile cook noodles and drain. Combine hot noodles with cream cheese. Stir to combine and melt cream cheese. Add sour cream and green onions.
- In a 4 quart casserole, layer noodles, meat mixture, then top with grated cheddar.
- Bake for 30 minutes until bubbly.
- *If making ahead will need to increase cooking time.

- Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking it into crumbles; drain. Add the tomato sauce, garlic powder, salt and pepper. , In a large bowl, combine the cream cheese, cottage cheese, Parmesan cheese, onions and green pepper. Steps:
- Brown ground beef in a skillet with onion and garlic. Drain.
- While beef is browning, prepare pasta in a large pot according to package directions. Drain pasta and set aside.
- Return empty pasta pot to stove and over med-low heat, stir together tomato sauce and cream cheese until cream cheese is melted and mixture is smooth.
- Reduce heat to low. Add 1 cup of the cheddar cheese; stir well. Add thyme, oregano, basil, salt and pepper. Stir well.
- Add drained pasta, drained browned beef mixture and drained spinach to pot. Gently stir to combine and coat well.
- Pour into a 13 x 9" baking dish or similar size casserole dish. Sprinkle with remaining 1 cup cheddar cheese.
- Bake at 350 for 25-30 minutes or until cheese is melted and starting to slightly brown.
