2 pounds beef chuck, cut into 1-inch pieces
Kosher salt and freshly ground black pepper
1/4 cup canola oil
1 large onion, thinly sliced
4 carrots, diced
4 cloves garlic, minced
2 tablespoons sweet paprika
1 tablespoon tomato paste
1 teaspoon caraway seeds
4 cups beef broth
One 28-ounce can chopped tomatoes
1 teaspoon Worcestershire sauce
2 bay leaves
1/2 cup all-purpose flour
1/4 teaspoon ground nutmeg
Kosher salt and freshly ground black pepper
1/2 cup whole milk
2 large eggs
12 ounces stale bread, cut into 1/2-inch cubes
6 ounces Gruyere or Swiss cheese, shredded
3 scallions, finely chopped
Chopped fresh parsley or scallions, for garnish, optional

Steps:

  • For the goulash: Preheat the oven to 250 degrees F.
  • Sprinkle the beef with 1/2 teaspoon salt and a few turns of pepper. Heat a Dutch oven over medium-high heat and coat with the oil. When the oil is shimmering, sear the beef all over in batches until deep brown, about 4 minutes per batch. Transfer the beef to a bowl and set aside.
  • Add the onions and cook, scraping up any meat bits from the bottom of the pan, about 3 minutes. Add the carrots, garlic and a pinch of salt and saute until the onions are translucent, about 5 minutes. Add the paprika, tomato paste and caraway and stir to combine; cook for 2 minutes. Add the beef back to the pan, then add the broth, chopped tomatoes, Worcestershire sauce and bay leaves and stir to combine. Bring to a boil, then reduce to a simmer. Cover, transfer to the oven and cook until the beef is tender and can be broken down with a spoon but still maintains its shape, about 2 hours.
  • For the bread dumplings: Meanwhile, whisk together the flour, nutmeg, 3/4 teaspoon salt and a few turns of pepper in a small bowl. Whisk together the milk and eggs in a large bowl. Add the bread cubes, cheese and scallions to the egg mixture and stir to combine. Mix in the flour mixture. Let the dumpling mixture sit for 15 minutes.
  • Bring a large pot of salted water to a boil. Using a 1/3-cup ice cream scoop, form firmly packed balls of the dumpling mixture. Add them to the pot and boil until cooked through, 15 to 20 minutes.
  • Spoon the goulash into bowls and add a dumpling or two to each. Top with chopped parsley or scallions if desired.

Steps:

  • Season beef with salt and black pepper. Heat vegetable oil in a large skillet over high heat; cook and stir beef in hot oil in batches until browned on all sides, about 5 minutes per batch. Transfer to a large stockpot and reserve drippings in the skillet.
  • Return skillet to medium heat; stir onions into the reserved drippings, drizzle olive oil over onions, season with 1/2 teaspoon salt and cook until onion has softened, about 5 minutes. Transfer to the stockpot with beef.
  • Combine paprika, caraway seeds, black pepper, marjoram, thyme, and cayenne pepper in the skillet and toast over medium heat until fragrant, about 3 minutes. Add 1 cup chicken broth and stir; transfer to the beef and onion mixture.
  • Stir 3 cups chicken broth into beef mixture. Add tomato paste, garlic, vinegar, sugar, 1/2 teaspoon salt, and bay leaf; place stockpot over high heat and bring to a boil. Reduce heat to low and simmer until a fork inserts easily into the meat, 1 1/2 to 2 hours.

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Season steak with salt and pepper; add to skillet. Cook 2 to 3 minutes, turning cubes, until lightly brown on all sides. Transfer to plate; reduce heat to medium.
  • Add bacon to skillet; cook and stir 2 to 3 minutes, until just beginning to brown. Add onion, bell pepper, tomato paste and garlic; cook about 5 minutes, stirring occasionally, until vegetables soften. Add paprika; cook about 1 minute or until fragrant. Add broth; reduce heat to medium. Cook 5 minutes.

4 tbsp olive oil
700g stewing steak, cut into chunks
30g plain flour
1 large onion, thinly sliced
2 garlic cloves, finely chopped
1 green pepper, deseeded and thinly sliced
1 red pepper, deseeded and thinly sliced
2 tbsp tomato purée
2 tbsp paprika
2 large tomatoes, diced
75ml dry white wine
300ml beef stock, homemade or shop-bought
2 tbsp flat-leaf parsley leaves
150ml soured cream

Steps:

  • Heat oven to 160C/140C fan/gas 3.
  • Heat 1 tbsp olive oil in a flameproof casserole dish or heavy-based saucepan. Sprinkle 700g stewing steak chunks with 30g plain flour and brown well in three batches, adding an extra 1 tbsp oil for each batch. Set the browned meat aside.
  • Add in the remaining 1 tbsp oil to the casserole dish, followed by 1 large thinly sliced onion, 2 finely chopped garlic cloves, 1 green pepper and 1 red pepper, both finely sliced. Fry until softened, around 5-10 mins.
  • Return the beef to the pan with 2 tbsp tomato purée and 2 tbsp paprika. Cook, stirring, for 2 mins.
  • Add in 2 large diced tomatoes, 75ml dry white wine and 300ml beef stock. Cover and bake in the oven for 1 hr 30 mins - 2 hrs. Alternatively, cover and cook it on the hob on a gentle heat for about an hour, removing the lid after 45 mins.
  • Sprinkle over 2 tbsp flat-leaf parsley leaves and season well with salt and freshly ground pepper. Stir in 150ml soured cream and serve.

Goulash with dumplings is one of the classics of Czech cuisine. It's a dish that's extra delicious when you make it on the Big Green Egg. First you make the beef goulash on the Kamado, and when the meat is nice and tender you put the dumplings on top. Just 20 minutes later you can sit down to a hearty meal!

1 kg beef shoulder
3 onions
1 red bell pepper
2 cloves of garlic
250 g mushrooms
50 g butter
2 tbsp flour
1 tsp ground cumin
3 tbsp Hungarian paprika powder (edelsüss)
1 tsp smoked paprika powder (hot)
2 sprigs of marjoram
1 sprig of thyme
4 bay leaves
2 tbsp tomato purée
2 tbsp balsamic vinegar
1 tbsp Dutch apple butter
1 tbsp Dijon mustard
approx. 1 L beef stock
4 spring onions
40 g butter
200 g self-raising flour
1 tbsp baking powder
1 tsp salt
90 ml milk
1 sprig of parsley

Steps:

  • Ignite the charcoal in the Big Green Egg and heat, with the grid, to 200°C. Meanwhile, cut the beef shoulder into 3 cm cubes. Cut the peppers and onion into slices of approx. 2 cm. Peel and thinly slice the garlic cloves. Slice the mushrooms.
  • Heat the butter in the Cast Iron Dutch Oven on the grid. Add the meat and cook until browned, then add in the onions, red pepper and garlic and stir well. Cook until the onion is translucent. Stir the flour into the meat mixture and let cook for 4-5 minutes. Add the other ingredients except for the green onion. Close the lid of the EGG after each action and wait until the goulash starts to bubble. Remove the Dutch oven and the grid from the EGG. Set up the convEGGtor, replace the grid and put the pan back on. Close the lid of the EGG and heat to 140°C. Let the goulash cook for approx. 3 hours on a low heat, stirring occasionally and adding more stock if necessary. After approx. 2 1/2 hours melt the butter for the dumpling batter. Mix together the rest of the ingredients for the dumplings, then stir in the melted butter; season with salt and pepper to taste. Cut the green onion into rings of approx. 1 cm for the goulash. When the meat is tender, mix the green onion into the goulash, then season with salt and pepper. Using two soup spoons make dumplings from the batter and place them on top of the goulash. Place the lid on the pan and close the lid of the EGG. Let the dumplings cook 15-20 minutes on the goulash until they feel firm to the touch. Meanwhile, remove the parsley leaves from the stalks and finely chop them. Remove the pan from the EGG and sprinkle the goulash and dumplings with the finely chopped parsley.

Steps:

  • In a large covered sauté pan, heat the olive oil and sauté the onions and sugar until caramelized. Add the garlic and caraway seed. Cook another minute.
  • Add the sweet and spicy paprika, marjoram, thyme and bay leaf. Sauté another minute, until fragrant.
  • Add the tomato paste. Deglaze with the vinegar and the stock and add the pieces of beef, salt and pepper. Bring to a boil, then lower to a simmer. Cover and cook until very tender, about 1 1/2 hours, stirring occasionally. Taste and adjust seasoning with salt and pepper.
  • To prepare the dumplings, sift together the cake flour, baking powder and salt. Combine with the milk and melted butter, mixing lightly. Drop batter by teaspoonfuls into the simmering stew. Cover and cook for 15 minutes. Once you have covered the pan, do not uncover while the dumplings are cooking! In order for them to be light and fluffy, they must steam. If you uncover the pan, the steam will escape and the dumplings will boil instead. After 15 minutes, test the dumplings with a toothpick. If the toothpick comes out clean, the dumplings are done.

I used to make this for my roommate and myself, and she loved it - now, it's my comfort food, especially in the wintertime. Remember to use a stock-pot - this makes a lot.

2 tablespoons oil
2 onions, chopped
2 garlic cloves, chopped
2 (8 ounce) packages stewing beef
1 (800 ml) can chopped tomatoes
2 tablespoons paprika
10 cups water
6 beef bouillon cubes
salt and pepper, to taste
2 bell peppers, chopped
2 large potatoes, cubed
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk

Steps:

  • Warm the oil in the stock pot over medium heat.
  • Add the onions and the garlic, stirring for about five minutes.
  • Add the beef, and cook until mostly brown (it'll continue to cook in the stew).
  • When the meat is mostly brown, add the can of tomatoes, the paprika, the water, and cubes of beef bouillon (I suggest crumbling it before hand).
  • Cover and increase heat until it boils.
  • When it boils, decrease heat to a simmer, cover, and let simmer for 1.5-2 hours.
  • Add the bell peppers and potatoes.
  • Let the stew continue to simmer for 20 minutes.
  • In the meantime, mix the flour, baking powder and salt in a mixing bowl.
  • Add the milk, and stir thoroughly.
  • Flour your hands and roll the dough into half-inch balls. It will be sticky!
  • Drop the balls into the simmering stew, and wait until they rise to the surface.
  • Enjoy!
