BACON, LETTUCE, AND TOMATO SALAD

Bacon, Lettuce, and Tomato Salad image

Can't choose between a crisp, refreshing salad and a satisfying BLT sandwich? This recipe combines the two for a crowd-pleasing side or meal.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 6

24 strips (cut 1/4 inch thick) bacon, (1 pound)
2 1/2 bunches lettuce, such as romaine, Bibb, or green oakleaf
1 cup Avocado Dressing for BLT Salad
2 pounds tomatoes, preferably red and yellow
1 pint cherry tomatoes
Salt and freshly ground black pepper

Steps:

  • Heat oven to 350 degrees. Arrange bacon strips on a wire rack set over a baking pan. Place pan in oven until bacon is golden brown and crisp, about 40 minutes. Remove from oven, being careful of the bacon fat that has collected under the rack, and set aside.
  • Arrange lettuce in the bottom of a salad bowl; drizzle with half the avocado dressing. Cut tomatoes into 1/4-inch-thick slices; cut cherry tomatoes, depending on size, in half. Arrange tomato slices over lettuce; scatter cherry tomatoes over tomato slices.
  • Arrange whole bacon strips over tomatoes. Drizzle with remaining avocado dressing, season with salt and pepper to taste, and serve immediately.

BACON AND LEEK WARM POTATO SALAD

Bacon and Leek Warm Potato Salad image

Provided by Rachael Ray : Food Network

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

4 large Idaho potatoes, peeled and thinly sliced
Salt
Extra-virgin olive oil, for drizzling
8 slices center cut bacon, chopped
2 ribs celery, chopped
1 carrot, peeled then thinly sliced with a vegetable peeler, then chopped into bits
2 leeks
1/2 cup dry white wine, eyeball it
1/2 cup chicken stock, eyeball it
2 tablespoons fresh thyme, 5 to 6 sprigs, stripped and chopped
Black pepper

Steps:

  • Place potatoes in a pot and cover with water. Bring to a boil, salt water and cook until just tender 10 minutes.
  • Heat a medium skillet over medium high heat. Add a liberal drizzle of extra-virgin olive oil and the bacon. Cook bacon until crisp.
  • Reserve bacon on paper towel lined plate, removing it from the pan with a slotted spoon. Drain some of the fat, leaving about 3 tablespoons in the pan. Add celery and carrots to the pan. While the vegetables cook, cut leeks lengthwise then into half moon slices 1/2- inch thick. Run the leeks under cold water and separate every layer to release the trapped grit. Drain well. Add leeks to sauteed veggies and cook another 4 to 5 minutes until tender. Deglaze the pan with wine and pick up any pan drippings. Reduce heat to low and add chicken stock and thyme.
  • Drain potatoes and return to hot pot to cook off water then transfer the potatoes to the skillet with the vegetables and stock. Carefully combine the potatoes and vegetables, add bacon back to the pan then season the warm salad with salt and black pepper, to taste.

BACON, LEEK, AND TOMATO MACARONI AND CHEESE

Bacon, Leek, and Tomato Macaroni and Cheese image

Surprising twist to a family classic! White cheese, bacon, and leeks. Yes, leeks--a less tangy onion! And this is a one-pot meal! No draining of the water. Super fun, quick, easy, and yummy!

Provided by dawn2376

Categories     Meat and Poultry Recipes     Pork

Time 35m

Yield 6

Number Of Ingredients 10

5 cups water
8 slices bacon, cut crosswise into thin strips
1 (16 ounce) package elbow macaroni
1 (8 ounce) package sharp white Cheddar cheese, shredded
½ (8 ounce) package cream cheese
3 ounces Parmesan cheese, grated, or more to taste
1 tablespoon salt
½ teaspoon ground black pepper
1 large leek
3 large plum tomatoes

Steps:

  • Bring water to a boil in an 8-quart stockpot.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 8 to 10 minutes. Drain bacon on a paper towel-lined plate.
  • Add macaroni, Cheddar cheese, cream cheese, Parmesan cheese, salt, and pepper to the boiling water. Cover and let simmer vigorously for 5 minutes, stirring occasionally.
  • While the macaroni mixture cooks, trim dark green parts off leek and discard. Slice leek in half lengthwise, then crosswise into 1/2-inch slices. Place in a bowl of cold water and swish to remove dirt. Drain leek and stir into the macaroni mixture.
  • Cook, uncovered, stirring occasionally, until macaroni is tender and sauce is thickened, about 5 minutes.
  • Meanwhile, cut tomatoes in half lengthwise. Remove cores and scrape out seeds. Dice tomatoes; reserve 1/4 cup for garnish. Remove stockpot from heat; stir in remaining tomatoes and 1/2 of the bacon. Spoon macaroni into a serving bowl and garnish with remaining bacon and reserved tomatoes. Serve immediately.
