Steps:
- In a large skillet, crumble beef and cook with onion and pepper over medium-high heat until no longer pink, 5-7 minutes; drain., Stir in seasonings, vegetables, water and rice; bring to a boil. Reduce heat; simmer, covered, until rice is tender, 10-15 minutes. Sprinkle with cheese. Remove from heat; let stand until cheese is melted.

ROASTED GARLIC ZUCCHINI AND TOMATOES
This is my husband's favorite way to eat up summer's 'never-ending' supply of zucchini and tomatoes. Goes great with grilled chicken or fish, or toss it with some cooked pasta. Grape or cherry tomatoes work well too.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Lightly grease a 9x13 inch baking dish.
- Combine the zucchini, tomatoes, onion, garlic, and red pepper flakes in the prepared baking dish. Drizzle with the olive oil, season with salt and pepper, and mix well.
- Place in preheated oven. Roast until vegetables are tender and slightly golden, about 18 minutes. Remove from oven; sprinkle with the Parmesan cheese and basil.

ZUCCHINI AND GROUND BEEF SKILLET
This is my wife's favorite meal. A flavorful blend of ground beef, vegetables, and your favorite cheese. A true one-skillet meal that will satisfy your whole family!

Steps:
- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Stir mushrooms, tomato sauce, olives, and garlic into the skillet. Crush stewed tomatoes into smaller pieces and add to the mixture. Season with salt and white pepper. Let simmer, uncovered, until liquid reduces, 20 to 30 minutes.
- Slice zucchini lengthwise; cut into 1/2-inch slices and add to the skillet. Cook, covered, until firm yet tender to the bite, 5 to 7 minutes. Stir in Cheddar cheese and cook, covered, until melted, 3 to 4 minutes. Serve.

STOVE-TOP ZUCCHINI AND GROUND BEEF SKILLET
This is my version of an easy, healthy, one pot meal. It works great with a head of chopped cabbage also. I serve it with cottage cheese.

Steps:
- Brown ground beef with onion and bell pepper in a large skillet or pot with lid. Drain grease.
- Add garlic and seasonings. Stir.
- Add zucchini and stir. Cover with lid and cook over medium heat for approximately 15 minutes until the zucchini is crisp tender (I don't add any water, the zucchini has enough). Stir about every 5 minutes.
- Remove lid and stir in spaghetti sauce. Cook for another 5 minutes.
- Great served with cottage cheese or topped with parmesan!
BEEF STRIPS WITH ZUCCHINI AND TOMATOES
I wanted a recipe for round steak strips, but did not want a stroganoff or stir fry type recipe. i just kind of threw this together with what i had. i was planning on doing a pan fried steak, corn on cob and baked potato, but got home late from work, and just wanted something i could do in my electric skillet. this is what i came up with. let me know what you think, be honest, and any suggestions for improvement. all measures are approximate, like i said i just threw together at last minute, this served me and my husband, with one lunch serving leftover. we had texas toast with this. some optional ingredients are included, we found this quite tasty and very filling. it was also very easy and quick, which i need at times, as i have an hour and a half commute each way to work everyday, and hubby just does not and can not cook.

- In electric skillet or frying pan brown beef strips (can use pam spray, i did not use).
- when browned add seasonings.
- add canned zucchini and tomatoes.
- simmer ( i left mine for 30 minutes in electric skillet) can be put on low and left to simmer, only melds flavors.
- stir occasionally.
- meanwhile cook egg noodles according to package directions.
- add small amount of water to beef mixture if needed.
- drain egg noodles.
- serve beef mixture over egg noodles with juice.

BEEF FILLET STRIPS WITH TOMATOES, PEPPERS, AND ONIONS

- 1. Prepare the chiles. Then, cut out the stem and cut open the chiles to remove the seeds and ribs. Cut the chiles into strips, then into 3/4-inch pieces. Reserve. Trim the meat of fat, and cut the meat into thin slices, then into 1-inch pieces. Put the meat into a bowl, and toss with half of the oil, the Maggi, and garlic. Let stand about 20 minutes. 2. In a large skillet, heat the remaining oil until hot. Add half of the beef, in a single layer, and stir-fry until browned, 3 to 4 minutes. (Don't overcook, or the beef will be tough.) Remove the meat to a bowl, and brown the remaining meat. Add to the first batch of meat and set aside. 3. In the same skillet, cook the onion over medium-low heat until it begins to brown, about 5 minutes. Add the tomatoes, chiles, thyme, and 2 tablespoons of water. Raise heat to medium and cook, stirring frequently, until the tomatoes soften 4 to 5 minutes. Add the meat and the juices from the bowl. Season with salt and pepper. How to make Ground Beef with Zucchini and Tomato

- Mix ground beef, onion, soy sauce and salt together.
- Peel and slice zucchini.
- Cut tomatoes.
- Heat oil in wok to smoking point.
- Stir fry ground beef mixture in it until browned, about 2-3 minutes cooking time.
- Add zucchini and 1/2 cup of water, stir ingredients.
- Cover wok with lid, cook ingredients 5 minutes, lifting wok cover 2 or 3 times to stir mixture.
- Add tomatoes and sugar, cover, cook 2 or 3 minutes more.
- Uncover, stir up corn starch solution thoroughly, pour into wok, stir to form gravy.
- NOTE: Chicken, pork or shrimp could be substituted for ground beef.
BEEF, POTATO, ZUCCHINI AND TOMATO STEW

- Heat nonstick skillet until it is hot; add beef, and saute over medium-high heat until beef browns, stirring to separate.
- Chop whole onion, and when beef is cooked, push it to the side of the pan and saute the onion over medium heat until it softens, just a couple of minutes.
- Wash, trim and coarsely chop tomatoes, and add to the pan.
- Scrub potatoes, cut into 1/4-inch dice and add to pan. Cover, and cook over medium-low heat.
- Meanwhile scrub, trim and cut zucchini into 1/4-inch rounds, and add to pan along with the tomato paste with salt and pepper.
- Wash and chop basil. A couple of minutes before vegetables are tender but still firm, stir in basil and finish cooking.

Steps:
- Chop finely the onion.
- Slice the zucchini (not to thick).
- Saute the zucchini with the onion, garlic.
- Add all your seasonings.
- Saute this for a few minutes in a pan sprayed with butter pam.
- Do not saute too long as you do not want the zucchini soft.
- Add the tomatoes and simmer few minutes.
- Remove from heat and serve on plates adding parmesan cheese on top.
