12 prepared crepes
1/2 lb fresh mushrooms, sliced (can use more)
1 onion, finely chopped
1 tablespoon minced fresh garlic (optional)
2 tablespoons Worcestershire sauce
2 teaspoons prepared mustard
4 tablespoons butter
2 teaspoons salt (to taste)
black pepper
pepper
2 tablespoons flour
1/3 cup cold water
1 1/2 lbs cooked beef, cut up into 1/4 to 1/2 inch cubes
1/3 cup boiling water
1 cup sour cream
2 beef bouillon cubes
2 tablespoons ketchup
1 cup shredded cheddar cheese (more if desired)

Steps:

  • Set oven to 350 degrees.
  • In a skillet, lightly brown the mushrooms, onions and the garlic (if using) in the butter or margarine.
  • Whisk or blend in the flour with 1/3 cup cold water.
  • Dissolve the bouillon cubes in 1/3 cup boiling water; stir into the flour paste to blend; add to the veggies in the skillet.
  • Stir in the ketchup, Worcestershire sauce, prepared mustard, salt and pepper; heat, stirring constantly until thickened.
  • Add in the cooked beef; cover, and cook slowly over low heat for 10-15 minutes, or until heated through.
  • Remove from heat, and stir in the sour cream.
  • Place approximately 1/2 cup hot filling across the center of each crepe, overlap opposite sides on top, to form a roll.
  • Place evenly into prepared baking dish.
  • Sprinkle each crepe with about 2 tablespoons grated cheddar cheese (or more if desired).
  • Bake for 10-15 minute, or until the crepes are hot.

We used a marbled, tender piece of ribeye as the star of this comfort food classic. Two kinds of mushrooms are cooked until crispy to add an extra element of flavor. The whole dish is brought together with a rich, tangy sauce made with sour cream and Dijon and served over egg noodles.

1 pound ribeye steak, trimmed of excess fat and cut into 2-by-1/2-inch strips
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced
1/2 cup dry white wine
2 tablespoons all-purpose flour
3/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth or beef stock
10 ounces medium or wide egg noodles
1/2 cup fresh flat-leaf parsley leaves, chopped
1 tablespoon chopped chives, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
  • Add 1 tablespoon butter to the skillet. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally to scrape up the browned bits in the pan, until the onions are softened, 4 to 5 minutes. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
  • Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.

Most recipes for crepes are generally the same, tweaked for personal tastes so I will leave out the crepes recipe for now. The beef sauce is a recipe that I've developed loosely from beef stroganoff, made with beef stew meat, potatoes, green onions, and any veggies you choose (I prefer carrots and/or broccoli.) The result of this recipe is a creamy, savory dinner that'll leave you wanting more. Serve sauce inside or on top of crepes.

1 tablespoon olive oil
1 pound cubed beef stew meat
salt and ground black pepper to taste
1 medium potato, peeled and cubed
2 medium carrots, chopped
3 stalks green onions, or more to taste, chopped
1 cup milk
1 cup warm water
1 ½ teaspoons beef bouillon granules
2 tablespoons all-purpose flour, or more as needed
¼ cup dry white wine
1 ½ teaspoons Worcestershire sauce
¼ teaspoon garlic powder, or to taste
¼ teaspoon onion powder, or to taste
¼ teaspoon dried cilantro, or to taste
¼ teaspoon dried rosemary, or to taste
1 head broccoli, cut into florets

Steps:

  • Heat oil in a saucepan over medium-high heat. Add beef and season with salt and pepper. Cook and stir until it starts to brown, 4 to 5 minutes. Toss in potato, carrots, and green onions, then pour in milk. Reduce heat to medium and bring to a simmer.
  • Mix 1/2 cup water with bouillon granules. Mix remaining water with flour, whisking until well combined. Add both mixtures to the saucepan and stir to combine. Stir in wine, Worcestershire sauce, garlic powder, onion powder, cilantro, and rosemary. Cook, stirring every couple of minutes, until the vegetables begin to soften, about 10 minutes.
  • Add broccoli and reduce heat to medium-low. Simmer until all vegetables and beef are tender, 10 to 15 more minutes.
  • Serve sauce inside or on top of crepes.

1 pound ground beef
2 tablespoons instant minced onions
2 tablespoons Bisquick baking mix
1 tablespoon prepared mustard
1 teaspoon instant beef bouillon
1/4 teaspoon pepper
1 cup dairy sour cream
1 cup water
2/3 cup ketchup
1 cup shredded Cheddar cheese (about 5 ounces)
crepes:
1 cup Bisquick baking mix
2 eggs
3/4 cup milk

Steps:

  • 1. Heat oven to 350 degrees. Prepare Crepes. 2. Stir ground beef and onion in 10 inch skillet until beef is brown. Drain. Stir in baking mix, mustard, bouillon, pepper, sour cream, water and catsup. 3. Heat to boiling. Reduce heat. Simmer uncovered five minutes. 4. Spoon about 1/3 cup beef mixture onto each crepe. Roll up, place seam side down in ungreased oblong baking dish, 13x9x2 inches. Sprinkle with cheese. Bake uncovered until hot, about 15 minutes. Crepes: 1. Lightly grease 6 or 7 inch skillet heat until hot. Beat 1 cup Bisquick baking mix, 2 eggs and 3/4 cup milk with hand beater until smooth. 2. For each crepe pour scant 1/4 cup batter into skillet. Rotate skillet until batter covers bottom. Cook until golden brown. Gently loosen edge with metal spatula. Turn and cook other side until golden brown. Stack crepes placing waxed paper between each. Keep crepes covered to prevent them from drying out.

1 cup finely chopped onion
2 tablespoons butter
2 tablespoons flour
1/3 cup cold water
2 beef bouillon cubes
1/3 cup boiling water
2 tablespoons ketchup
2 tablespoons Worcestershire sauce
1 teaspoon prepared mustard
2 teaspoons salt
1 cup dairy sour cream

Steps:

  • 1. Mix eggs, milk, water, vanilla, flour, sugar, baking powder and salt in a blender cover and set aside for an hour. 2. Grease a 6" to 8" skillet and heat. Pour 1/4 cup batter into skillet. 3. When brown on one side, remove and make another. 4. Cut beef into 1/4" cubes. 5. Saute mushrooms and onions in butter. 6. Blend flour with cold water. 7. Dissolve bouillon cubes in boiling water and stir into flour paste add to vegetables in skillet. 8. Stir in remaining ingredients, except beef and sour cream stirring constantly until thickened. 9. Add beef cubes, cover and cook slowly for 10 minutes. 10. Remove from heat and stir in sour cream. 11. Place filling in center of crepe and fold. 12. Sprinkle top with cheddar cheese. 13. Bake at 350 degrees for 3 to 5 minutes.
