One 8-ounce package cream cheese, softened
8 ounces Parmesan, grated (about 2 cups)
4 tablespoons seeded and chopped jalapeno peppers
1 large egg, beaten
3 cups dry plain breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the cream cheese, Parmesan, jalapenos and egg to form a paste. Shape into balls using about 1/2 tablespoon of paste for each. Roll the balls in the breadcrumbs. Place on an un-greased baking sheet and bake for 10 to 15 minutes, until golden brown. Serve warm.

Beer and spice and everything nice make these peppery bites utterly delicious. Serve with ranch dressing on the side for a cooling dip.

2 cups Gold Medal™ all-purpose flour
3 teaspoons baking powder
1 teaspoon table salt
1 bottle or can (12 oz) dark beer, chilled
Vegetable oil for deep frying
10 medium to large jalapeño chiles, cut into 1/4-inch rings
Coarse sea salt, if desired
1 cup ranch dressing

Steps:

  • In medium bowl, mix flour, baking powder, table salt and beer with whisk until smooth.
  • In 5-quart Dutch oven or heavy saucepan, heat 2 to 3 inches oil to 350°F. Working in small batches, dip jalapeño slices in batter. Fry in hot oil about 2 minutes or until golden brown. Drain on paper towels; sprinkle with sea salt.
  • Serve fried jalapeño bites warm with ranch dressing.

These are addictively delicious. Spicy and sinful. Best if served with melted nacho cheese sauce.

1 cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon chili powder
1 teaspoon garlic powder
2 eggs
1 cup beer
½ quart vegetable oil
2 cups sliced jalapeno peppers

Steps:

  • Mix flour, salt, pepper, red chili powder, garlic powder, eggs, and beer together in a bowl.
  • In a deep fryer, or large pot heat oil to 365 degrees F (180 degrees C).
  • Dip the sliced jalapenos in the batter. Place battered jalapenos in deep fryer. The jalapenos are fully cooked when they float to the surface of the oil. They should be golden brown and crispy. Enjoy!

8 cups neutral oil, like canola, for frying
3 1/2 cups instant flour, such as Wondra
2 tablespoons cornstarch
1 tablespoon seafood seasoning
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
2 large eggs
20 ounces beer, such as an IPA or wheat
1 1/2 pounds fluke fillets, cut into 4-inch pieces
Kosher salt and freshly cracked black pepper
Sea salt, for serving
1 lemon, thinly sliced
1 cup picked fresh flat-leaf parsley
1 1/2 cups mayonnaise
1 teaspoon Dijon mustard
1 clove garlic, minced
1 pickled jalapeno, seeded and minced, plus a splash of pickling liquid, optional
Zest and juice of 1 lime
Kosher salt and freshly ground black pepper

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat. Heat about 4 inches of oil in a deep, heavy-bottomed pot over direct heat until it reaches 360 degrees F.
  • For the beer-battered fluke: Whisk together 3 cups of the instant flour with the cornstarch, seafood seasoning, baking powder, salt and baking soda in a large bowl. Whisk together the eggs and beer in a separate large bowl. Whisk the wet ingredients into the dry ingredients until there are no lumps. Let the batter rest for 5 minutes so the flour can bloom.
  • Meanwhile, make the tartar sauce: Whisk together the mayonnaise, mustard, garlic, jalapeno, lime zest and juice in a medium bowl. Season with salt and pepper. You can add a splash of the jalapeno pickling liquid if desired for extra flavor.
  • Dry the fish fillets with paper towels and season with salt and pepper on both sides. Working in batches, dredge each piece of fish in the batter. Using a fork, lift each fish fillet out of the batter, let the extra batter drip down and then carefully drop the battered fish into the oil. Do not overcrowd the pot. Fry until the batter is golden brown and crisp and the fish is cooked through, about 5 minutes. Remove to a paper towel-lined plate and season with sea salt.
  • Season the remaining 1/2 cup of instant flour with salt and pepper. Dredge the lemon slices and parsley in the seasoned flour, then fry until crisp, about 2 minutes. Remove to the paper towel-lined plate. Add the fried fish, lemons and parsley to a platter and serve immediately with the jalapeno tartar sauce for dipping.
  • (Alternatively, you can fry the fish, lemons and parsley in 360 degrees F oil over medium-high heat on a stovetop.)

Try them all at once, if you like. This recipe makes plenty of batter. Serve with Spicy Ranch Dipping Sauce.

30 jalapeno peppers, washed, seeded and cut into 'spikes'
1 (16 ounce) jar dill pickles, sandwich slices drained
2 onions (cut into either rings or petals)
1 egg
1 (12 ounce) can beer
1 1/2 cups self-rising flour
1 teaspoon seasoning salt
vegetable oil (for frying)

Steps:

  • Slice onion and jalapeno as desired, and pat dry pickles onto paper towels.
  • In a large bowl, whisk together egg, beer, flour and seasoned salt.
  • Heat oil in heavy skillet or a fry-cooker, following manufacturer's directions.
  • Dip vegetables into batter, allowing excess batter to drip off.
  • Fry in batches, about 3 or 4 minutes per batch, or until lightly browned.
  • Drain onto paper towels. Serve immediately.

I first had these at a restaurant inside a casino in Tulsa, OK and it was love at first bite. I got to craving them the other day but didn't want the guilt of the deep-fry. I whipped up a batch in the air fryer and they turned out crispier than the deep-fried version. Don't forget the ranch!

¼ cup all-purpose flour
2 eggs
2 cups panko bread crumbs
1 ½ cups pickled jalapeno pepper slices, drained
nonstick cooking spray
1 cup ranch salad dressing

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place flour in a bowl. Beat eggs in a separate bowl. Place bread crumbs in a third bowl.
  • Coat jalapeno rings first in flour, then in egg, and finally in the bread crumb mixture.
  • Place jalapeno rings in the basket of the air fryer, making sure none are overlapping. Spray the tops with cooking spray. Cook for 4 minutes. Flip the jalapeno rings over and spray the tops with more cooking spray. Cook for 4 minutes more. Repeat with remaining jalapeno rings. Serve with ranch dressing for dipping.

2 cups flour
4 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large jalapeno peppers, stemmed, seeded and finely diced
1/2 cup cold shortening
About 3/4 cup flat and warm beer

Steps:

  • Heat the oven to 425 degrees. Lightly grease a baking sheet.
  • In a medium-sized mixing bowl, sift together the flour, baking powder, soda and salt. Stir in the peppers.
  • Using a pastry blender or two knives, cut in the shortening until the mixture resembles coarse crumbs.
  • Add the beer a few tablespoons at a time, tossing the mixture with a fork until it clings together into a ball. You may not need all the beer; the dough should be only slightly sticky and still easy to handle.
  • Lightly sprinkle a countertop with flour. With your hands, gently pat the dough out into a round about three-quarters of an inch thick. Using a cookie cutter or small glass, cut the dough into rounds about two and a half inches in diameter. Place those on the baking sheet. Pull the dough scraps together into a ball, pat it out and cut more biscuits.
  • Bake for 10 to 12 minutes, until golden brown. Serve very hot with lots of butter.
