Steps:
- Preheat the oven to 350 degrees F.
- Mix the cream cheese, Parmesan, jalapenos and egg to form a paste. Shape into balls using about 1/2 tablespoon of paste for each. Roll the balls in the breadcrumbs. Place on an un-greased baking sheet and bake for 10 to 15 minutes, until golden brown. Serve warm.
BEER-BATTERED JALAPEñO BITES
Beer and spice and everything nice make these peppery bites utterly delicious. Serve with ranch dressing on the side for a cooling dip.

- In 5-quart Dutch oven or heavy saucepan, heat 2 to 3 inches oil to 350°F. Working in small batches, dip jalapeño slices in batter. Fry in hot oil about 2 minutes or until golden brown. Drain on paper towels; sprinkle with sea salt.
- Serve fried jalapeño bites warm with ranch dressing.

- Mix flour, salt, pepper, red chili powder, garlic powder, eggs, and beer together in a bowl.
- In a deep fryer, or large pot heat oil to 365 degrees F (180 degrees C).
- Dip the sliced jalapenos in the batter. Place battered jalapenos in deep fryer. The jalapenos are fully cooked when they float to the surface of the oil. They should be golden brown and crispy. Enjoy!

BEER-BATTERED FLUKE WITH JALAPENO TARTAR SAUCE

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat. Heat about 4 inches of oil in a deep, heavy-bottomed pot over direct heat until it reaches 360 degrees F.
- For the beer-battered fluke: Whisk together 3 cups of the instant flour with the cornstarch, seafood seasoning, baking powder, salt and baking soda in a large bowl. Whisk together the eggs and beer in a separate large bowl. Whisk the wet ingredients into the dry ingredients until there are no lumps. Let the batter rest for 5 minutes so the flour can bloom.
- Meanwhile, make the tartar sauce: Whisk together the mayonnaise, mustard, garlic, jalapeno, lime zest and juice in a medium bowl. Season with salt and pepper. You can add a splash of the jalapeno pickling liquid if desired for extra flavor.
- Dry the fish fillets with paper towels and season with salt and pepper on both sides. Working in batches, dredge each piece of fish in the batter. Using a fork, lift each fish fillet out of the batter, let the extra batter drip down and then carefully drop the battered fish into the oil. Do not overcrowd the pot. Fry until the batter is golden brown and crisp and the fish is cooked through, about 5 minutes. Remove to a paper towel-lined plate and season with sea salt.
- Season the remaining 1/2 cup of instant flour with salt and pepper. Dredge the lemon slices and parsley in the seasoned flour, then fry until crisp, about 2 minutes. Remove to the paper towel-lined plate. Add the fried fish, lemons and parsley to a platter and serve immediately with the jalapeno tartar sauce for dipping.
- (Alternatively, you can fry the fish, lemons and parsley in 360 degrees F oil over medium-high heat on a stovetop.)
BEER-BATTER FRIED JALAPENO STRIPS, ONION PETALS & PICKLES
This is my favorite recipe for fried jalapeno strips... but it works equally as well for fried onion rings (or petals) and, if you're so inclined, it's an excellent coating for fried pickles. Try them all at once, if you like. This recipe makes plenty of batter. Serve with Spicy Ranch Dipping Sauce.

- In a large bowl, whisk together egg, beer, flour and seasoned salt.

CRUNCHY AIR-FRIED JALAPENO SLICES
I first had these at a restaurant inside a casino in Tulsa, OK and it was love at first bite. I got to craving them the other day but didn't want the guilt of the deep-fry. I whipped up a batch in the air fryer and they turned out crispier than the deep-fried version. Don't forget the ranch!

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place flour in a bowl. Beat eggs in a separate bowl. Place bread crumbs in a third bowl.
- Coat jalapeno rings first in flour, then in egg, and finally in the bread crumb mixture.
- Place jalapeno rings in the basket of the air fryer, making sure none are overlapping. Spray the tops with cooking spray. Cook for 4 minutes. Flip the jalapeno rings over and spray the tops with more cooking spray. Cook for 4 minutes more. Repeat with remaining jalapeno rings. Serve with ranch dressing for dipping.

- Heat the oven to 425 degrees. Lightly grease a baking sheet.
- In a medium-sized mixing bowl, sift together the flour, baking powder, soda and salt. Stir in the peppers.
- Using a pastry blender or two knives, cut in the shortening until the mixture resembles coarse crumbs.
- Add the beer a few tablespoons at a time, tossing the mixture with a fork until it clings together into a ball. You may not need all the beer; the dough should be only slightly sticky and still easy to handle.
- Lightly sprinkle a countertop with flour. With your hands, gently pat the dough out into a round about three-quarters of an inch thick. Using a cookie cutter or small glass, cut the dough into rounds about two and a half inches in diameter. Place those on the baking sheet. Pull the dough scraps together into a ball, pat it out and cut more biscuits.
- Bake for 10 to 12 minutes, until golden brown. Serve very hot with lots of butter.

- Please Please dont rub your eyeballs (unless you believe in Chinese torture) a small metal 1/4 teaspoon spoon also comes in handy. Soften the cream cheese to room temperature.
- Slice each pepper from the tip to the stem and gently "gut" it removing the seeds and pith. After you have removed as much of the pith and seeds as you can, rinse under COLD water.
- Leave the stems intact, they make great handles for pulling the poppers out of the oil. After the cream cheese is softened, gently mix in the shredded cheeses until everything is uniformly combined.
- Stuff the jalapeños. Make sure that the pepper can close most of the way after it's stuffed. Preheat the deep fryer, and remember that the oil that you use for this shouldn't be used for anything else unless you want it to taste like jalapeños.
