A nod to both my German heritage and classic diner fare, this bratwurst sandwich recipe comes together in a snap and can be made all in one skillet! 1/4 cup butter, divided
1 package uncooked bratwurst links (20 ounces)
1 medium onion, thinly sliced
1 bottle (12 ounces) beer or nonalcoholic beer
2 tablespoons all-purpose flour
1/8 teaspoon dill weed
1/8 teaspoon pepper
5 slices thick bread

Steps:

  • In a Dutch oven, heat 2 tablespoons butter over medium-high heat. Add bratwurst and onion; cook and stir until bratwurst starts to brown and onion softens. Stir in beer. Bring to a boil. Reduce heat; simmer, covered, turning occasionally, until a thermometer inserted in bratwurst reads 165° and brats are no longer pink, 12-14 minutes., Remove brats and onions; keep warm. Add remaining butter to pan; whisk in flour, dill weed and pepper. Bring to a boil, stirring constantly until thickened, 3-5 minutes. To serve, place 1 brat on each slice of bread; top evenly with onions and gravy.

1 onion, sliced
1 clove garlic, smashed
1 bay leaf
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter, cut into pieces
4 links fully cooked bratwurst (about 1 pound)
1/4 cup lager
Sub rolls, sauerkraut and mustard, for serving

Steps:

  • Preheat a grill to medium high. Tear off a 20-inch-long piece of heavy-duty foil. Put the onion, garlic and bay leaf on the foil, piling them on one side; season with 1/4 teaspoon salt and a few grinds of pepper. Dot with the butter and place the bratwurst on top. Fold the foil over the onions and bratwurst, then fold in the edges on two sides to seal, leaving one side open. Carefully pour the beer into the open side, then fold in the edge to seal.
  • Place the foil packet on the grill onion-side down; cook 10 minutes, then carefully flip and continue grilling until the onion is softened and the bratwurst is warmed through, 10 more minutes. Meanwhile, grill the rolls until toasted.
  • Carefully open the packet. Remove the bratwurst and grill, turning, until lightly charred all over, 3 to 5 minutes. Return to the packet to toss with the onion. Serve with the rolls, sauerkraut and mustard.

1 large Vidalia onion or other sweet onion, cut in half and sliced (about 1 1/2 cups)
1 package (about 19 ounces) pork bratwurst (5 links)
1 bottle (12 fluid ounces) beer
5 Pepperidge Farm® Hot Dog Rolls - Top Sliced
5 teaspoons country-style Dijon mustard

Steps:

  • Heat the oil in a 4-quart saucepan over medium heat. Add the onion and cook for 15 minutes or until well browned and caramelized, stirring often. Remove the onion from the saucepan.Heat the bratwurst and beer in the same saucepan over medium-high heat to a boil. Reduce the heat to medium-low. Cook for 10 minutes, turning the bratwurst over once halfway through the cooking time.Lightly oil the grill rack and heat the grill to medium. Grill the bratwurst for 10 minutes or until cooked through. Place the bratwurst in the rolls. Divide the onion among the bratwurst. Top each with 1 teaspoon mustard.

1 pint pilsner or ale beer
Crusty rolls, for serving

Steps:

  • In a Dutch oven over medium heat, add the oil, onions, peppercorns and bay leaf. Add the sausage. Saute until the sausages begin to brown and the onions soften, about 5 minutes. Add the ale. Be sure to turn the sausages over and continue cooking, another 2 minutes. Cook on low for 20 minutes. Serve the bratwurst with the braised onions on crusty rolls with spicy mustard.

Fans of Midwestern-style beer brats have strong opinions about the best way to prepare them. Some like to simmer the bratwurst in beer before browning them on the grill (as is the case here); some prefer grilling first, soaking in beer after. But everyone agrees that the brats should start out fresh and uncooked (rather than precooked, like hot dogs), then be served on a split, toasted roll with onions and plenty of mustard. Purists may shun adding the likes of ketchup, pickles and sauerkraut to the sandwich, but when you're the cook, you get to choose which condiments to put out - or set aside.

24 ounces lager or pilsner beer (2 cans or bottles)
2 medium onions, halved and sliced 1/4-inch thick
6 uncooked bratwurst sausages
6 bratwurst rolls or hoagie rolls, split
Spicy brown or yellow mustard, for serving
Pickles and ketchup, for serving (optional)

Steps:

  • Light a charcoal grill or heat a gas grill to high.
  • In a medium pot over high heat, bring beer and half the onions to a simmer (save remaining onions for serving). Add bratwurst to the pot, reduce heat to low, and simmer until they are just cooked through, about 10 minutes.
  • Transfer sausages to the grill, and grill until they're well browned on all sides, 2 to 5 minutes, turning often.
  • If you like, while the brats are grilling, let the beer and onions boil over high heat until the onions are very soft, 5 to 10 minutes. Drain and reserve onions for serving.
  • Grill the rolls, cut-side down, until golden, about 1 minute. Serve the brats sandwiched in the rolls and topped with onions (either raw or beer-braised, or both), along with any condiments you like.

  • Preheat an outdoor grill for medium-high heat. When hot, lightly oil grate.
  • Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper. 6 fresh bratwursts
2 medium onions, coarsely chopped
1 medium tart apple, such as granny smith, cored and cut into small chunks
1 lb raw sauerkraut, drained
1 (12 ounce) bottle dark beer
pepper
1 teaspoon caraway seed
1/2 teaspoon dried thyme leaves
6 large hot dog buns
gourmet mustard (such as dijon or english)

Steps:

  • Heat a large sauté pan over medium-high heat.
  • Add the butter, then the brats.
  • Brown on all sides, then remove and set aside.
  • Reduce heat to medium.
  • Add the onions and sauté until lightly browned, about 10 minutes, stirring often.
  • Add the apples and toss until lightly golden.
  • Add the sauerkraut, brats and beer.
  • Stir in the caraway, thyme and pepper along with the water.
  • Cover and simmer over medium-low heat until the brats are cooked through and the sauerkraut is tender, about 30 minutes.
  • If necessary, remove the lid and cook further to remove excess moisture.
  • To serve, spread mustard in each roll.
  • Add a brat and top with some sauerkraut.

I came up with this recipe, because simply simmering sausages in beer and onions tasted weak. I was looking for a more intense beer flavor with a little bite, and this is it. A very satisfying dish if you crave German flavor that's Americanized. We love this dish served on potato rolls with spicy hot German mustard, Swiss cheese, and ice cold beer on the side.

⅛ teaspoon celery seeds
⅛ teaspoon caraway seeds
1 pound fresh bratwurst sausages
1 (12 fluid ounce) can or bottle lager beer
1 tablespoon light brown sugar
2 teaspoons dry mustard powder
1 teaspoon onion powder
⅛ teaspoon ground black pepper
⅛ teaspoon dried dill weed
1 pound sauerkraut (preferably barrel-aged), drained

Steps:

  • Crush celery seeds and caraway seeds in a mortar and pestle until ground; set aside.
  • Place bratwursts into a large nonstick skillet over medium heat. Mix beer, brown sugar, dry mustard, onion powder, black pepper, dill weed, and crushed celery and caraway seeds in a bowl, stirring to dissolve brown sugar; pour over the brats. Bring to a boil and reduce heat to low; cover and simmer for 10 minutes.
  • Uncover and raise heat to medium; boil the sauce until it reduces to a thick, syrupy liquid, about 20 minutes. Tilt skillet to roll brats in the sticky sauce until thoroughly coated. Transfer sausage to a platter and keep warm. Cook and stir sauerkraut in the same skillet to mix in any leftover sauce, 5 to 8 minutes. Transfer sauerkraut to a serving platter and top with cooked bratwurst.
