BETTER BEER BREAD
With the right technique, your beer bread will rise high and be moist and flavorful. The bonus is that it takes only 10 minutes to prepare beer bread, making it the perfect recipe for beginner cooks! I've posted two variations that will give your bread additional flavor, although you can make it with the first four ingredients and you will be back to "normal" beer bread, which is still wonderful!

Steps:
- Preheat oven to 375 and spray a loaf pan (I use a glass pan).
- In a large bowl, mix flour and sugar together. If you are making one of the "variations", add those ingredients to the bowl.
- Slowly pour in room-temperature beer, as if you were trying NOT to create a huge "head" of bubbles.
- Gently mix batter, again being careful not to whip the bubbles out of the beer and only mixing until everything is moistened. You will have lumps!
- Pour batter into loaf pan. Melt butter and pour over batter.
- Bake 375 degrees for 45-47 minutes. The top will be brown and the butter will have created a wonderful, slightly salty exterior.
- Tip: place a sheet of foil under your loaf pan to catch any excess butter that may bubble over.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix flour and sugar together in a bowl. Pour beer into a separate large bowl; add flour mixture and stir until moistened. Pour batter into the prepared loaf pan.
- Bake in preheated oven until nearly set, 40 to 50 minutes. Pour melted butter over the top of the bread and continue baking until a toothpick inserted into the center comes out clean, about 10 minutes more.

- Mix all ingredients together in bowl, pour into a greased loaf pan. Bake in a preheated 350 deg oven for 1 hour and 10 minutes. Beer Bread Variations: substitute these ingredients INSTEAD of beer: Hawaiian Bread - 12 oz Mountain Dew Cinn-A-Dew - 12 oz Mountain Dew, 1/2 c. cinnamon chips, sprinkle with 1 T. sugar Low Fat Hawaiian or Cinn-A-Dew - 12 oz Diet Mountain Dew, spray Pam, no butter, no sugar Ginger Bread - 12 oz Root Beer, 1/2 cup molasses,1 T.Chai tea Cherry Bread - 12 oz Black Cherry Soda and 1/4 c chopped maraschino cherries Cherry Bread Variation - 12 oz Dr. Pepper and 1/4 c chopped cherries Cranberry Orange Bread - 12 oz Orange Juice and 1/4 c chopped cranberries Orange Bread - 12 oz Orange Crush and drained 1/4 c mandarin oranges Peanut Butter Bread -12 oz Cream Soda and 1/2 c. peanut butter chips.Top with vanilla glaze Banana Bread - 2 cups ripe bananas and 8 oz of Sunny Delight. Parmesan Cheese and 1 T.minced garlic Italian Bread - Add dried tomato and garlic pesto Bacon Loaf - Add 1/2 c cooked,crumbled bacon Seasoned Bread - Add 2 T. Season Salt Focciaca Bread - Add 3 T.sun dried tomato and 3 T.pesto,spread to 1" thickness on baking stone, brush with olive oil,bake for 15 - 20 minute

- In a large mixing bowl, stir together the whole wheat flour, all-purpose flour, baking powder, salt, and garlic powder (if using).
- Slowly pour in the beer, then add the honey. With a rubber spatula, stir gently, until the foaming subsides and you no longer see dry bits of flour. The batter will be very stiff. Gently fold in any desired mix-ins. Don’t over mix; as soon as the flour disappears it is good to go.
- Spread the batter into an even layer in the prepared loaf pan, then drizzle the melted butter on top and brush to spread it evenly over the batter. Bake for 38 to 42 minutes until a toothpick inserted in the center of the bread comes out clean (I like to use an instant read thermometer. When the bread reaches 200 degrees F in the center, it is done).
