Incredibly easy and equally satisfying. I loved this as a kid growing up and is our kid's often requested dinner.

3 cups cooked rice
12 ounces ham, diced
1/2 cup chopped onion
2 cups celery, thin sliced
1 can cream of chicken soup
1/4 teaspoon dill weed
2 tablespoons margarine
1 1/2 teaspoons prepared mustard
3/4 cup sour cream

Steps:

  • Saute onion and celery in margarine in large skillet until tender.
  • Add soup, dill, mustard and sour cream til blended, then add diced ham and simmer for 5 min.
  • Serve over cooked rice.

2 pounds chicken breasts and thighs, boneless and skinless
Salt and freshly ground black pepper
Oil, for deep-frying
2 cups flour
3 eggs, beaten
2 cups bread crumbs or ground panko
Lemon juice
Rosemary sprigs, about 6 inches long, remove leaves from the lower half of the stem
Lemon Rosemary Butter Dipping Sauce, recipe follows
Lemon wedges
4 ounces clarified butter
1 sprig rosemary
1 lemon, juiced

Steps:

  • Cut the chicken into 2-inch pieces and season with salt and pepper.
  • Preheat a deep pot of oil or a deep fryer to 365 degrees F.
  • Bread the chicken pieces by first dredging in flour, then dipping in eggs, and lastly, rolling in bread crumbs or panko. Deep-fry in oil until done and golden in color. Drain off excess oil. Season with salt and squeeze fresh lemon juice.
  • Skewer each piece in a rosemary sprig. Arrange in a serving platter, serve with Lemon Rosemary Butter Dipping Sauce, and garnish with lemon wedges.
  • In a small saucepan, heat the butter and rosemary just until warm. Allow to cool for a few minutes. Strain into a sauce bowl. Stir in lemon juice.

4 cups milk
1 cup heavy cream
8 ounces good quality bittersweet chocolate, finely chopped
3 tablespoons sugar
4 teaspoons Austrian rum (see note) or Cognac

Steps:

  • Heat the milk in a large saucepan until almost boiling. Meanwhile, whip the cream to soft peaks. Set aside.
  • Remove milk from the heat and whisk in all but 2 teaspoons of the chocolate. Add the sugar and rum or Cognac and whisk until foamy.
  • Ladle the hot chocolate into 4 mugs, top with a large dollop of whipped cream and sprinkle with the remaining chocolate. Serve immediately.

These are really special little biscuits (cookies). They have a shortbread type texture and are great with coffee or when you want to impress someone!

Number Of Ingredients 8

225 g self-raising flour
90 g cocoa
30 g cornflour
225 g unsalted butter, softened
90 g icing sugar, sifted
1 teaspoon vanilla essence
icing sugar, for, dusting
115 g chocolate, melted

Steps:

  • Preheat oven to 180 degrees C.
  • Grease 2 large baking sheets.
  • Into a bowl sift together the flour,cocoa and cornflour.
  • In another large bowl beat the butter and icing sugar until fluffy.
  • With the beater on low speed gradually add in the flour mixture and vanilla essence until it becomes a soft dough.
  • Shape into'bar' shapes about 10cm long by 5cm wide.
  • Bake about 15-20 minutes, rotating baking sheets at half-time.
  • Keep an eye on them as they should only be slightly firm and all ovens are different.
  • Cool on wire cooling rack until cool and firm.
  • Dust with icing sugar.
  • Dip one end of each cookie into melted chocolate and place back onto greaseproof paper and allow chocolate to set.
  • Store in container with waxed paper between layers.

1 ½ pounds veal cutlets
½ cup all-purpose flour
3 tablespoons grated Parmesan cheese
2 eggs
1 teaspoon minced parsley
½ teaspoon salt
¼ teaspoon pepper
1 pinch ground nutmeg
2 tablespoons milk
1 cup dry bread crumbs
6 tablespoons butter
4 slices lemon

Steps:

  • Place each veal cutlet between two pieces of plastic wrap, and pound with the flat side of a meat mallet until about 1/4 inch thick. Dip in flour to coat.
  • In a medium bowl, stir together the Parmesan cheese, eggs, parsley, salt, pepper, nutmeg and milk. Place bread crumbs on a plate. Dip each cutlet into the egg mixture, then press in the bread crumbs to coat. Place coated cutlets on a plate and refrigerate for 1 hour or overnight.
  • Melt butter in a large skillet over medium heat. Cook the breaded cutlets until browned on each side, about 3 minutes per side. Remove to a serving platter, and pour the pan juices over them. Garnish with lemon slices.
