A simple beer brine makes for the juiciest and tastiest chicken!

3 12 oz cans or bottles beer
1 cup water
1/4 cup kosher salt
1/4 cup brown sugar
4 Tbsps BBQ seasoning
4-5 pounds bone in chicken (thighs, legs, whole wings)

Steps:

  • In a large pot add the beer, water, kosher salt, brown sugar, and 2 Tbsps of the BBQ seasoning. Bring just to a boil, remove from heat and stir until the salt and sugar is dissolved.
  • Put the chicken into a gallon size baggie. Once the brine has come to room temperature, pour the brine over the chicken. Place in a bowl and refrigerate at least 24 hours.
  • Remove chicken and discard the brine. Pat the chicken dry with paper towels and sprinkle all sides with the remaining 2 Tbsps of BBQ seasoning.
  • In the smoker: Set the smoker to 250 degrees and smoke for 2-3 hours or until internal temp reaches 170 degrees.In the oven: Place chicken in a single layer in a 9x13 casserole dish and bake in a 400 degree oven for 40 to 45 minutes or until internal temp reaches 170 degrees.

2 cups water
1/4 cup kosher (coarse) salt
1/4 cup packed brown sugar
4 cans or bottles (12 oz each) beer or nonalcoholic beer, chilled
2 cut-up whole chickens (3 to 3 1/2 lb each)
1 tablespoon paprika
1 teaspoon table salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 cup vegetable oil

Steps:

  • In 6- to 8-quart noncorrosive (stainless steel, enamel-coated or plastic) container or stockpot, mix water, kosher salt and brown sugar, stirring until salt and sugar are dissolved. Stir in beer. Add chicken. Cover; refrigerate at least 8 hours but no longer than 24 hours.
  • Line 15x10-inch pan with sides with foil. Remove chicken from brine; rinse thoroughly under cool running water and pat dry with paper towels. Discard brine. Place chicken in pan. Refrigerate uncovered 1 hour to dry chicken skin. Meanwhile, in small bowl, mix all rub ingredients except oil; set aside.
  • Heat gas or charcoal grill for indirect cooking. Brush oil over chicken; sprinkle rub mixture over chicken. For two-burner gas grill, heat one burner to medium; place chicken on unheated side. For one-burner gas grill, place chicken on grill over low heat. For charcoal grill, move medium coals to edge of firebox; place chicken over drip pan. Cover grill; cook 15 minutes.
  • Turn chicken over; cover grill and cook 20 to 30 minutes longer, turning occasionally, until juice of chicken is clear when thickest piece is cut to bone (170°F for breasts; 180°F for thighs and drumsticks).

2 teaspoons lemon pepper
2 teaspoons black pepper
2 teaspoons salt
2 teaspoons garlic salt
1 teaspoon cayenne pepper
4 large size chicken halves
1 can or bottle of beer (recommended: Coors beer)

Steps:

  • Mix the seasonings together in a small bowl and sprinkle onto the chicken halves. Let the seasoned chicken sit, covered, in the refrigerator at least 1 hour and a half before grilling.
  • Preheat the grill. Place the chicken, bone side down, onto the grill and leave for at least 15 minutes to make sure the seasoning sticks. Gently turn the chicken over and continue to let it cook for another 15 minutes.
  • Pop the seal of the beer can just enough to spray a fine mist over the chicken without disrupting or extinguishing your flame. If you are using a bottle of beer, use your thumb to control the amount of liquid coming out of the bottle.
  • Turn the chicken often, using the beer to keep it moist, and making sure not to tear the skin.
  • Grill until the chicken reaches an internal temperature of 165 degrees F, or its juices run clear, about 1 hour 50 minutes. Remove from the grill and let the chicken rest about 5 minutes before serving.

1 cup chocolate stout beer
3 green Thai chile peppers
3 cloves garlic, peeled
3 tablespoons brown sugar
2 teaspoons dry mustard
1 teaspoon garam masala
1 teaspoon kosher salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
½ teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon ground nutmeg
1 (5 pound) whole chicken

Steps:

  • Preheat grill for medium heat. If using charcoal, push coals to the side of the grilling area for indirect heat.
  • Pour stout beer into an empty 12-ounce soda can and drop Thai chilies and garlic cloves into the can. Mix brown sugar, dry mustard, garam masala, kosher salt, black pepper, cayenne pepper, cumin, cinnamon, onion powder, garlic powder, and nutmeg in a bowl.
  • Rinse the chicken and coat the skin with the entire batch of spice rub. Place soda can containing beer mixture onto the prepared grill and sit the chicken upright onto the can.
  • Grill chicken over indirect heat until juices run clear and an instant-read meat thermometer inserted into the thickest part of the breast, not touching bone, reads at least 165 degrees F (75 degrees C), about 45 minutes. Let chicken rest 10 minutes before serving.
