400 ml lager beer
180 g plain flour
15 g baking powder

Steps:

  • Sift Flour and Baking Powder into a bowl.
  • Pour Liquid, (Lager is best but Water can also be used) into a bowl.
  • Sift Flour and Baking powder mix over the liquid a little at a time whisking inbetween until all is mixed with no lumps.
  • At this stage, check consistency to your requirements. Add a little more flour for thicker batter, a little more liquid for a thinner batter. No more Baking powder is needed.
  • Use immediately, no need to rest.

4-6 haddock filets or white fish filets of choice
1 cup flour
3 tablespoons cornstarch
2 teaspoons baking powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 cup beer
1/4 teaspoon ground black pepper
1/2 cup flour
2 tablespoons cornstarch

Steps:

  • Combine the batter ingredients and mix until smooth batter forms, ensuring that there are no lumps.
  • To deep-fry, preheat 2-3 inches of oil in a heavy saucepan to 375 degrees F, or preheat your deep fryer. Line a large plate or platter with paper towels and set aside,
  • Combine the "flouring" ingredients together in a small bowl.
  • Dredge the fish filets through the flour mixture first, lightly tapping them to sure there isn't too much flour coating on them.
  • Proceed to now cover the floured fish filets with the batter until covered with a thick coat of batter.
  • Place gently into the heated oil.
  • Cook two at a time in the hot oil, for approximately 4 minutes per side or until a medium golden brown.
  • Remove and drain the fish on the prepared paper towels.
  • Serve and enjoy.

2 large eggs
1 bottle light- or medium-bodied lager (12 ounces), cold
2 1/2 cups all-purpose flour (spooned and leveled)
Coarse salt
5 cups vegetable oil
2 1/2 to 3 pounds shrimp, firm fish fillets (such as cod), or desired vegetables (such as onions or pepperoncini), cut into pieces if necessary
2 cups buttermilk (if using onions)

Steps:

  • In a medium bowl, whisk eggs until smooth, then whisk in beer. Add 1 1/2 cups flour and 1 1/2 teaspoons salt and whisk until combined. Place 1 cup flour in a shallow bowl. Place a wire rack on top of a rimmed baking sheet; set near stove.
  • In a wide 6-quart pot fitted with a deep-fat or candy thermometer, heat oil to 375 degrees over medium. (The oil should bubble rapidly when a pinch of flour is added.) Working in small batches, lightly coat food in flour, then dip in batter, gently shaking off excess. Fry, turning halfway through, until browned and crisp, about 5 minutes per batch (adjust heat to maintain 375 degrees). With a slotted spoon, transfer food to rack to drain and discard any browned bits of batter. Season immediately with salt. Keep warm in a 200-degree oven.

1 cup all-purpose flour
2 tablespoons garlic powder

Steps:

  • Heat oil in a deep fryer to 365 degrees F (185 degrees C). Rinse fish, pat dry, and season with salt and pepper.
  • Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients. Gradually mix in beer until a thin batter is formed. You should be able to see the fish through the batter after it has been dipped.

  • Mix all ingredients, except beer, in medium size bowl.
  • Gradually add enough beer, starting with about a 1/2 a cup, to make batter consistency of thickened pancake batter.
  • Mix til smooth.
  • Dip fish (fillets, shrimp, etc.), veggies (zucchini, mushrooms, etc.) in batter, gently place into moderately hot oil (use either an electric skillet or Fry Daddy) approximately, 375 degrees, fry until puffy and golden brown, about 3 minutes, each side.
