A blend of chiles and spices simmered with beef stew meat. Very delicious and served with cilantro, limes, and onion as condiments and Mexican rice or beans as side dishes.

Steps:
- Place Anaheim and guajillo peppers in a saucepan and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Remove saucepan from heat and cool for 5 minutes.
- Pour chiles and water into a blender; add onion, mixed spices, and salt. Blend until sauce is smooth.
- Mix stew meat, sauce, and bay leaves in a large pot; cook over medium-low heat until meat is very tender, 3 to 5 hours.

BERRY ICED TEA
Steps:
- Put tea bags in a heatproof pitcher.
- In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and remove tea bags. Cool tea and chill, covered, until cold, about 1 hour.
- Stir in simple syrup, to taste. Squeeze orange and lime wedges into tea and add wedges. Serve tea in tall glasses. Garnish with frozen raspberries.
- Add sugar and water to a microwave safe bowl. Microwave for 1 minute; stir until sugar is completely dissolved. Let syrup cool.
BERRIES ARTESIA
A lovely Cajun berry and wine compote, redolent with vanilla and the unexpected flavor of bay. The restaurant used mixed berries, but if you have an abundance of one kind, this would be a good way to show them off. This was once on the menu at Artesia Restaurant on the North Shore, New Orleans, although I'm not sure it is anymore. Simple and elegant.

Steps:
- Rinse berries well and put aside.
- In a heavy saucepan, add the wine, apple juice, bay leaf, sugar and vanilla bean, making sure to add the pod as well as the scraped-out seeds.
- Turn heat to medium and bring to a boil. Remove from heat, then add arrowroot to thicken. Return to the heat and simmer for two minutes. Add berries and allow to cool.
- Serve over ice cream.

- Berry Smoothie Bowls Puree 1/2 cup each strawberries and refrigerated coconut milk in a blender with two 3.5-ounce packets frozen pureed dragon fruit until smooth.
- Blueberry-Bottom Yogurt Cook 1 cup blueberries with 1 tablespoon each sugar, honey and water in a small saucepan over medium heat until syrupy, about 8 minutes; let cool.
- Blueberry-Ricotta Pancakes Whisk 1 cup flour with 3 tablespoons sugar, 1 teaspoon baking powder and 1/2 teaspoon salt in a large bowl. In a separate bowl, whisk 3/4 cup each ricotta and milk, 2 egg yolks and 1 teaspoon vanilla; stir into the flour mixture, then stir in 1 cup blueberries.
- Berry Cornmeal Pancakes Whisk 3/4 cup each flour and cornmeal with 3 tablespoons sugar, 1 teaspoon baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda in a large bowl.
