BERRY LAYER MAGIC CAKE

Berry Layer Magic Cake image

This cake is truly magic. You make just one batter, but after baking you end up with three distinct layers of cake, fruit and custard.

Provided by Food Network Kitchen

Categories     dessert

Time 3h20m

Yield 9 servings

Number Of Ingredients 12

6 tablespoons unsalted butter
3 large eggs, at room temperature, separated
3/4 cup granulated sugar
2/3 cup all-purpose flour (see Cook's Note)
1/8 teaspoon fine salt
1 1/2 cups milk
1 teaspoon vanilla extract
1 cup strawberries, sliced 1/4 inch thick
1 cup raspberries, halved lengthwise
1/2 teaspoon cream of tartar
Confectioners' sugar, for serving
Whipped cream, for serving

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line an 8-inch square metal baking pan with a 12-by-8-inch piece of parchment paper leaving an overhang on 2 sides.
  • Melt the butter in a small microwave-safe bowl in the microwave, about 1 minute. Brush the parchment paper with some of the melted butter, then flip it over and press it back in the pan. Brush the other side of the paper and the sides of the pan with butter.
  • Whisk the egg yolks and sugar vigorously in a large bowl until pale, creamy and thick, 1 to 2 minutes. Pour in the remaining melted butter and whisk until incorporated. Add the salt and all but 2 tablespoons of the flour, mixing until completely combined.
  • Heat the milk in a microwave safe bowl or measuring cup in the microwave until warm, about 1 minute. Slowly add the milk and vanilla to the egg yolk mixture, whisking constantly until well combined (the batter will be thin). Toss the berries with the reserved 2 tablespoons flour and gently stir into the mixture.
  • Beat the egg whites and the cream of tartar in a clean bowl with an electric mixer on medium speed in until stiff peaks form, about 2 minutes. Scrape the whites into the yolk mixture, gently breaking them up a little with a whisk. Using a whisk, gently stir and fold the mixture a few times to coat the whites with liquid while keeping as much volume as possible (the batter will not be homogeneous). Pour the batter into the prepared pan and gently smooth the top with a rubber spatula.
  • Bake until the top is browned and puffed and the cake is mostly set with a slight jiggle in the center, about 1 hour. Let the cake cool completely in the pan, about 2 hours.
  • To serve, dust the top of the cake with confectioners' sugar. Run a small offset spatula or thin knife around the edges of the pan to loosen. Use the parchment paper overhang to lift the cake from the pan and place it on a cutting board. Cut the cake into 9 squares and serve topped with whipped cream.

Strawberry Basket Cake image

Categories     Cake     Berry     Dessert     Bake     Vegetarian     Strawberry     Spring     Sour Cream     Bon Appétit     Kidney Friendly     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Serves 10

Number Of Ingredients 14

2 cups all purpose flour
1 teaspoon baking powder
1teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1cup plus 2 tablespoons sugar
1 cup sour cream
1/4 cup orange juice
1 1/2 teaspoons grated orange peel
1 teaspoon vanilla extract
2 large eggs
2 12-ounce baskets strawberries
1/3 cup strawberry preserves
Whipped Crème Fraîche

Steps:

  • Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 2-inch-high sides. Line bottom of pans with parchment paper. Sift first 4 ingredients into medium bowl. Using electric mixer, beat butter and 1 cup sugar in large bowl until well blended. Beat in sour cream, orange juice, orange peel and vanilla. Add eggs 1 at a time, beating well after each addition. Add dry ingredients and beat until well blended. Divide batter between prepared pans; smooth tops.
  • Bake cakes until light golden and tester inserted into center comes out clean, about 28 minutes. Cool cakes in pans on rack 30 minutes. Turn cakes out onto racks and cool completely.
  • Meanwhile, hull and slice 1 basket strawberries. Place in medium bowl. Add preserves and 2 tablespoons sugar; toss to blend. Let stand at room temperature until juices form, about 2 hours.
  • Place 1 cake layer, flat side up, on platter. Top with sliced berry mixture in even layer. Spread 1 3/4 cups Whipped Crème Fraîche over berry mixture. Top with second cake layer, flat side down, pressing slightly. To make basket weave, spread 1 1/4 cups Whipped Crème Fraîche over top and sides of cake; then follow directions in the box at right. Or to frost simply, spread all of Whipped Crème Fraîche over top and sides of cake. (Can be made 8 hours ahead. Cover with cake dome and refrigerate.) Mound remaining whole berries in center of cake.
  • How to Pipe a Basket Weave
  • 1. Using a ruler to measure and a skewer to mark, draw vertical lines at 3/4-inch intervals on sides of frosted cake. Fit a pastry bag with a plain round tip; fill with 1 cup frosting. Pipe a vertical cord of frosting from top to bottom of cake over one drawn line.
  • 2. Using another pastry bag fitted with a basket-weave tip and filled with 2 cups frosting, pipe a short horizontal ribbon across cord, extending ribbon from the drawn line to the left of the cord to the drawn line on the right. Repeat, piping horizontal ribbons down the length of the cord, leaving a space between ribbons that is the same width as the ribbons.
  • 3. Pipe another vertical cord over the next drawn line. The cord should touch the end of the adjacent ribbons.
  • 4. Pipe short horizontal ribbons over second cord to fill the spaces between ribbons on the first cord. (Start each ribbon at the edge of-but don't cover-the first vertical cord. Pipe ribbon over second cord, ending at next drawn vertical line.) Repeat, alternating between piping ribbons and cords to finish basket weave.
  • 5. Fit another pastry bag with star tip; fill with 1 cup frosting. Pipe frosting around top edge of cake.

BERRY CHEESECAKE POKE 'BOX' CAKE RECIPE BY TASTY

Berry Cheesecake Poke 'Box' Cake Recipe by Tasty image

Here's what you need: vanilla cake mix, strawberry, cream cheese, sweetened condensed milk, blackberry, raspberry, frozen whipped topping, graham cracker, strawberry

Provided by Matthew Johnson

Categories     Bakery Goods

Yield 12 servings

Number Of Ingredients 9

1 vanilla cake mix, prepared according to package
2 cups strawberry, stems removed
8 oz cream cheese, softened
14 oz sweetened condensed milk
1 cup blackberry, mashed
1 cup raspberry, mashed
8 oz frozen whipped topping, thawed
graham cracker, crumbled, for topping
strawberry, sliced, for topping

Steps:

  • Preheat oven to 350°F (180°C).
  • Prepare your favorite plain vanilla cake recipe or use a prepared box and follow its instructions.
  • Using the back of a wooden spoon, poke at least 3 rows of 4 holes in the cooked cake, making 12 holes total.
  • In a large bowl, mash the strawberries with a potato masher or fork until mashed to a pulp.
  • Add the cream cheese and condensed milk, whisking until there are no large lumps.
  • Add the mashed blackberries and raspberries; stir just once or twice so the colors remain differentiated.
  • Pour the mixture over the cake and let settle into the holes for about 10 minutes. Some of the mixture will still stay on top, which is okay.
  • Spread the whipped topping evenly over the cake. Sprinkle graham crackers on top and add sliced strawberries or other fresh berries.
  • Chill the cake for at least 3 hours or up to overnight.
  • Enjoy!

I needed to use up some of the berries I froze last summer so I changed up my favorite sour cream cake recipe to come up with this barely-sweet cake with a whiff of almond flavor. It's great with a cup of tea or coffee. Feel free to increase the amount of sugar for a sweeter cake.
