BERRY CRUMB BARS

Economical and easy to make bars. Kids love them. You can use any variety of berry that you like; we used raspberries in this recipe.

1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup shortening
1 egg
1 pinch salt
1 pinch ground cinnamon
4 cups raspberries
½ cup white sugar
3 teaspoons cornstarch

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 13x9-inch pan.
  • Combine 1 cup of the sugar, the flour, baking powder, salt, ground cinnamon, shortening, and egg. Dough will be crumbly. Pat half of the dough into the prepared pan.
  • Combine the remaining 1/2 cup sugar, the cornstarch and berries. Place mixture over dough in pan. Crumble the remaining dough over the tops of the berries.
  • Bake in the preheated oven until top is slightly browned, about 45 minutes.

Berry delicious dessert is made with partridgeberries, raspberries and cranberries and its hard to only have one piece. Hi and welcome to our website! If you are looking for a dessert that is so delicious your family goes back for more, well this is the right dessert for you. Plus it's called a BERRY DELICIOUS DESSERT! Having fresh or freshly frozen berries for this dessert works prefect. Having any type of berries in this dessert will work prefect, but if you love berries with a little tartness this is the ones that will work. PARTRIDGEBERRIES, RASPBERRIES and CRANBERRIES they pair well together and with the sweetened jello you don't need to add any sugar. This recipe was one I tried at a pot luck dinner with a few friends, our friend RUTH made this dessert but she used all PARTRIDGEBERRIES. It was so delicious, and I asked Ruth if she would share with me her recipe to make to share with you on Bonita's Kitchen. Chocolate, whipped cream and three types of berries to make this BERRY DELICIOUS Dessert. Of course Ruth didn't mine sharing this recipe with us, but she said that it wasn't hers it was her friends recipe that she would make and she thought to share it with us at our pot luck. What is so lovely about this story, the dessert was just called partridgeberry dessert. But I don't have 4 cups of partridgeberries and I wanted to make and share this recipe with all of you. SO! I had a brain storm and said I will add two other berries with it and call it a BERRY DELICIOUS Dessert. ???? BERRY DELICIOUS Dessert with graham crackers crumbs and butter. BERRY DELICIOUS Dessert with red jello sweetened or unsweetened. Having the graham crackers already grated it saves time, but if not just grate or pop in your kitchen aid or just crunch it up by hand. BERRY DELICIOUS Dessert with a side of glazed strawberries to make this dessert even better. Number Of Ingredients 8

Berries
Jello
Warm Water
Graham Crackers
Butter or margarine
Whipped Cream
Mini marshmallows
Chocolate

Steps:

  • Method: In a medium saucepan add berries bring to a boil then remove from heat, add a little water if needed, Then in a bowl add JELLO and warm water, mix well. Then add to partridgeberries and fold together, place on the fridge for 15 to 20 minutes to cool and part set. In another bowl mix together graham crackers and butter, work it with your hand or a mixer. You will need a 9 x 13 inch pan, put all the graham cracker mixture at the bottom and flatten down. Then add berry filling and spread evenly. Whip your cream and let cool, then add your mini marshmallows over berries and put the pan under the grill or broiler for 1 to 2 minutes or until fluffy and a little golden brown. LET COOL IN THE FRIDGE for 15 minutes before adding whipped cream. When cooled add white whipped cream and top with chocolate of choice, KEEP IN FRIDGE until ready to serve and until all dessert is gone. Serve with fresh berries of on its own.

48 chocolate sandwich cookies, crushed
12 tablespoons unsalted butter, melted
3 cups blueberry
1 ½ cups strawberry, stemmed, hulled, and quartered
1 ½ cups raspberry
¾ cup granulated sugar
3 tablespoons cornstarch
4 tablespoons water
½ teaspoon cinnamon
½ teaspoon salt
1 cup mixed fresh berry
whipped cream, for serving

Steps:

  • Line a baking sheet with parchment paper.
  • In a medium bowl, mix together the cookie crumbs and butter until fully incorporated.
  • Pour the crumbs into the prepared baking sheet and press firmly in an even layer. Transfer to the refrigerator to firm, about 1 hour.
  • In a medium saucepan over medium-low heat, combine the blueberries, strawberries, raspberries, and sugar. Stir until the sugar dissolves, about 5 minutes.
  • In a small bowl, whisk together the cornstarch and water until a smooth paste forms.
  • Add the cornstarch slurry to berries and stir to combine. Stir in the cinnamon and salt.
  • Let the berry mixture cool completely, about 1 hour, before pouring over the crust. Top with the mixed berries.
  • Slice into 12 bars and serve with a dollop of whipped cream.

4 cups fresh berries (sliced strawberries, raspberries and blueberries)

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray 15x10x1-inch pan with baking spray with flour.
  • In large bowl, beat cake mix, softened butter and eggs with electric mixer on medium speed about 1 minute or until well blended. Spread evenly in pan.
  • Bake 19 to 24 minutes or until top is evenly golden brown and toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • Spread frosting evenly over cooled bars. Top with berries up to 2 hours before serving. For 48 bars, cut into 8 rows by 6 rows. Store covered in refrigerator.

These are a riff on a treat I loved as a child: little cheesecake bars with ribbons of jam and a drizzle of frosting on top. They are great to keep in the fridge when I've got a craving for something sweet or to serve as dessert for a party.

Nonstick cooking spray, for the pan
1 1/2 cups graham cracker crumbs (from about 9 graham cracker sheets)
1/2 cup sugar
6 tablespoons unsalted butter, melted
Pinch kosher salt
Two 8-ounce blocks cream cheese, at room temperature
1/2 cup sugar
2 large eggs, at room temperature
1/2 cup sour cream
1 tablespoon lemon juice
2 teaspoons vanilla extract
1/2 cup blackberry jam, warmed until liquidy
1/2 cup raspberry jam, warmed until liquidy
1 cup white chocolate chips, melted

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Lightly grease an 8-inch square baking pan with cooking spray.
  • Stir together the graham cracker crumbs, sugar, melted butter and salt in a bowl. Press into an even layer in the bottom of the pan. Bake the crust until set, 10 to 12 minutes. Remove from the oven and let cool. Reduce the oven temperature to 325 degrees F.
  • For the filling: Beat the cream cheese and sugar in the bowl of a stand mixer with the paddle attachment until creamy. Add the eggs, one at a time, beating until the yellow disappears. Add the sour cream, lemon juice and vanilla extract and beat until smooth. Pour the batter over the cooled crust. Bake until the cheesecake is firm and set, 35 to 40 minutes. Remove from the oven. Run a knife around the edges and let the cheesecake cool completely. Cover with plastic wrap and refrigerate for 2 hours or up to overnight.
  • For the topping: Cut the cheesecake into 12 bars. Coat a straw or a chopstick with cooking spray. Press down in the center of each bar to form a space for the jam, cleaning after each use. Pipe the jams alternately into the center of each bar, then drizzle with the melted white chocolate.

1 (4 3/4 ounce) package raspberry junket danish dessert mix or 1 (4 3/4 ounce) package strawberry-flavor danish dessert mix
1 3/4 cups cold water or 1 3/4 cups apple juice

Steps:

  • For crust: Mix all ingredients together in a mixing bowl
  • Pat into a 9X13 pan like you would pie dough.
  • Bake at 275 degrees for 15 minutes.
  • For cream cheese layer: Cream together cream cheese, powdered sugar and vanilla with an electric mixer.

½ cup butter
1 cup vanilla baking chips
2 eggs
½ cup white sugar
1 teaspoon almond extract
1 cup all-purpose flour
½ teaspoon salt
½ cup any flavor of berry jam
1 cup vanilla baking chips
¼ cup sliced almonds

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x9 inch square baking pan. In a saucepan over medium heat, melt butter. Remove from heat and add 1 cup vanilla chips, but do not stir.
  • In a large bowl, beat eggs until foamy. Gradually mix in the sugar. Stir together the softened chips and butter, and blend into the egg mixture along with the almond extract. Combine the flour and salt; stir into the batter until just mixed. Spread half of the batter into the prepared pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until golden brown. In a small saucepan, over low heat, warm the jam to make it more liquid. Spread the jam over the warm crust. Stir the remaining cup of vanilla chips into the batter, then drop the rest of the batter by teaspoonfuls over the jam. Sprinkle with almonds.
  • Bake for an additional 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center, comes out clean. Cool in pan on a wire rack before cutting into bars.
