BLUEBERRY FUDGE



Blueberry Fudge image

Blueberry Fudge is very easy to make with just 3 ingredients and just a few minutes of prep work. The fudge is sweet, creamy and full of flavor.

20 ounces white chocolate melting wafers
1 cup sweetened condensed milk
1 cup freeze dried blueberries
1/2 teaspoon purple gel food coloring (optional)
6 ounces white chocolate melting wafers
1/4 cup freeze dried blueberries

Steps:

  • Line a 9x9 inch pan with parchment paper, so it overhangs on two sides. Set aside.
  • Add 1 cup of freeze dried blueberries to a food processor. Pulse a few time to slightly chop the fruit. Set aside.
  • Combine the chocolate wafers and condensed milk in a large, microwave safe bowl.
  • Microwave in 20 seconds increments and stir after each one very, very well, until the chocolate has melted. It took me two intervals only to melt the chocolate, make sure you stir well before you microwave again, as the remaining heat will melt the chocolate.
  • Note: If you are using regular chocolate, make sure you chop it into small pieces before adding it to the bowl to microwave.
  • Stir well until smooth, add the chopped freeze-dried blueberries. Stir well to combine. For a more pronounced purple color, add the gel food coloring.
  • Pour mixture into the prepared pan. If desired sprinkle freeze-dried dried blueberries on top and pour some melted white chocolate on top. Refrigerate for 1 hour.
  • Slice the fudge and serve.
  • Fudge can be stored at room temperature for 1 week in an airtight container for longer in the fridge.

⅔ cup butter
4 ½ cups white sugar
1 (12 fluid ounce) can evaporated milk
2 (7 ounce) jars marshmallow creme
16 ounces chocolate candy (such as Hershey's®)
2 ½ cups milk chocolate chips
2 cups peanut butter

Steps:

  • Grease a 9x13-inch baking pan. Set aside.
  • Bring butter, sugar, and evaporated milk to a boil in a saucepan over medium heat. Boil for 5 to 7 minutes, then remove from heat and quickly stir in the marshmallow cream, chocolate candy, and chocolate chips, until the chocolate has melted and is fully incorporated. Pour chocolate mixture into the prepared baking pan. Dot the top of the fudge with peanut butter. Swirl a knife through the fudge and peanut butter to create a marble effect. Cover and refrigerate until firm, about 1 hour. Cut into squares for serving.

Steps:

  • Berry Mixture: Place berries in baking dish, sprinkle with sugar.
  • Flour Mixture: Combine flour, oats, brown sugar and soybean oil in small bowl. Mix with fork or finger tips until crumbly.
  • Sprinkle the flour mixture over the berry mixture.

1 package fudge brownie mix (13x9-inch pan size)
1/3 cup chopped unblanched almonds
1 teaspoon almond extract
TOPPING:
1 package (8 ounces) cream cheese, softened
1 tablespoon sugar
1 teaspoon vanilla extract
1/2 teaspoon grated lemon zest
2 cups whipped topping
Assorted fresh berries
Optional: Fresh mint leaves and coarse sugar

Steps:

  • Preheat oven to 375°. Prepare brownie batter according to package directions for fudgelike brownies, adding almonds and almond extract. Spread into a greased 14-in. pizza pan., Bake until a toothpick inserted in center comes out clean, 15-18 minutes. Cool completely on a wire rack. , Beat first 4 topping ingredients until smooth; fold in whipped topping. Spread over crust to within 1/2 in. of edges; refrigerate, loosely covered, 2 hours., To serve, cut into 12 pieces; top with berries of choice. If desired, top with mint and sprinkle with coarse sugar.
