FREAKY FAST FIESTA DIP
Andrew came home for the holidays on a very quick trip. While gathering around the kitchen snack bar munching he said, 'Hey, wanna try one of my recipes?' He proceeded to throw this dish together while we all visited and watched. What a great surprise when it was finished. He made it again the next night and again, it was gone in minutes. A very colorful and tasty treat enjoyed by all! Serve with tortilla chips.

- 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
- 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
- 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.

I was raised on a Montana ranch, and my grandmother taught me to cook when I was 10 years old. My husband and I (we have one married daughter) are retired now. To stay active, I bowl and do crafts. - Preheat oven to 400°F. Mix black beans, great northern beans, corn, red salsa, and shredded cheese in a large bowl. Spread in a 9 x 13 pan sprayed with cooking spray. Bake at 400 degrees for 15 minutes until warm and bubbly. Remove from oven and let set for 5 minutes.
- While dip is baking, place a stack of tortillas on a cutting board and cut out football shapes. Spread on a greased cookie sheet and spray tops with cooking spray. Sprinkle sea salt on top. Bake in a 400°F. degree oven for 5 minutes until crispy.
- After dip has cooled for 5 minutes and set a little bit, gently spread salsa over the top. In a gallon freezer baggie, mix cream cheese and sour cream. Snip an end off the bag and pipe on yard lines and hash marks. If the mixture is too thick to pipe out, add a little more sour cream. Hike!

- In a bowl, combine softened cream cheese and salsa until it's a pale orange/peach color. You can add more or less to taste. Mix with a spoon or spatula.
- Then spread mixture into square shallow baking dish about a half an inch thick. For presentation purposes if mixture gets on the edges of dish simply run a paper towel around the edges of the dish. Top with lots of shredded cheese.
- Serve with tortilla chips!
