2 sweet onions, finely chopped
2 smoked ham hocks
4 cloves garlic, finely chopped
3 (32 ounce) containers chicken broth
3 (1 pound) packages collard greens, trimmed
⅓ cup apple cider vinegar
2 tablespoons white sugar
1 ½ teaspoons salt, or to taste
¾ teaspoon ground black pepper, or to taste

Steps:

  • Combine onions, ham hocks, and garlic in a stockpot; add chicken broth. Cook mixture over medium heat until meat is falling off the bone, about 2 hours.
  • Stir collard greens, vinegar, sugar, salt, and pepper into the broth mixture; cook until greens have reached desired tenderness, about 2 more hours.

There are many delicious ways to cook collard greens, but this is the way we do it in the South.

Number Of Ingredients 10

12 hickory-smoked bacon slices, finely chopped
2 medium-size sweet onions, finely chopped
¾ pound smoked ham, chopped
6 garlic cloves, finely chopped
3 (32-oz.) containers chicken broth
3 (1-lb.) packages fresh collard greens, washed and trimmed
⅓ cup apple cider vinegar
1 tablespoon sugar
1 teaspoon table salt
¾ teaspoon pepper

Steps:

  • Cook bacon over medium heat in a 10-qt. stockpot for 10 to 12 minutes or until almost crisp.
  • Add onion to stockpot, and sauté 8 minutes. Add garlic and ham, and sauté 1 minute. Stir in broth, collard greens, apple cider vinegar, sugar, salt, and pepper. Reduce heat to medium-low, and cook 2 hours or until desired degree of tenderness.

1/2 pound chopped bacon
3 cups chopped yellow onions
Salt
Freshly ground pepper
Cayenne pepper
1/2 cup firmly packed light brown sugar
2 tablespoons minced shallots
1 tablespoon minced garlic
6 cups water
1/4 cup rice wine vinegar
6 pounds assorted greens, such as mustard greens, collard greens, turnip greens, kale and spinach, washed and stemmed

Steps:

  • In a large pot, saute the bacon until slightly crisp. Add the onions and season with salt, pepper and cayenne pepper. Cook 6 to 7 minutes, until the onions are wilted and golden. Add the brown sugar and stir to dissolve. Add the shallots and garlic. Cook for 2 minutes. Add the water and vinegar and mix well. Begin adding the greens, a third at a time, pressing them down as they begin to wilt. Season with salt and pepper. Reduce the heat to medium-low and cook, uncovered, until the greens are soft, about 1 hour and 15 minutes. Serve hot.

1/4 cup diced onion
2 cloves garlic, minced
1 ounce cider vinegar
2 bunches collard greens, stems removed
1 bunch mustard greens, stems removed
1 teaspoon molasses
1 tablespoon Worcestershire sauce
1 tablespoon hot sauce (recommended: Tabasco)
Salt and freshly ground black pepper

Steps:

  • In a saute pan over medium heat, cook the onions, garlic, and vinegar until the liquid has reduced by half. Add the greens, molasses, Worcestershire, hot sauce, 1 cup water, and salt and pepper. Cover with wax or parchment paper and simmer until the greens are tender, about 30 minutes. Adjust seasoning if needed.

3 tablespoons lard or shortening, divided
1 large onion, chopped
6 garlic cloves, minced
1-1/2 pounds smoked ham hocks
6 cups water
2 teaspoons seasoned salt
1 to 3 teaspoons crushed red pepper flakes
1/4 teaspoon sugar
1 large bunch collard greens (about 2 pounds), coarsely chopped
1-1/2 cups white wine

Steps:

  • In a 6-qt. stockpot, heat 1 tablespoon lard over medium heat. Add onion and garlic; cook and stir until tender. Add ham hocks, water, seasoned salt, pepper flakes, and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until meat is tender, 55-60 minutes., Add collard greens, wine, and remaining 1 Tbsp. lard. Return to a boil. Reduce heat; simmer, uncovered, until greens are very tender, 55-60 minutes. Remove meat from bones; finely chop and return to pan. Discard bones. Serve with a slotted spoon.

5 tablespoons margarine
1 turnip bulb, chopped
1 medium yellow onion, chopped
1 (8 to 12-ounce) ham hock, chopped
Pinch salt
1 tablespoon sugar
2 pounds turnip greens, washed, stemmed and chopped
1 teaspoon red pepper flakes
Pinch freshly ground black pepper
1 tablespoon horseradish
Pinch wasabi powder
1 tablespoon ham base
2 cups water

Steps:

  • In a large, heavy pot over medium heat, add the margarine, onion and ham hock. Saute until onions seem translucent, about 5 to 6 minutes. Add the remaining ingredients, except the turnip greens, and mix together. Add the turnip greens and cook on medium heat, partially covered until tender, stirring occasionally, about 1 1/2 to 2 hours. When the greens and turnips are tender it's time to eat.

2 pounds collard greens, rinsed
1 tablespoon canola oil
1 cup 1/4-inch diced salt pork
1 cup diced onion
1/4 teaspoon crushed red pepper flakes, optional
1/2 teaspoon freshly cracked black pepper
1 cup low-sodium chicken stock
1/2 cup water
1/3 cup white vinegar
1 teaspoon hot pepper sauce, plus more for serving (recommended: Crystal)

Steps:

  • Cut off and discard the tough stems and discolored leaves from the greens. Cut across the leaves into 2-inch ribbons.
  • In a large stock pot, over medium-high heat, add the canola oil and the diced salt pork, and cook until light golden brown and just crisp. Remove to a paper towel lined plate and let cool.
  • Add the onion to the pot and cook until translucent, about 5 minutes, then add the red chili flakes, black pepper, and the collard greens.
  • Stir every few minutes, or until greens have wilted down. Add the chicken stock and the water and cover. Cook for 30 to 45 minutes, then remove the lid, increase the heat to high, and add the vinegar and a teaspoon of hot sauce. Adjust the seasoning, if needed, then put it into a serving bowl. Sprinkle with the salt pork and serve with additional hot pepper sauce on the side.

1 teaspoon red pepper flakes

Steps:

  • In a large pot over medium heat, heat oil and butter. Saute the onions until slightly softened, about 2 minutes, then add the red pepper flakes and garlic, cook another minute. Add collard greens and cook another minute. Add the vegetable stock, cover and bring to a simmer. Cook until greens are tender, about 40 minutes. Add tomatoes and season with salt and freshly ground black pepper.

1/2 cup white distilled vinegar
3 tablespoons salt
2 bunches fresh collard greens ( (see note))
1 tablespoon extra virgin olive oil
½ cup finely diced onions
1 tablespoon minced garlic
½ teaspoon red pepper flakes
4-5 cups chicken broth ((can replace 1 cup with water if desired))
1 fully-cooked smoked turkey leg or wing ((about 13 oz))
1 tablespoon white distilled vinegar
Applewood smoked salt & black pepper, to season

Steps:

  • Prepare the collard greens bath by filling your kitchen sink with cool water and adding vinegar and salt.
  • Remove the collard greens from the steams by folding them in half lengthwise and pulling the leaf away from the stem. (discard the stem or see note below on how to cook them)
  • Place the collard greens into the prepared water bath and swish them around several times, scrubbing them to help loosen up any dirt.
  • Let the collard greens soak for 15-20 minutes, giving them a scrub midway. Drain the water and refill with plain water and allow the greens to soak again if needed. Repeat as many times as needed until the water is free from any dirt or grit. After the final soak, drain the water. Next, rinse and scrub each leaf front and back with cool water to ensure they are squeaky clean.
  • Tear the greens into bite-sized pieces and set them aside.
  • In a large pot, heat olive oil. Add onions and saute until tender.
  • Add garlic and red pepper flakes and cook until garlic is fragrant.
  • Pour in the broth and add the turkey leg. Bring to a boil.
  • Add collard greens and reduce heat to a simmer.
  • Cover and cook collard for 1 hour (or longer depending on your desired tenderness), stirring regularly.
  • Once done, stir and then taste the broth and the greens. (add a little water if the broth is too bold for your liking)
  • Stir in vinegar and smoked salt, and black pepper if desired.
  • Serve collard greens with pieces of the smoked turkey leg and hot sauce if desired.

4 -5 bundles greens (stems and veins removed)
1 medium onion, diced
4 garlic cloves, minced
6 -8 slices bacon, cut into 1 inch squares
1 turnip, peeled and cut into cubes
1/3 cup apple cider vinegar
2 -3 cups chicken stock
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 tablespoon brown sugar
3 -4 good dashes Tabasco sauce

Steps:

  • Begin cooking bacon on medium-high heat until edges start to brown.
  • Add onion and Turnip and continue cooking until onions are translucent.
  • Add garlic, salt, pepper, sugar, and Tabasco and cook until garlic is fragrant (about 1 minute).
  • Add apple cider vinegar and continue cooking until reduced by about half (looks syrupy).
  • Transfer to stock pot scraping bits from the bottom of the pan, add chicken stock and greens, bring to a simmer, wilting down greens.
  • Reduce heat to medium low cover and let simmer stirring occasionally for 2 hours (or until desired doneness).
