UNCLE BILL'S MARVELOUS LASAGNA
I developed this recipe many years ago. It is rather lengthy but is worth the effort as it does turn out so good. You may use more cheese if desired.

Steps:
- Heat 1 tablespoon of olive oil in a frying, add ground beef and fry until cooked, 6 to 8 minutes.
- Drain off any fat and discard.
- Add remaining 3 tablespoons of olive oil to frying pan, chopped onions and garlic and saute' for 5 minutes.
- Add chopped celery, diced green and red peppers, sliced mushrooms, chopped zucchini, and saute' until vegetables are softened, about 3 minutes, stirring occasionally.
- Add grated carrots, cover and cook until carrots are limp, about 4 minutes.
- Transfer this mixture to a large cooking pot.
- Add tomatoes including liquid, tomato sauce, parsley, hot pepper flakes and allspice and heat to boil.
- Reduce heat to low and simmer uncovered for 1/2 hour, stirring occasionally.
- Blend in wine and continue to simmer for another 15 minutes, stirring occasionally.
- FILLING: Squeeze water from spinach and discard.
- Chop spinach small.
- In a mixing bowl, combine spinach, cottage cheese, 2 tablespoons of olive oil, beaten egg, 1/4 cup grated parmesan cheese, mix well and set aside.
- TO ASSEMBLE: Preheat oven to 450 degrees F.
- Use a 10" x 14" x 2" deep, heavy duty aluminum foil baking dish.
- Layer about 1/2" of prepared sauce over the bottom.
- Place enough lasagna sheets to cover area and press lightly into sauce.
- Layer another 1/2" of prepared sauce.
- Place lasagna sheets over and press lightly into sauce.
- Add spinach filling and level.
- Place lasagna sheets over and press lightly into filling.
- Add another layer of lasagna sheets.
- Layer another 1/2" of prepared sauce over.
- Place another layer of lasagna sheets and press lightly into sauce.
- Add the remaining sauce over and level.
- Sprinkle top generously with grated mozzarella cheese.
- Sprinkle remaining 1/4 cup grated parmesan cheese over.
- If desired, grate a 1/2 cup of Emmentaler Swiss cheese and sprinkle over top.
- Cover baking dish tightly with aluminum foil being careful not to let foil touch the lasagna.
- Bake in preheated 450 F oven for 20 minutes.
- Reduce heat to 425 degrees F.
- Remove foil and bake for another 10 minutes or until cheese melts.
- Remove from oven, cover and let sit to set for about 5 minutes before cutting.
- Cut into pieces and serve hot.
- Ondine Delverde Lasagna is a brand name and is sold in packages of 15 lasagna sheets and also 3- 8" x 8" aluminum foil pans.
- You can use these pans if desired.
- This lasagna is pre-cooked and does not require any cooking before hand.
- They now make fresh lasagna sheets that do not require pre-cooking.
- You may also use lasagna strips but you will require cooking these.

BIG JEFF'S JUMBO LASAGNA
Steps:
- For the cheese filling: Preheat oven to 350 degrees F.
- Mix together the ricotta, mozzarella mix, Romano, parsley, pepper and eggs in a large bowl.
- For the lasagna: Coat bottom of a 9-by-13-by-3-inch baking pan with the olive oil. Layer 14 lasagna noodles overlapping each other in bottom of pan. Add 8 ounces Nana's Sunday Sauce spread evenly over pasta, then pour in half of the cheese filling. Evenly spread all of sausage on top of the cheese filling and add 7 more lasagna noodles. Add 8 ounces Nana's Sunday Sauce and the remaining cheese filling. Crumble Nana's Giant Meatballs over cheese filling and add 8 slices provolone to cover the meatball layer. Cover the provolone with remaining lasagna noodles. Spread the remaining Nana's Sunday Sauce over noodles and top with Romano. Cover with foil and bake for 3 hours.
- Heat olive oil in a large Dutch oven and add neck bones and rib tips. Sprinkle with garlic salt and brown the meat, about 15 minutes. Add garlic, parsley and onion and cook until translucent, about 15 minutes.
- Add crushed tomatoes and basil. Cook down, stirring continuously, about 20 minutes.
- Add tomato paste, salt and pepper and 26 cups water. Bring to a boil, then simmer until reduced by a quarter, about 2 hours.
- Preheat oven to 375 degrees F.
- Mix beef, pork, breadcrumbs, basil, garlic, salt, pepper, egg and onion in a bowl and form into 4-ounce balls. Roll in olive oil and place on a sheet pan. Bake until roasted to golden brown, about 20 minutes.
LASAGNA

Steps:
- For the Tomato Sauce: Heat the oil in a large saute pan over medium-high heat, add the onions and cook until soft, 3 to 4 minutes. Add the garlic and red chili flakes and cook for 1 minute. Add the tomatoes, bring to boil, season with salt and pepper and cook until the sauce is reduced and thickened, about 25 to 30 minutes. Stir in the parsley and basil.
- For the Bolognese Sauce: Preheat the oven to 350 degrees F. Heat the oil in a large Dutch oven over high heat.
- Season the shanks on both sides with salt and pepper, place in the pan and cook until golden brown on both sides, about 4 minutes per side.
- Remove the shanks to a plate. Remove fat from the pan. Add the pancetta to the pan and cook until golden brown. Remove pancetta with a slotted spoon to a plate lined with paper towels.
- Add the onion, carrots, celery and garlic to the pan and cook until soft and lightly golden brown, 4 to 5 minutes.
- Add the red wine, scrape the bottom of the pan and cook until completely reduced. Add the beef stock, diced tomatoes, thyme, rosemary and parsley and bring to a simmer. Add the shanks and 1/3 of the pancetta back to the pan, cover and transfer to the oven. Cook until the meat is tender and falling off the bone, about 2 hours.
- Remove the shanks to a cutting board and when cool enough to handle, shred the meat into bite-size pieces and place in a bowl.
- Strain the cooking liquid into a bowl. Place 3 cups of the cooking liquid into a large high-sided saute pan and bring to a boil over high heat. Cook until the liquid is reduced to about 3/4 cup. Add the shredded meat and the remaining cooked pancetta to the pan along with 1 cup of the tomato sauce, parsley and basil and stir to combine and just heat through.
- For the Ricotta Mixture: Stir together the ricotta, eggs, parsley, basil, cheese and salt and pepper in a bowl. Cover and refrigerate for at least 1 hour to allow flavors to meld.
- For the Bechamel (Mornay) Sauce: Melt the butter in a medium saucepan over medium heat. Whisk in the flour and let cook for about 2 minutes. Slowly whisk in 2 cups of the hot milk and continue whisking until the sauce is thickened and loses its raw flavor, about 5 to 7 minutes. Season the sauce with nutmeg, salt and pepper and whisk in the cheeses. If the sauce is too thick, whisk in some of the remaining milk.
- For Assembly: Preheat the oven to 375 degrees F.
- Butter the bottom and sides of a 9 by 13-inch baking dish with the butter. Ladle a thin layer of bechamel evenly over the bottom of the pan. Place a layer of pasta dough, cut to fit the inside of the pan on top of the bechamel and top the pasta with the ricotta mixture and spread evenly. Spread a thin layer of bechamel over the ricotta, sprinkle with a few tablespoons of Parmesan and some basil leaves. Top with another layer of pasta and spread the Bolognese sauce evenly over the top. Ladle an even layer of bechamel over the Bolognese sauce, sprinkle with a few tablespoons of Parmesan and some basil leaves. Place the final layer of pasta dough over the meat mixture and ladle the bechamel over the top to completely cover the pasta and sprinkle with 3 tablespoons of Parmesan.
- Place the pan on a baking sheet and cover loosely with aluminum foil. Bake for 20 minutes. Reduce the heat to 350 degrees F, remove the foil and continue baking until the top is golden brown and the filling is bubbling, about 25 to 35 minutes longer. Remove from the oven and let rest 10 minutes before cutting. Cut into slices and top with some of the remaining tomato sauce, more grated cheese and chopped parsley and basil.
BOB'S AWESOME LASAGNA
This is a traditional baked lasagna that is a favorite in our family. Ground beef, cottage cheese, and mozzarella make it rich and filling.

- Bring a large pot of lightly salted water to a boil. Cook noodles in boiling water for 8 to 10 minutes, or until al dente; drain.
- In a large skillet over medium heat, saute ground beef, onions, salt and garlic salt until meat is brown. Drain excess fat, add spaghetti sauce to beef mixture, and bring to a boil. Reduce heat, and simmer for 15 to 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking pan.
- Line bottom of pan with three lasagna noodles. Spread 1/3 of sauce mixture over noodles. Layer 1/3 of the cottage cheese over the sauce. Sprinkle 1/3 of the mozzarella over the cottage cheese. Repeat this layering process until all ingredients are used up.
- Bake in the preheated oven for one hour. Let stand for 10 minutes before serving.

- In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
- Preheat oven to 375 degrees F (190 degrees C).
- To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
- Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

- Sauce:.
- In a large heavy bottomed pot, heat the olive oil, add the beef, pork, veal and sausage (without casing) and cook until browned.
- Add garlic and oregano and cook until fragrant.
- Stir in the tomato paste and cook until the meat is coated.
- Add tomatoes with their juices and the tomato puree, season with salt and pepper and bring to a boil.
- Simmer over moderate heat, stirring occasionally, until thickened about 1 1/2 hours.
- Ricotta:.
- In large bowl, combine the ricotta with the parsley, basil, 1 cup of the Parmesan, 1 pound of the shredded mozzarella and beaten eggs. Season with salt and pepper.
- Noodles:.
- The instructions suggested cooking the dry, curly-ridged lasagna noodles 3 minutes in abundant salted water, drained, rinsed -- I say use fresh, no-cook or even the curly edged pasta, and forget about the pre-cooking. I guarantee the sauce will cook the noodles after 45 minutes of cooking time. This also makes life much easier.
- Lasagna Time:.
- Preheat the oven to 375°F Spread 1.5 cup of the sauce in the bottom of a baking dish. Line the dish with overlapping noodles.
- Spread 1/3 of the ricotta mixture over the noodles, sprinkle with a little Parmesan and shredded mozzarella then top with 1 1/2 cups of the sauce and another layer of noodles.
- Repeat the layering 2 more times. Top with noodles and cover with 1 1/2 cups of sauce (may want to use extra if using uncooked noodles to ensure the noodles are covered and cook evenly. Sprinkle remaining mozzarella and Parmesan over the lasagna.
- Cover Lasagna with foil and bake for about 20 minutes.
- Uncover then cook for 30-45 minutes more or until the top is golden and crisp around the edges and the filling is bubbling.
- Let the lasagna rest for 20 minutes before serving.
