Categories     main-dish

Time 2h15m

Yield 16 meatballs

Number Of Ingredients 31

1 1/4 pounds ground bison
1 pound ground turkey
2 eggs, beaten
2 cups fresh kale, de-stemmed and minced
1 small red onion, finely minced
4 cloves garlic, minced
1 cup nutritional yeast
1/2 cup gluten-free oat flour
1 tablespoon dried oregano
1 teaspoon fennel seeds
1 level teaspoon red pepper flakes
1/2 tablespoon salt
Chimichurri Sauce, recipe follows
Mighty Mac, recipe follows
1/2 cup fresh parsley, de-stemmed
1/4 cup fresh cilantro, de-stemmed
1/4 cup jarred lemon juice
1/4 cup avocado oil
1 tablespoon dried oregano
1 tablespoon red pepper flakes
1 1/2 teaspoons salt
4 large cloves garlic, minced
3 cups frozen butternut squash, thawed
1 1/2 cups vegetable broth
1 1/2 cups whole milk
2 tablespoons olive oil
1/4 cup (4 tablespoons) salted butter
Three 8-ounce boxes chickpea noodles
4 cups shredded Cheddar
1 teaspoon salt
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 425 degrees F and line a cookie sheet with parchment paper.
  • Mix bison, turkey and eggs in a bowl and stir by hand until well combined. Mix kale, onion and garlic in another bowl until well combined, then stir by hand into the bison, turkey and egg mixture. Mix yeast, oat flour, oregano, fennel seeds, red pepper flakes and salt in a bowl, then add into the wet mixture, stirring by hand until evenly incorporated.
  • Roll into 1.5-ounce balls and space evenly on lined cookie sheet. Bake until internal temperature reaches 165 degrees F, 15 to 17 minutes. Serve with Chimichurri Sauce and Mighty Mac.
  • Combine parsley, cilantro, lemon juice, oil, oregano, pepper flakes, salt and garlic in a food processor and pulse until the cilantro and parsley are finely chopped, 3 to 4 minutes. Allow to sit for 30 minutes prior to serving to allow the flavors to meld. Use immediately or store in the refrigerator for up to 10 days.
  • Start roux in a large saucepan by combining squash, broth and milk and cook until squash is softened and beginning to fall apart, 10 to 15 minutes. Pour the mixture into a blender and blend until smooth. In a large pot, bring 6 quarts water and the olive oil to a boil. Meanwhile, return the roux mixture to the saucepan on low heat and add butter, stirring until the butter is melted, 5 to 7 minutes, then remove from heat. With the water at a boil, pour chickpea noodles in and cook, stirring frequently, for 11 minutes. Meanwhile, add the cheese to the roux, off heat, stirring frequently until cheese is fully melted and incorporated, about 5 minutes. Add the salt and nutmeg to the roux and stir well. Once the noodles have been cooked, strain well and return to the large pot, then pour in the cheesy roux and combine well.
  • Disclaimer: When blending hot liquid, first let it cool for five minutes or so, then transfer it to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth.

Categories     Meatball Appetizers

Time 1h20m

Yield 8

Number Of Ingredients 18

1 large egg
¼ cup panko bread crumbs
2 cloves garlic, minced
2 tablespoons minced fresh parsley
1 teaspoon smoked paprika
1 teaspoon kosher salt, or to taste
½ teaspoon ground black pepper, or to taste
1 pound ground bison
1 tablespoon olive oil
1 tablespoon olive oil
½ medium onion, minced
3 cloves garlic, minced
1 (14.5 ounce) can fire-roasted diced tomatoes, with juice
2 teaspoons minced fresh oregano
½ teaspoon fennel seeds
2 large bay leaves
½ teaspoon kosher salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Prepare meatballs: Lightly beat egg in a medium mixing bowl. Stir in panko, garlic, fresh parsley, smoked paprika, kosher salt, and ground black pepper until combined. Add bison and mix with your hands until ingredients are evenly distributed.
  • Form 24 meatballs, about 1 1/2 tablespoons each.
  • Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. When the oil is hot, brown 12 meatballs on all sides, about 5 minutes total. Remove to a plate and repeat with the remaining meatballs.
  • Prepare tomatoes: Wipe out the skillet with a paper towel. Add 1 tablespoon fresh olive oil and heat over medium heat. Add chopped onion; cook and stir until onion starts to become translucent, about 3 minutes. Add garlic and stir until fragrant, about 1 minute. Add tomatoes with juice, oregano, fennel seeds, and bay leaves. Add salt and pepper. Reduce heat and simmer for about 5 minutes.
  • Return the browned meatballs to the skillet. Cover and simmer until meatballs are no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Yield Makes 4 to 6 servings

Number Of Ingredients 27

Cilantro-Yogurt Sauce:
1 teaspoon fennel seeds
1 teaspoon cumin seeds
1/2 teaspoon coriander seeds
1 1/2 cups chopped fresh cilantro
1/2 cup whole-milk Greek-style yogurt*
3 green onions, chopped
2 tablespoons chopped fresh mint
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 teaspoon chopped fresh sage
1 teaspoon sugar
Meatballs:
3 tablespoons olive oil, divided
1 cup finely chopped onion
6 garlic cloves, minced
1/2 cup fresh breadcrumbs made from crustless French bread
1 tablespoon whole milk
2 tablespoons minced seeded jalapeño chile (about 1 large)
2 tablespoons whole-milk Greek-style yogurt
1 1/4 pounds ground bison (often labeled buffalo)
1 large egg, beaten to blend
1/4 cup chopped fresh cilantro
1 teaspoon chopped fresh sage
1 teaspoon coarse kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice

Steps:

  • For cilantro-yogurt sauce:
  • Toast all seeds in small skillet over medium heat until aromatic and slightly darker in color, stirring often, about 2 minutes. Cool. Finely grind seeds in spice mill or coffee grinder. Place cilantro and all remaining ingredients in blender. Add 1 teaspoon ground seeds and process until smooth sauce forms, scraping down sides frequently. Season to taste with salt and pepper. Cover sauce and chill. Reserve remaining ground seeds for meatballs. DO AHEAD: Can be made 1 day ahead. Keep refrigerated. Store remaining ground seeds in airtight container at room temperature.
  • For meatballs:
  • Heat 1 tablespoon oil in heavy small skillet over medium heat. Add onion and garlic and sauté until soft, stirring frequently, about 7 minutes (do not brown). Cool. Toss breadcrumbs with milk in small bowl to moisten. Place cooled onion mixture, breadcrumb mixture, reserved ground seeds from cilantro-yogurt sauce, jalapeño, and yogurt in processor. Using on/off turns, process until coarse puree forms. Transfer mixture to medium bowl. Add bison, egg, cilantro, sage, 1 teaspoon coarse salt, pepper, and allspice. Using hands or fork, mix until just blended. Using damp hands, form bison mixture into 1 1/4-inch balls. DO AHEAD: Can be made 6 hours ahead. Cover and chill.
  • Preheat oven to 300°F. Heat remaining 2 tablespoons oil in heavy large nonstick skillet over medium heat. Working in 2 batches, cook meatballs until browned on all sides, about 8 minutes per batch. Transfer meatballs to rimmed baking sheet. Place in oven to keep warm up to 15 minutes.
  • Serve meatballs with cilantro-yogurt sauce for dipping.
  • *A thick yogurt; sold at some supermarkets, specialty foods stores (such as Trader Joe's and Whole Foods), and Greek markets. If unavailable, place plain whole-milk yogurt in cheesecloth-lined strainer set over large bowl. Cover and chill 4 hours to drain.
