Much better than the standard pound cake, I got the recipe from a great-aunt, over 40 years ago.

1 ½ cups all-purpose flour
1 ½ cups white sugar
½ cup butter
½ cup sour cream
3 eggs
1 pinch baking soda

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 8x4 inch loaf pan.
  • In a large bowl, cream butter and sugar until light and fluffy. Add sour cream and eggs.
  • Add flour and pinch of soda, mix well. Pour into a 8x4 inch loaf pan.
  • Bake at 375 degrees F (190 degrees C) for 1 hour, or until a toothpick inserted into center of cake comes out clean.

1/2 cup butter, softened
0.5 (8 ounce) package cream cheese, softened
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 (8 ounce) container sour cream

Steps:

  • 1. Preheat oven to 350. Beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in sugar until light and fluffy. Add eggs, 1 a a time, beating until blended after each addition. Stir in vanilla.
  • 2. Combine flour and next 3 ingredients. Gradually add to butter mixture alternately with sour cream, beating until blended. Spoon batter by rounded tablespoons into lightly greased miniature muffin pans.
  • 3. Bake at 350 for 13 to 15 minutes or until a wooden pick inserted in centers racks 5 minutes. Remove from pans to wire racks, and cool completely (about 30 minutes). Spread cupcakes with desired buttercream, or dip in glaze.
  • NOTE: To prepare regula-sizedcupcakes, spoon batter into 2 lightly greased 12-cup muffin pans, filling two thirds full. Bake at 350 for 22 to 24 minutes or until a wooden pick comes out clean. Makes 2 dozen.

½ (8 ounce) package cream cheese, softened
2 cups white sugar
4 large eggs
1 teaspoon vanilla extract

1 (8 ounce) carton sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat butter and cream cheese together until creamy; add sugar and beat until fluffy. Add eggs one at a time, beating until each one is blended. Stir in vanilla extract.
  • Combine flour, baking powder, and baking soda in a separate bowl. Gradually add to the butter mixture, alternating with sour cream, beating until blended.
  • Spoon batter into the prepared muffin cups, filling each 2/3 full.

My mom once received a small book with cupcake recipes along with a 6-cup silicone muffin pan as a gift. She made these delicious cupcakes and then shared the recipe with me. There are a lot of sour cream or vanilla cupcakes posted here, but not one is even close to this recipe. It can be made in either a silicone or metal pan. It can also easily be doubled or tripled to make larger batches. For the easy fudge frosting shown, check out recipe #415723 by chef #971177.

Number Of Ingredients 8

1 cup cake flour
1 teaspoon baking powder
1 teaspoon salt
1/4 cup unsalted butter, at room temp
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
1/3 cup sour cream

Steps:

  • Preheat oven to 350°. Line either a 6-cup silicone or metal pan with paper liners.
  • In small bowl, whisk together the flour, baking powder and salt. Set aside.
  • With mixer on medium speed, cream together the butter and sugar until light.
  • Beat in the egg and vanilla until well blended.
  • Gradually beat in half of the dry ingredients, then half of the sour cream. Repeat with the remaining dry ingredients and sour cream.
  • Divide the batter evenly between the 6 prepared muffin cups.
  • Bake at 350° F for 20-25 minutes or until the tops spring back when lightly tapped.
  • Cool on wire rack for 10 minutes, then turn out cupcakes and cool completely on rack.

2 packages (8 ounces each) chopped dates
1 pound Brazil nuts, coarsely chopped
1 pound pecans, coarsely chopped
3/4 pound chopped candied pineapple
3/4 pound candied cherries, halved
1 cup raisins
GLAZE:
1 large egg, lightly beaten
1/2 cup evaporated milk
1/4 cup water
Additional candied cherries, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs. Combine flour and baking soda; add to the creamed mixture alternately with sour cream, beating well after each addition. Stir in the dates, nuts, pineapple, cherries and raisins. , Fill paper-lined miniature muffin cups three-fourths full. Bake at 300° for 40-50 minutes or until lightly browned and set. , For glaze, combine the egg, milk and water. Brush over fruitcakes. Bake 10 minutes longer. Decorate with candied cherries if desired. Cool on wire racks.

1/2 cup lemon-lime soda
1/2 cup lemon juice

6 cups confectioners' sugar
1 package (3 ounces) orange or lemon gelatin
5 to 6 tablespoons lemon juice

Steps:

  • Preheat oven to 350°. Line 24 muffin cups with paper liners. In a large bowl, combine cake mix, soda, lemon juice, eggs, canola oil, gelatin and if desired, lemon oil; beat on low speed 30 seconds. Beat on medium speed 2 minutes. Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 18-21 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely., For frosting, in a large bowl, combine butter, confectioners' sugar, gelatin, lemon juice and food coloring; beat until smooth. Frost cupcakes. If desired, in a small bowl, stir together sugar and citric acid; dip cupcakes into sugar mix. Store in the refrigerator.
