15 tablespoons unsalted butter, plus extra to grease the pan
7 ounces bittersweet chocolate, such as Lindt, broken
1 cup sugar
4 extra-large eggs, lightly beaten
1/2 teaspoon instant coffee granules, such as Nescafé
1/2 teaspoon kosher salt
1/4 cup all-purpose flour, plus extra for the pan
Sweetened whipped cream, vanilla ice cream, or crème fraîche, for serving

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour an 8-inch springform pan.
  • Place a large heatproof bowl over a pot of simmering water, making sure the water doesn't touch the bowl. Put the butter and chocolate in the bowl, stirring occasionally, until the chocolate melts. Take the bowl off the heat and set aside.
  • First, whisk the sugar into the chocolate mixture, then whisk in the eggs, coffee, and salt, whisking until the mixture is combined and smooth. Sprinkle on the flour and fold it in with a rubber spatula until it's incorporated.
  • Pour the batter into the prepared pan and place it on a sheet pan. Bake for 30 to 40 minutes (see Cook's Note), until the top puffs up and cracks and the cake doesn't wobble when you jiggle the pan. (A toothpick will not come out clean.) Remove from the oven and cool completely on a baking rack. The cake will deflate as it cools. Run a small knife around the cake and remove the sides of the pan. Cut the cake in wedges and serve warm or at room temperature with sweetened whipped cream, vanilla ice cream, or crème fraîche.

1 1/3 cups sugar, divided
3/4 cup freshly brewed coffee
7 ounces bittersweet chocolate (62 percent) finely chopped
2/3 cup Dutch-processed cocoa powder
1/4 teaspoon salt
1 tablespoon brandy
3 large eggs, separated plus 3 egg whites
1/3 cup cake flour
1/4 teaspoon cream of tartar
Chocolate Glaze, recipe follows
6 ounces bittersweet chocolate, finely chopped
1/2 cup heavy cream
2 tablespoons honey

Steps:

  • Preheat oven to 350 degrees F and position rack in the center.
  • Pour 1/2 -inch water into a large roasting pan and place in oven. Butter the bottom and sides of a 9-inch springform pan. Line the bottom of the pan with a round of parchment paper, cut to fit. Butter the paper. Wrap the outside of the pan tightly with a large piece of heavy-duty aluminum foil.
  • Put 1 cup of sugar and the coffee in a medium saucepan over a high heat. Bring to boil, stirring occasionally to dissolve sugar. Remove from the heat add the chocolate and return to low heat. Keep stirring over heat until the chocolate is completely melted and the mixture is smooth. Remove from the heat and whisk in the cocoa powder and salt until smooth. Add brandy. Whisk in the egg yolks until no trace of yolk is left. Transfer the mixture to a large bowl and set aside to cool for 10 minutes. Whisk the flour into the chocolate mixture.
  • In the bowl of an electric mixer, beat the 6 egg whites with the cream of tartar on medium speed until soft peaks form. Gradually add the remaining 1/3 cup sugar and beat on high until peaks are almost stiff.
  • Stir about 1/4 of the egg whites into chocolate mixture (no need to fold at this point). Then gently fold in the remaining whites, 1/3 at a time, until no streaks of white remain. Pour into pan and smooth top. Bake in water bath for 35 minutes, until a toothpick inserted into center of cake comes out with a few moist crumbs clinging to it. Place cake on wire rack and let cool to room temperature. Remove sides of pan and carefully invert cake onto cardboard cake round or flat plate. Chill for at least 2 hours before glazing.
  • Remove the cake from the refrigerator and place it on a wire rack set over a baking sheet. Pour the chocolate glaze over the cake, covering it completely; spread evenly with a metal spatula. Serve the cake immediately or refrigerate. Bring the cake to room temperature before serving.
  • Put chocolate in a medium bowl. In a small saucepan, bring the heavy cream to a gentle boil. Whisk in the honey. Pour the hot cream mixture over the chocolate and let the mixture stand for 30 seconds to melt the chocolate. Whisk the mixture until smooth. Cover the surface of the glaze with plastic wrap and set aside at room temperature for 30 minutes, or until slightly thickened.

4 large eggs, separated

3 1/2 tablespoons all purpose flour
Powdered sugar

Steps:

  • Preheat oven to 325°F. Line bottom of 9-inch-diameter cake pan with 2-inch-high sides with waxed paper. Butter sides of pan and paper. Dust pan with flour. Melt chocolate and butter in top of double boiler over simmering water, stirring until smooth. Cool slightly.
  • Whisk yolks and sugar in large bowl until pale yellow. Mix in flour, then chocolate mixture. Using electric mixer, beat whites in another bowl until stiff but not dry. Fold into chocolate mixture. Pour batter into prepared pan. Bake until toothpick inserted into center comes out with only a few moist crumbs attached, about 25 minutes. Cool completely in pan on rack. Run small sharp knife around sides of pan to loosen cake. Turn cake out onto platter and cool. (Can be prepared 8 hours ahead. Cover with cake dome and let stand at room temperature.) Sift powered sugar over cake and serve.

This is a very romantic cake. Great for Valentine's or anniversary. Or for any wine and chocolate lover. I make it as a bundt cake and actually only use half of the glaze as I don't like too much getting in my way when it comes to chocolate cake. (I eat the rest of the glaze on the left over strawberries) Also, I have used skim milk(!)instead of cream in the glaze and it turned out fine. Great cupcakes too.

1/2 cup mayonnaise or 1/2 cup sour cream

Steps:

  • Preheat oven to 350.
  • Grease and lightly flour cake pan(s).
  • Mix eggs and mayo with electric mixer until smooth.
  • Add wine and beat until combined.
  • Add cake mix, salt and vanilla and beat for 3 minutes.
  • Pour into pan(s) and bake according to box directions, but check 5-10 minute early as this cake tends to bake "fast".
  • When cake is almost cool make glaze as follows:.
  • Melt chocolate chips in microwave or double boiler being careful not to burn. If microwaving, start with about 45 sec., stir and continue in 10 sec. increments., stirring after each.
  • Whisk in butter, cream, salt and vanilla one at a time.
  • Cool slightly, then drizzle over cake.
  • Arrange strawberries whole or sliced, whatever looks pretty to you, over and around the cake and drizzle a bit more chocolate over them if you like. The glaze and berries are a good combination on their own! Dust with powdered sugar if desired.

1/4 cup sugar, to line pan
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder (not alkalized)
1 teaspoon dried ancho chile powder
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, cool room temperature (1 1/2 cubes)
1 cup superfine sugar
2 teaspoons vanilla extract
2 extra large eggs, beaten lightly, cool room temperature
1/2 cup dry red wine, such as cabernet sauvignon or 1/2 cup merlot
4 ounces bittersweet chocolate, pistoles (65%-72% cacao)
1/2 cup unsalted butter, cut into 4 pieces, cool room temperature

Steps:

  • Set an oven rack in the middle of the oven with plenty of room above it and preheat the oven to 325°F.
  • Brush a six-cup capacity bundt pan (or two 2½- to 3-cup capacity bundt pans) with melted butter. Pour ¼ cup sugar into the pan and tip the pan in all directions to coat evenly. Turn the pan upside down to remove any excess sugar that does not cling. (If you are using two smaller bundt pans, divide the butter and sugar between them.).
  • Over a large mixing bowl, sift together the flour, cocoa, cinnamon, cloves, baking powder, baking soda, and salt.
  • Using a mixer fitted with the paddle, cream the butter until smooth, and then add the sugar and continue creaming until light and fluffy. Scrape the sides of the bowl a few times with a flexible spatula.
  • While beating at medium speed, add the vanilla and mix to incorporate.
  • Add eggs, a bit at a time, beating until the mixture is light and fluffy.
  • Beating at low speed, add a third of the flour mixture and a third of the red wine. Repeat twice more with the remaining dry ingredients and wine, scraping the bowl with a flexible spatula between additions.
  • Pour the batter into the prepared pan. Bake for 30-35 minutes, until the top feels springy and a metal skewer inserted in the middle comes out clean. The internal temperature of the cake at its thickest center should read 190º-195ºF. The temperature will continue to rise a few degrees after removing the cake from the oven, so don't overbake. (If using two smaller bundt pans, bake for 20-25 minutes.).
  • Cool the cake on the pan on a wire rack for 15 minutes or so. Turn out onto a wire rack to finish cooling.
  • To finish, dust with powdered sugar or continue with Glaze.
  • Makes one cake; about sixteen 1/2-inch slices.
  • For the Glaze:.
  • Put the chopped chocolate in a 4-cup glass measuring cup and microwave for 1 minute.
  • Remove from the microwave and stir with a wooden chopstick or other wooden utensil to melt the chocolate. If it won't melt completely, return it to the microwave for 10-second intervals, just until it is smooth when stirred. If you overheat the chocolate, it will seize and turn grainy. If this happens, you must begin again with a new batch of chocolate.
  • When the chocolate is completely melted and smooth, add all of the room temperature butter and stir with a plastic spatula until it is completely absorbed and the glaze is smooth. If it won't blend completely, return to the microwave for a few seconds and try again. When finished, the glaze will be glossy, smooth and slightly thickened. A temperature probe will register 80º-85ºF. The glaze should be thin enough to pour over the cake in a smooth finish. (In the picture at the top of this post, you can see that the glaze was a bit too thick. I had difficulty getting an even coating. Next time, I will not let it thicken quite so much).
