1 (15-ounce) can black beans, rinsed and drained
1 mango, finely diced
1/2 cup finely diced red onion
2 roasted red tomatoes, recipe follows
1 tablespoon grated fresh gingerroot
1 cup freshly chopped cilantro leaves
1 tablespoon lime zest
1 tablespoon orange zest
4 tablespoons lime juice
1 orange, juiced
2 tablespoons olive oil
Salt and freshly ground black pepper
2 large red tomatoes, quartered
1 tablespoon olive oil
Coarse sea salt and fresh black pepper

Steps:

  • Put the beans into a large bowl and add the diced mango, red onion, roasted tomatoes, grated ginger root, cilantro, lime zest, orange zest and juices and drizzle with the oil. Season with salt and pepper, to taste. Lightly toss, cover and refrigerate until ready to serve.;
  • Preheat broiler on low. Quarter the tomatoes and place them on a baking sheet. Drizzle with olive oil, sprinkle with sea salt and fresh black pepper, to taste. Place in oven and broil for about 5 to 7 minutes until slightly golden brown and softened. Cool.;

3 tablespoons olive oil, plus more for baking sheet
2 ears fresh corn, kernels shaved from the cob
1 orange bell pepper
1 fifteen-and-a-half-ounce can black beans, rinsed and drained
1 mango peeled, pitted, and cut into 1/4-inch dice
1 hot red pepper, seeds and ribs removed, finely diced
1/2 red onion, finely diced
Juice of 2 limes (about 5 tablespoons)
1 teaspoon coarse salt

Steps:

  • Preheat oven to 450 degrees. Brush baking sheet with oil. Spread corn on prepared baking sheet in an even layer; roast until kernels begin to brown, about 10 minutes. Set aside to cool.
  • Place bell pepper on gas burner; roast until charred on all sides. Transfer to bowl; cover with plastic wrap. When cool, peel off charred skin with your fingers, and remove stem and seeds. Chop into 1/4-inch dice; place in large bowl.
  • Add corn, beans, the diced mango, hot red pepper, onion, lime juice, remaining oil, and the salt; toss to combine. Let rest at room temperature for 1 hour before serving.

3 cups dry black beans, picked over and rinsed
1 large onion, chopped
6 small cloves garlic, chopped, plus 2 large cloves garlic, minced
2 jalapenos, minced
6 tablespoons fresh lime juice
1 cup minced red onion
6 cups chopped mango (about 5 mangoes)
2 cups finely chopped fresh pineapple
1/2 teaspoon hot red-pepper flakes
1 1/2 teaspoons salt
1/2 cup chopped cilantro

Steps:

  • Soak beans overnight in cold water.
  • Drain and rinse the beans and place in a saucepan with the onion and chopped garlic. Cover with 6 cups of cold water and simmer over medium heat until tender but firm, 30 to 40 minutes. Drain. Rinse in cold water until chilled. (You should have about 8 cups.)

4 ounces whole red onion or 3 ounces chopped ready-cut onion (1 cup)
1 teaspoon olive oil
1 jalapeno
2 ripe mangoes
1 15-ounce can no-salt-added black beans
1 teaspoon dried coriander
1 teaspoon ground cumin
1 tablespoon white wine vinegar
2 nonfat whole-wheat flour tortillas
1 small bunch cilantro to yield 1/4 cup chopped

Steps:

  • Turn toaster oven to 350 degrees.
  • Chop whole onion.
  • Heat nonstick pan until very hot. Reduce heat to medium-high and add oil. Saute onion until it begins to soften.
  • Mince about half of the jalapeno; reserve the rest for the salmon recipe. Cut mangoes into bite-size pieces.
  • Rinse beans, and drain. Stir beans, jalapeno and mangoes into onion, and reduce heat to low.
  • Stir in coriander, cumin and vinegar.
  • Wrap tortillas in aluminum foil, and place in toaster oven. Heat about 3 minutes.
  • Wash, dry and chop cilantro. When bean mixture is heated through, remove from heat and stir in cilantro.
  • Serve with salmon and tortillas, or roll up some of the bean mixture in a tortilla.

  • I usually start by cutting off the side cheeks of the mangos, leaving a middle sliver that holds the pit. Score each cheek with a knife but be sure not to pierce the skin, similar to scoring an avocado half. Press the cheek down on the cutting board and slice off the squared bits of mango. Alternatively you can scoop them out with a spoon.
  • For the middle sliver of the mango you can run a paring knife along the inside edge of the skin to quickly remove it. Then start on the outside and slice off any juicy chunks of mango. As you get closer to the pit it'll get harder to cut. Once that happens you've probably retrieved most of the usable mango and can discard the pit.
  • Finely chop 1/4 onion, 1-2 rinsed and de-stemmed jalapenos, and 6-8 sprigs of rinsed cilantro. I typically twist off and discard the bottom, thicker portion of the cilantro stems, but use the upper stems that hold the leaves together. For a milder batch you can start with a single jalapeno and go from there. I used 2 jalapenos and it had some kick.
  • Add the chopped mango, onion, jalapeno and cilantro to a mixing bowl along with the juice of 2 limes and a pinch of salt. Combine well and take a taste, adding more jalapeno or lime juice if you want.
