Each time I take this dish to a church supper, I get many, many requests to share the recipe. My family has enjoyed this tasty salad for years, and it works very well alongside ham, brisket or chicken. It is inexpensive to make, and the red onion rings add a nice touch of color to a meal. The real beauty of this salad is that it can be made well ahead of time.

2 cans (15 ounces each) black-eyed peas, rinsed and drained
1/2 cup red onion rings
1/2 cup chopped green pepper
1 small garlic cloves, minced
1 teaspoon sugar
1/4 cup vinegar
1/4 cup vegetable oil
1/2 teaspoon salt, optional
Dash pepper
Dash hot pepper sauce

Steps:

  • In a medium salad bowl, combine peas, onion, green pepper and garlic. Stir together all remaining ingredients and pour over vegetable mixture. Chill, covered for at least 12 hours.

2 (15.5 ounce) cans black-eyed peas
1 large tomato, chopped
1 medium red bell pepper, chopped
1 medium green bell pepper, chopped
½ red onion, diced
1 stalk celery, chopped
1 tablespoon chopped fresh parsley
3 tablespoons balsamic vinegar
2 tablespoons olive oil
salt and pepper to taste

Steps:

  • In a medium bowl, toss together black-eyed peas, tomato, red bell pepper, green bell pepper, red onion, celery, and parsley.
  • In a small bowl, mix balsamic vinegar and olive oil. Season with salt and pepper. Toss into the vegetables. Cover, and chill in the refrigerator 8 hours, or overnight.

FOR THE PEAS
1 (1-pound) package black eyed peas, rinsed and picked over
2 tablespoons vegetable oil
1 pound pickled pork or salt meat, cubed to ½ inch
1 large yellow onion, chopped
1 large green bell pepper
3 stalks celery, chopped
4 cloves garlic, chopped
10 cups chicken broth
2 bay leaves
Salt and pepper, to taste
Hot sauce, to taste
Hot cooked rice, for serving
1 bunch green onions, sliced, for serving
FOR THE CABBAGE
1 head of fresh green cabbage, cored and roughly chopped
1 large yellow onion, diced
1 pound diced smoked ham
2 tablespoons olive oil
Salt and pepper, to taste to taste

Steps:

  • FOR THE PEAS Heat oil in a large, heavy pot or Dutch oven over medium-high heat. Add pickled pork or salt meat; sauté 5 minutes or until browned. Add onions, bell pepper, celery and garlic; sauté 15 minutes. Add broth and bay leaves; bring to a boil. Add black eyed peas, stir well and return to a low boil; cover, reduce heat and simmer 1½ to 2 hours or until peas are tender, stirring occasionally. Adjust seasonings to taste. Serve over hot cooked rice. Garnish with chopped green onions. FOR THE CABBAGE Saute diced ham in olive oil on medium heat until lightly browned. Add diced onion and saute until tender, about 5-7 minutes Add chopped cabbage and 2 tablespoons water and cover with lid. Cook on medium for 15 minutes. Stir and season with salt and pepper. Cover again and lower heat and simmer (10-20 minutes) until tender as desired.

  • In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.

1 1/2 teaspoons Essence, recipe follows
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Combine the black-eyed peas, crumbled bacon, 3 tablespoons of the reserved bacon fat, and all remaining ingredients in a large bowl, and toss well to combine. Cover and refrigerate for at least 4 hours, or preferably overnight, stirring occasionally.
  • Allow salad to come to room temperature for 30 minutes before serving. Toss well just before serving.

1/4 cup white-wine vinegar

a 2 1/2- to 3-pound cabbage, grated coarse in a food processor (about 10 cups)
6 carrots, grated coarse in a food processor (about 4 cups)
1/2 cup minced scallion
2 large garlic cloves, minced

Steps:

  • Soak peas in enough water to cover by 2 inches overnight. Drain peas and rinse. In a large saucepan simmer peas, bay leaf, and parsley sprigs in enough water to cover by 2 inches until tender, about 25 minutes. Peas may be cooked 2 days in advance and kept covered and chilled.
  • Drain peas and discard bay leaf and parsley sprigs. In a large bowl whisk together vinegar, mustard, horseradish, and salt and pepper to taste and add oil in a stream, whisking until dressing is emulsified. Add peas, cabbage, carrots, scallion, garlic, minced parsley, and salt and pepper to taste and toss well. Slaw may be made 1 day in advance and kept covered and chilled.

1 large red onion, finely diced

6 cups chicken stock, approximately
1/2 cup olive oil
1/4 cup vegetable oil
1/4 cup raspberry vinegar
2 cloves garlic, minced
1 1/2 tablespoons Dijon mustard
1 tablespoon honey
1/4 teaspoon nutmeg
Cayenne pepper to taste
Salt and freshly ground pepper to taste
1 medium red onion, minced
3 bunches arugula, washed and dried
1 1/4 pounds red cabbage, finely sliced

Steps:

  • Pick over the peas to remove any stones or dirt. Wash thoroughly and drain. Soak overnight. Drain again.
  • Place the peas in a large pot and add the chicken stock to cover them. Bring to a boil, lower the heat and simmer, covered, for 30 minutes or until done. Drain. Set aside to cool.
  • In a small bowl, combine the remaining ingredients, except the red onion, arugula and cabbage. Whisk to blend.
  • Place the peas, onion, arugula and cabbage in a large serving bowl. Pour the dressing over them and toss well.

1 package (10 ounces) frozen peas, thawed
4 green onions, sliced
2 celery ribs, chopped
1 medium sweet yellow pepper, diced
2 medium carrots, coarsely chopped
1/3 cup chopped fresh mint
1/2 cup olive oil
1/3 cup white wine vinegar
2 garlic cloves, minced
1 teaspoon salt

1 cup halved cherry tomatoes
1/4 pound sliced bacon, cooked and crumbled

  • Cook the black-eyed peas according to package directions; drain and place in a large bowl. This salad is inspired by a Greek recipe that calls for lots of herb fennel. I couldn't find herb fennel, so I added a thinly sliced fennel bulb to the mix. Along with its refreshing flavor, the fennel bulb contributes a delightful contrasting crunchy texture. It's a great salad with or without the tomatoes.

1 cup black-eyed peas, rinsed and picked over
3 large garlic cloves, 2 of them crushed and left in the skin, 1 of them minced
1/2 onion, intact
1 bay leaf
Salt to taste
2 medium tomatoes, in season only, diced
1 medium fennel bulb (about 1/2 pound), trimmed, quartered, cored and sliced very thin across the grain
1 tablespoon fresh lemon juice
2 tablespoons red wine vinegar or cider vinegar
3 tablespoons extra virgin olive oil
1 teaspoon cumin seeds, lightly toasted and ground
Freshly ground black pepper to taste
1/3 cup chopped flat-leaf parsley
1/3 cup chopped fresh dill
1/3 cup chopped chives
2 ounces feta, crumbled

Steps:

  • Place the black-eyed peas, whole crushed garlic cloves, halved onion and bay leaf in a large, heavy saucepan and add enough water to cover by 2 inches. Bring to a boil, add salt to taste, reduce the heat, cover and simmer until tender but intact, about 45 minutes. Remove from the heat, remove the lid and allow the black-eyed peas to cool for 30 minutes. Remove and discard the onion. Remove the garlic cloves, squeeze the cooked garlic out of the skins and back into the black-eyed peas, and drain through a strainer set over a bowl.
  • Transfer the black-eyed peas to a large bowl. Whisk together the lemon juice, vinegar, minced garlic, cumin, salt, pepper and olive oil. Toss with the beans. Add the remaining ingredients except the feta and toss together. If you want a bit more liquid with the beans, add back some of the broth (I found the dressing to be sufficient). Marinate in the refrigerator for at least 30 minutes before serving. Sprinkle the feta over the top and serve.
