Blackberry Balsamic Vinaigrette Dressing image

A delicious and healthy salad dressing made with fresh summer blackberries. This vinaigrette flavors a side salad or pairs perfectly with an entree salad with chicken.

2 tablespoons water
1/2 cup blackberries
1 tablespoon honey
3 tablespoons balsamic vinegar
2 tablespoons olive oil
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Steps:

  • Add blackberries to a small sauce pan with water. Simmer over medium heat.
  • Bring to a boil and mash blackberries with the back of a fork to help break the berries down.
  • After berries have reduced to mostly liquid remove from heat. Strain through a fine mesh sieve reserving just the blackberry juice. This will remove seeds.
  • Add remaining ingredients along with the blackberry juice to a mason jar.
  • Screw lid from mason jar tightly and shake vigorously for about 15 seconds. Drizzle over your favorite salad, cheese or chicken.

1¼ cup fresh blackberries
½ cup balsamic vinegar
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
2½ teaspoons granulated sugar
1 teaspoon salt
¾ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
1 cup extra virgin olive oil

Steps:

  • Add the everything except the oil to a small saucepan and place it over low heat. Stirring a bit, cook just to dissolve the sugar and warm the mixture, about 3 minutes.
  • Remove the pan from the heat and use the back of a fork to macerate the blackberries. (I like keeping them partially intact.)
  • Gradually whisk in the oil and blend until it's completely emulsified.

4 cups white balsamic vinegar
6 sprigs rosemary
1/4 cup lemon thyme
1/4 cup basil leaves

Steps:

  • place blackberries and herbs into a gallong glass jug (I use a sterilized pickle jar). Heat white balsamic vinegar in a non-reactive pot until steaming but not boiling. Pour over berries and herbs. Allow to cool then cover opening with plastic wrap then jar lid. Shake gently and store in a dark place. Allow it to steep for a week shaking gently each day. Strain through a fine sieve and store in sterile bottles.
