Delicious Blackberry Muffins image

These moist muffins are a great way to turn fresh blackberries into a yummy breakfast treat. Also great with oatmeal crumb topping. In a pinch, these can be made with frozen berries that have been thawed and drained.

2 cups all-purpose flour
⅔ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup sour cream
½ cup butter, melted
2 eggs
1 teaspoon milk
1 teaspoon vanilla extract
11 ounces fresh blackberries

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a muffin tin with paper liners.
  • Mix flour, sugar, baking powder, and salt together in a large bowl.
  • Whisk sour cream, butter, eggs, milk, and vanilla extract together in another bowl. Stir into the flour mixture until blended. Fold blackberries into the batter.
  • Spoon batter into the muffin tin, filling each liner 2/3 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 20 minutes.

1 tablespoon milk, or more as needed
1 tablespoon brown sugar, or more to taste
½ teaspoon vanilla extract
½ cup fresh blueberries

Steps:

  • Mix flour, oats, baking soda, cinnamon, cloves, nutmeg, baking powder, and salt together in a microwave-safe mug. Stir egg white, milk, brown sugar, and vanilla extract into flour mixture until batter is fully combined; slowly stir in blueberries.
  • Cook in microwave for 1 minute. Check muffin for doneness and continue cooking in 15 second increments until cooked through, about 1 minute more.

Hard to believe, but you can microwave these muffins in just 2 minutes. I know, I know, I didn't believe it either, and I've been baking semi-professionally for 15 years. Great solutions for midsummer baking, and children can bake their own! The batter recipe is from the Enchanted Broccoli Forest by Mollie Katzen. I usually substitute whole wheat flour and a little flax seed meal for a portion of the white flour. The yield was supposedly 12, but I've never gotten more than 8 or 10 muffins from it.

1 1/2 cups unbleached white flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup honey
4 tablespoons butter
1/3 cup milk or 1/3 cup buttermilk
1 large egg
2 tablespoons lemon juice
1 cup fresh blueberries or 1 cup frozen blueberries

Steps:

  • Combine the flour, baking soda, baking powder and salt in a bowl. Melt the honey and butter together. Stir in the milk, egg and lemon juice. Combine the wet ingredient and the dry ingredients and mix a little. Add the blueberries and mix gently until no white streaks of flour remain.
  • Coat a plastic muffin tin or 6 1-cup Pyrex custard cups with nonstick cooking spray. Fill cups half full of batter. Microwave five or six at a time for about 2 1/2 minutes for an 1100-watt microwave. (Start checking at about 2 minutes.) When they look set, they're done. Let stand 3 to 5 minutes to firm up. Turn out of tins/cups.

Number Of Ingredients 8

1/2 cup butter, softened
1-1/4 cups plus 1 tablespoon sugar, divided
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 cups fresh or frozen blackberries

Steps:

  • In a large bowl, cream butter and 1-1/4 cups sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; gradually stir into creamed mixture alternately with milk. beating well after each addition. Fold in blackberries., Fill greased or paper-lined muffins cups two-thirds full. Sprinkle with remaining sugar. Bake at 375° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Make a batch of blackberry muffins for a mid-morning treat. Use fresh or frozen blackberries, or go foraging to find some in the summer months

100g unsalted butter, softened
65g caster sugar
65g light brown sugar
2 large eggs, room temperature
125g Greek yogurt
1 tsp vanilla paste
5 tbsp milk
250g self-raising flour
1 tsp baking powder
200g blackberries (fresh or frozen), halved if large

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases.
  • Beat the butter and sugars together for 5 mins until pale and fluffy. Add the eggs gradually and beat in until combined. Mix in the yogurt, vanilla and milk.
  • Fold in the flour, baking powder and a pinch of fine salt until you have a smooth batter. Finally, fold in 150g of the blackberries and fill the muffin cases ¾ full. Poke 2 blackberries (or 4 halves) into the top of each muffin, so that they are sticking out slightly. Bake for 8 mins, then reduce the oven to 180C/160C fan/gas 4 and bake for 20-25 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.

These are super yummy but be prepared for a slightly rubbery/moister texture than muffins baked in an oven- I made these during a summer heatwave when I had to have muffins!

1 cup blackberry
1 cup white flour
1/4 cup whole wheat flour
1 cup skim milk
1/2 cup sugar substitute
1 banana, mashed
3 teaspoons baking powder
1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Mix dry in a bowl with blackberries, careful not to break fruit.
  • Mix wet in another bowl.
  • Add wet into dry by folding in gently to not disturb blackberries.
  • Pour into individual small cups (ramekins) about half full.
  • Microwave on top of inverted plate, 4 at a time for approximately 3 1/2 minutes
  • Let set for 5 minutes or so.
  • Invert muffins back into ramekins and microwave on high for 1 minute to finish off the bottoms.
