A delicious onion sliced to bloom, then coated and deep-fried. The recipe for the dipping sauce is also included.

½ cup mayonnaise
¾ tablespoon ketchup
2 tablespoons cream-style horseradish sauce
¼ teaspoon paprika
¼ teaspoon salt
1 pinch ground black pepper
1 pinch cayenne pepper
1 egg
1 cup milk
1 cup all-purpose flour
1 ½ teaspoons salt
1 ½ teaspoons cayenne pepper
½ teaspoon ground black pepper
½ teaspoon garlic powder
¼ teaspoon dried thyme
¼ teaspoon dried oregano
⅛ teaspoon ground cumin
1 large onion
2 quarts vegetable oil for deep-frying

Steps:

  • Make the dipping sauce: Combine mayonnaise, ketchup, horseradish, paprika, 1/4 teaspoon salt, 1 dash black pepper, and 1 dash cayenne pepper in a small bowl and refrigerate it until needed.
  • Beat egg and combine it with milk in a bowl large enough to hold the onion. In another bowl, combine flour, salt, cayenne pepper, black pepper, garlic powder, thyme, oregano, and cumin.
  • Prepare the onion: cut approximately 3/4 to 1 inch off of the top and bottom of the onion, remove skin. Remove the 1-inch diameter core from the middle of the onion. Using a large, sharp knife, slice down the center of the onion about 3/4 of the way down, turn 90 degrees and slice again. Keep slicing the sections in half, being careful not to cut to the bottom, until you have 16 sections. Spread the petals apart to make coating easier.
  • Dip the onion in the milk, then coat well with the flour mixture. Separate the petals again and sprinkle the flour mixture between them. Once you have coated all of the petals well, dip it into the milk and into the flour mixture again. Place in the refrigerator for at least 15 minutes while you preheat the oil.
  • Pour enough oil to cover the onion into a deep fryer or deep pot. Preheat the oil to 350 degrees F (175 degrees C).
  • Fry the onion right side up in the oil for 10 minutes or until golden brown. Remove from oil and let drain in a rack or paper towels. Open the center of the onion wide so that you can put the small bowl of dipping sauce in the center.

1/3 cup cornstarch
1 1/2 cups flour
2 teaspoons garlic, minced
2 teaspoons paprika

4 vidalia onions (I use walla wallas here in Calgary)
2 cups flour
4 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon pepper
1/4 teaspoon cayenne
1 pint mayonnaise
1 pint sour cream
1/2 cup tomato chili sauce
1/2 teaspoon cayenne
1/2 cup mayonnaise
2 teaspoons ketchup
2 teaspoons creamed horseradish
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon dried oregano
1 dash black pepper
1 dash cayenne

Steps:

  • ---------Alrighty-forthe seasoned flour-----------.
  • combine flour, paprika, garlic powder, pepper and cayenne-mix well.
  • --------Creamychili sauce--------.
  • combine mayo, sour cream, chili sauce and cayenne-mix well.
  • --------Dippingsauce----------.
  • Blend everything together well and let sit for 2 hours-refidgerated- or overnight.
  • --------Andfor the batter---------.
  • Mix cornstarch, flour and seasonings until well blended.
  • Add beer and mix well.
  • Cut about 3/4 inch off top of onion and peel.
  • Cut into onion 12-16 vertical wedges but do not cut through bottom root end.
  • Remove about 1 inch of petals from center of onion (You can place the cut onions in cold water for a few hours to help "open" them up -- just make sure that you drain them well).
  • Dip in seasoned flour and gently shake to remove excess.
  • Seperate peatls to coat thoroughly with batter.
  • Gently place in a fryer basket and deep fry at 375-400 for 1 1/2 minutes.
  • Turn over and fry 1 1/2 minutes more or until golden brown.
  • Drain on paper towels.
  • Place onion upright in a shallow bowl and remove center core with a circular cutter or apple corer.
  • Serve hot with chili sauce and dipping sauce.

2 tablespoons cream-style horseradish sauce
⅓ teaspoon paprika

1 pinch ground black pepper
⅓ teaspoon cayenne pepper
1 egg
1 cup milk
1 cup all-purpose flour
1 ½ teaspoons salt
1 ½ teaspoons cayenne pepper

⅛ teaspoon ground cumin
1 large sweet onion
¾ cup vegetable oil for frying

Steps:

  • To make sauce: In a medium bowl, combine mayonnaise, ketchup, horseradish, 1/3 teaspoon paprika, 1/4 teaspoon salt, 1/8 teaspoon oregano, a dash ground black pepper and cayenne pepper; mix well. Keep sauce covered in refrigerator until needed.
  • To make the batter: In a medium bowl, beat egg and add milk. In a separate bowl, combine flour, salt, cayenne pepper, paprika, ground black pepper, oregano, thyme and cumin; mix.
  • To slice onion: slice 1 inch off of the top and bottom of the onion and remove the papery skin. Use a thin knife to cut a 1 inch diameter core out of the middle of the onion. Now use a very sharp, large knife to slice the onion several times down the center to create 'petals': First slice through the center of the onion to about three-fourths of the way down. Turn the onion 90 degrees and slice it again in an X across the first slice. Keep slicing the sections in half, very carefully until the onion has been cut 16 times. Do not cut down to the bottom of the onion. (The last 8 slices will be difficult, be careful).
  • Spread the 'petals' of the onion apart. To help keep them separate you could plunge the onion into boiling water for 1 minute and then into cold water.
  • Dip the onion into the milk mixture and then coat it liberally with the flour mixture. Again separate the petals and sprinkle the dry coating between them. Once you're sure the onion is well-coated, dip it back into the wet mixture and into the dry coating again. This double-dipping ensures you have a well-coated onion because some of the coating will wash off when you fry the onion.
  • Heat oil in a deep fryer or deep pot to 350 degrees F (175 degrees C). Make sure you use enough oil to completely cover the onion when it fries.
  • Fry the onion right side up in the oil for 10 minutes or until it turns brown. When the onion has browned, remove it from the oil and let it drain on a rack or paper towels. Open the onion wider from the center so that you can put a small dish of the dipping sauce in the center.

1 onion (large, white or sweet)
2 eggs
1 tbsp water
¼ cup almond flour
1 tsp garlic salt
1 tsp paprika
½ tsp pepper
¾ cup plain Greek yogurt
1 tbsp hot sauce
1 tsp chili powder (or cayenne pepper to make it spicy)
½ tsp garlic salt

Steps:

  • Preheat your oven to 400º F
  • Cut off the top of your onion (not the root), remove the outer layer of the onion and discard.
  • Place the recently cut, flat part of the onion on the cutting board, root side up.
  • Starting about ½ inch from the root, cut the onion straight down. Go all the way around the onion with evenly spaced cuts.
  • Turn the onion back over and allow the onion petals to fan out, then remove the center of the onion.
  • Place the onion on a cookie sheet.
  • In a small bowl, whisk together eggs and water.
  • In a second bowl, mix together the almond flour, garlic salt, paprika, and pepper.
  • Lightly sprinkle the onion with the flour mixture. Then spoon some of the egg mixture and, using a silicone basting brush, coat the onion with the egg mixture. (You may not need to use all of the egg mixture)

1 large sweet onion
2 ½ cups flour
1 tablespoon paprika
1 teaspoon cayenne pepper

1/2 teaspoon white pepper
2 large eggs
1 cup milk
Salt and pepper to taste

Steps:

  • Start by cutting off 1/2 inch from the top of the onion, then peel the outer skin from the onion.
  • Place the onion cut-side down. Starting about 1/2 inch from the root, make a downward cut all the way through to the board.
  • Repeat to make four evenly spaced cuts around the onion. Make 3 additional cuts between each section until you have 16 evenly spaced cuts.
  • Place the onion in a bowl of ice water, cut side down, for 2 hours.
  • In a mixing bowl, whisk flour, paprika, cayenne, cumin, thyme, oregano, Kosher salt and white pepper.
  • In a separate medium deep bowl, whisk together eggs, milk, and 1 cup water.
  • Place the onion in a clean bowl, cut-side up, spoon flour mixture over the onion being mindful to get in all the nooks and crannies. If parts re left bare, the wet batter won't stick. Tap off excess flour and reserve.
  • Cut side down, dredge floured onion in the wet ingredients, pull up and return to flouring mixing bowl, spooning flour over the top again.
  • Place the onion into the refrigerator for about 10 minutes to let is set. Meanwhile, prepare the frying oil.
  • In a high sided Dutch oven or deep fryer, heat vegetable or peanut oil to 400 degrees.
  • Remove the onion from the refrigerator and shake any excess flour from the onion (it will burn in the oil while frying).
  • Using a wire skimmer lower the onion, cut side down, into the oil. Oil temperature will fall, maintain at 350 degrees for duration of cooking.
  • Fry until golden brown, about 8-9 minutes, turning halfway through so the root side is down.
  • Remove onion using your wire skimmer and drain on paper towels.
  • Serve hot with dipping sauce.

SWEET AND SOUR FLOWERING RED ONIONS



Sweet and Sour Flowering Red Onions image

6 medium red onions, peeled
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
2 tablespoons white wine vinegar
1 tablespoon dark brown sugar
1/4 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Slice 1/4 inch off the tops and bottoms of the onions so they sit flat. Put the onions on the cutting board root-end down. Cut 3 slits in the stem side of each onion, crisscrossing to make 6 pie slices, cutting about two-thirds of the way through (do not cut all the way through).
  • Bring a medium pot of salted water to a boil. Drop the onions in and cook until tender on the outside, 4 to 5 minutes. Remove and cool. When the onions are cool enough to touch, gently open the onion "petals" so the onion opens up like a flower.
  • In a small pot, simmer the red and white vinegars, brown sugar and 2 tablespoons water over medium heat until syrupy, 2 to 3 minutes.
  • On a baking sheet fitted with parchment paper, arrange the onion flowers in a single layer with space between each. Drizzle with the olive oil and season with salt and pepper. Roast until the flowers open and the tips of the petals are lightly brown, 40 to 45 minutes.
