1 ounce goat cheese, cut into 4 slices
8 thin slices tart green apple (about ¼ of small apple)
1 slice bacon, crisp-cooked and drained
2 teaspoons honey
Dash freshly ground black pepper

Steps:

  • 1. Prepare Kellogg's®l Eggo® Minis Buttermilk pancakes according to package directions. Arrange on serving plate.
  • 2. Top pancakes with goat cheese and apple slices. Cut bacon into 4 pieces. Top each pancake stack with bacon piece. Drizzle with honey. Sprinkle with pepper. Serve immediately.

2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup whole milk
1/4 cup olive oil
2 tablespoons (1/4 stick) unsalted butter, melted
Topping
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons olive oil
3 large onions (about 2 pounds), halved, thinly sliced
1 tablespoon finely chopped fresh rosemary
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 cups (about 6 ounces) crumbled blue cheese

Steps:

  • For crust:
  • Preheat oven to 425°F. Mix flour, baking powder, and salt in medium bowl to blend. Make well in center of dry ingredients. Whisk milk, olive oil, and melted butter in liquid measuring cup to blend. Slowly pour milk mixture into well in dry ingredients, stirring until just blended and smooth. Roll out dough on lightly floured surface to 10x13-inch rectangle. Transfer dough to rimmed baking sheet. Re-form dough into 10x13-inch rectangle (dough will shrink when moved). Pierce dough all over with fork. Let dough rest while preparing topping.
  • For topping:
  • Melt butter with oil in large skillet over high heat. Add onions. Cook until onions are soft and beginning to brown, stirring frequently, about 10 minutes. Add rosemary, sugar, and salt. Season onions to taste with pepper. Reduce heat to medium. Continue to cook until onions are soft and dark brown, stirring frequently, about 20 minutes; cool.
  • Spread onion mixture evenly over dough. Sprinkle with cheese. Bake until crust is golden and cheese is bubbling, about 20 minutes. Let cool. Cut into squares and serve.

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Toast pecans in a shallow baking pan until fragrant and a shade darker, about 10 minutes. Toss hot pecans in pan with butter and salt, then cool.
  • Coarsely chop nuts, then toss together with cheese in a bowl, without mashing.
  • Top each cracker with a mounded teaspoon of cheese mixture, pressing together slightly, then top with a parsley leaf and a grape half, gently pressing them into cheese.

4 ounces cream cheese
4 ounces blue cheese, crumbled
1 granny smith apple, sliced
lemon juice

Steps:

  • Unroll crescent roll of puff pastry dough and cut into matching triangles.
  • Bake on a greased cookie sheet for 10 minutes then allow to cool completely.
  • In a small bowl, mix together cream cheese and crumbled blue cheese.
  • Peel, core, and slice apple. Toss with lemon juice to prevent browning.
  • At the last minute assemble each piece by spreading a triagle with a small amoutn of the cheese mixture and topping with 2-3 slices of apple. Sprinkle with parsley for garnish.

12 slices walnut bread or other dark dense bread, such as rye or pumpernickel
1 1/2 cups crumbled blue cheese
2 Gravenstein apples, unpeeled, cored and thinly sliced

Steps:

  • Lightly butter one side of each slice of bread.
  • Melt 2 teaspoons of the remaining butter in a 10-inch nonstick skillet over medium-low heat. Place 2 slices of bread, buttered side down, in the skillet, top each slice with about 1/4 cup of blue cheese and several slices of apple, and place another slice of bread on top, buttered side up. Cook until the sandwiches are golden brown on the bottom, then carefully flip the sandwiches over and brown the other side. Transfer the sandwiches to a serving platter. 25g Cashel Blue cheese , chopped
2 spring onions , whites only, very finely chopped
1 cucumber , thickly sliced (about 14 inches)
16 small black grapes
4 toasted pecan halves, cut into slivers
½ 80g tub pomegranate seeds
a few fresh thyme leaves

Steps:

  • Beat the ricotta with the blue cheese and onion until really smooth. Arrange the cucumber slices on a large platter. Top each cucumber slice with some of the cheese mixture - you can pipe it on if you want a professional finish.
  • Top half with a grape and sliver of pecan, and the remainder with pomegranate seeds and thyme. Keep chilled until ready to serve. Will keep in the fridge for up to one day.
