Blue Cheese Pasta image

This goes together while the pasta water is boiling. You can also top this with salmon, chicken, crumbled bacon or tomatoes. This sauce is also great with steak.

2 cups half-and-half
4 tablespoons butter
1 head garlic, chopped
1 small onion, chopped
1/3-1/2 cup crumbled blue cheese
1/3-1/2 cup parmesan cheese
salt and pepper
1 lb pasta (I use penne)

Steps:

  • While the pasta is boiling: Melt butter in sauce pan over med-low.
  • Add onion and garlic saute about 5 minutes.
  • Pour in half& half, let heat through.
  • Wisk in blue and parmesan cheeses.
  • Salt and pepper to taste.
  • Sauce will thicken a bit upon standing.
  • Toss with cooked pasta.

400g penne pasta
25g butter
1 onion , thinly sliced
1 garlic clove , crushed
1 tbsp fresh chopped sage , or 1 tsp dried
100g stilton , cubed
handful toasted walnuts , chopped

Steps:

  • Boil the pasta according to pack instructions. In a saucepan, melt the butter, then gently fry the onion until golden. Add the garlic and sage, fry for a further 2 mins, then remove the pan from the heat. Drain the pasta and reserve some cooking water. Stir through the buttery onions, stilton and 2 tbsp cooking water, then sprinkle with the toasted walnuts to serve.

Number Of Ingredients 6

1 1/2 pounds medium shallots (about 24), peeled, halved lengthwise
4 tablespoons olive oil
1 cup fresh breadcrumbs made from French bread
1 1/2 pounds farfalle (bow-tie) pasta
2 pounds thin asparagus, trimmed, cut diagonally into 11/2-inch pieces
1 pound creamy blue cheese (such as Saga blue or Gorgonzola), cut into 1/2-inch pieces

Steps:

  • Preheat oven to 375°F. Toss shallots with 2 tablespoons oil on baking sheet; spread in single layer. Sprinkle with salt and pepper. Bake until tender and golden brown, stirring occasionally, about 35 minutes.
  • Stir 2 tablespoons oil and breadcrumbs in skillet over medium heat until crumbs brown, about 4 minutes. (Shallots and crumbs can be made 8 hours ahead. Cover separately; keep at room temperature.)
  • Cook pasta in large pot of boiling salted water 10 minutes. Add asparagus; cook until asparagus is crisp-tender and pasta is tender but still firm to bite, about 4 minutes. Drain pasta and asparagus. Transfer to large bowl. Immediately add blue cheese and shallots. Toss until cheese melts and pasta is well coated. Season with salt and pepper. Transfer to bowls. Sprinkle with breadcrumbs.

¼ cup coarsely chopped walnuts
4 ounces blue cheese, crumbled
2 tablespoons olive oil
½ pound uncooked spaghetti
1 clove garlic, minced

Steps:

  • Cook pasta in a large pot of boiling water until al dente.
  • Meanwhile, heat oil in heavy skillet. Add garlic, and saute for a few minutes. Stir in walnuts, and saute for several more minutes.
  • Drain pasta, and divide into 2 plates. Top with saute and blue cheese.

This easy blue cheese sauce recipe for pasta uses only three ingredients and comes together in a snap by melting into the hot cooked pasta.

1/2 pound capellini (or spaghetti)
2 tablespoons unsalted butter
1/3 pound blue cheese (crumbled)
1/4 cup fresh parsley (finely chopped)

Steps:

  • Gather the ingredients.
  • Bring a pot of salted water to a boil and cook pasta according to package directions. Reserve 1/2 cup of the pasta water, then drain the noodles.
  • Turn the heat down to low and add the butter to the pot.
  • When the butter has melted, add the noodles back to the pot and stir to coat.
  • Slowly add the blue cheese, stirring the noodles so the cheese melts.
  • As you add the cheese, also drizzle a little of the reserved pasta water over the noodles, using as much or as little as needed. The water will keep the noodles from clumping together and thin out the blue cheese as it melts so the sauce has a lighter, less-sticky texture.
  • Once the blue cheese has mostly melted, stir in the parsley. Add salt to taste.
  • Serve immediately and enjoy!

  • While the pasta is cooking, prepare the steak by first seasoning all sides with salt and pepper. Heat the olive oil in a medium-sized pan over medium-high heat. Cook the steak for about 3 minutes on each side, or until desired doneness. I prefer mine pretty pink in the middle, but if you like yours more well-done cook it a few minutes longer on each side. Remove the steak from the pan and cover it with foil. Let it rest for a few minutes before slicing it.
  • When the pasta is done boiling, drain it and then return it to the same pot. Lower the heat to low and pour in the half and half and add the butter. Crumble the blue cheese into the pasta. The smaller you crumble it, the better otherwise it will take longer for it to melt into a sauce. Stir the pasta with the cheese, half and half, and butter using the spatula to break up the cheese, if necessary. Continuing stirring until the sauce is smooth. Season the pasta and sauce with the salt and pepper.
  • To serve, spoon the pasta onto a bowl or plate. Top the pasta with the sliced steak. Garnish the plates with the chopped walnuts and parsley.
