SOUTHERN PEACH COBBLER



Southern Peach Cobbler image

Our peach cobbler can easily be made with either fresh or frozen peaches. Great dessert for most any meal and a real old Southern favorite.

4 cups sliced Peaches, fresh or frozen (thawed)
1 cup sugar, divided
1/2 teaspoon Vanilla Extract
1 teaspoon Lemon Juice
1 stick butter, melted
1 cup All-Purpose Flour
2 teaspoons Baking Powder
Dash of salt
3/4 cup Milk

Steps:

  • Place peaches in a large mixing bowl.
  • Add ½ cup of the sugar.
  • Add extract.
  • Add lemon juice.
  • Toss gently to coat peaches. Set aside.
  • Place flour in a separate small bowl.
  • Add baking powder.
  • Add the other ½ cup sugar.
  • Add dash of salt.
  • Stir dry ingredients together.
  • Gradually stir in the milk until batter is smooth.
  • Pour melted butter into baking dish (3qt)
  • Pour flour mixture on top of butter. Do not stir.
  • Pour peaches over top of flour mixture. Do not stir.
  • Bake at 350F degrees for 50-60 minutes until golden brown on top.
  • Enjoy!

Over-the-Coals Bourbon, Blueberry and Peach Cobbler image

6 cups sliced peaches (about 5 peaches)
3/4 cup blueberries
1/4 cup bourbon (or dark rum)
1/4 cup sugar
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon grated lemon zest
1 teaspoon fresh lemon juice
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 cup rolled oats
1/2 cup sugar
1/2 teaspoon kosher salt
1 1/2 sticks (3/4 cup) cold unsalted butter, cut into small cubes
2 tablespoons heavy cream
1 quart good-quality vanilla yogurt, for serving

Steps:

  • Start a campfire and wait until the flames die down and the coals glow red with white ash. Meanwhile, make the filling: In a large bowl, combine the peaches, blueberries, bourbon, sugar, cornstarch, cinnamon, lemon zest, lemon juice and vanilla. Mix well to coat the peaches and blueberries evenly. Set aside.
  • Make the topping: In a second large bowl, combine the flour, oats, sugar and salt. Add the cold butter cubes and cut the butter into the flour with a pastry blender, 2 knives or your hands. Mix until the texture is coarse and clumps in your palm when you squeeze a handful. Add the heavy cream and mix just until the dough comes together a bit more.
  • Pour the filling into a 12-inch cast-iron skillet or Dutch oven with a fitted lid and spread it out evenly. Spoon the topping mixture evenly over the filling, then cover with the lid. Place the skillet adjacent to the hot coals in a place where it will get a good amount of radiant heat so the topping cooks through evenly without burning. Use a metal shovel to pile hot coals on top of the lid (this will distribute heat from the top). Cook 45 to 50 minutes, rotating the skillet 90 degrees every 10 minutes so the cobbler cooks evenly. (Feed the fire with more wood as needed.) Change out the hot coals on top 2 or 3 times during cooking so the top stays hot throughout. When the cobbler is done, the fruit will be bubbling around the edges and the topping will be light and fluffy. Serve the cobbler straight from the pan with vanilla yogurt on the side.
  • You can also bake the cobbler, uncovered, in a 375 degrees F oven, 30 to 35 minutes.

1/2 cup water

TOPPING:
1 cup all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup butter, softened

Steps:

  • In a saucepan, combine first five ingredients. Bring to boil, stirring until thick. Add fruit and pour into a 2-qt. baking dish. For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk and butter. Spread over fruit mixture an bake at 375° for 50 minutes or until topping is golden brown and tests done. Serve warm.

1 cup frozen blueberries
¾ cup all-purpose flour
½ cup white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x9-inch glass baking dish.
  • Pour peaches into the prepared dish, and sprinkle the blueberries over the peaches. In a bowl, whisk the flour, sugar, and baking powder until thoroughly combined. With a pastry cutter, cut the butter into the flour mixture to make a crumble, and spread the crumble mixture over the fruit.

5 cups fresh peaches - peeled, pitted, and sliced
⅛ teaspoon Chinese five-spice powder
1 teaspoon grated lemon zest
1 cup white sugar
1 cup water
½ cup butter, melted
1 cup white sugar
1 ½ cups self-rising flour
1 ½ cups milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine peaches, Chinese five-spice powder, and lemon zest in a bowl.
  • Stir sugar and water together in saucepan pan over medium heat until simmering, 2 to 3 minutes. Stir in peach mixture; cook and stir for 2 minutes. Remove from heat and set aside.
  • Combine sugar and self-rising flour in a large bowl. Pour in milk; whisk to form a smooth batter.
  • Pour melted butter into a Dutch oven. Pour batter over the melted butter.
  • Gently place peaches and syrup on top of batter. As the cobbler bakes, they will sink down into the batter.

I took my grandmothers recipe and tweeked it just a little.

3 can(s) peaches in light syrup drain 1 can (frozen peahes can be used but add more sugar to taste
1/2 stick(s) butter
1 1/2 cup(s) sugar
1/4 teaspoon(s) salt
1 teaspoon(s) pure vanilla extract
1 teaspoon(s) almond extract
2 teaspoon(s) cinnamon (save 1 tsp for dusting the bottom of the pan
1/4 cup(s) flour
1 package(s) refrigerated pie crust

Steps:

  • Preheat oven to 350 degrees
  • Pour all ingredients except the flour and 1 tsp. of cinnamon in a 2 quart sauce pan. Draining 1 can of peaches. Simmer on low until butter and sugar have melted.
  • While that simmers, spray the baking dish with butter flavored Pam and lightly dust it with 1 tsp. cinnamon.
  • Roll out 1 sheet of dough and line your pan. Be sure to stretch it to fit the shape of your pan.
  • Remove the filling from the stove and pour it into your crust. It will be really soupy so sprinkle the flour into the pan and lightly stir. You will have small lumps but these will break during baking.
  • Roll out your second crust and place it on top to close your cobbler. Pierce the middle with a sharp knife to vent.
  • Bake for 35-45 minutes, or until top crust is golden brown.
  • Glaze the top crust with melted butter. Let it cool for 15-20 minutes and serve!

1 cup(s) self-rising flour
1/4 cup(s) plus 1/4 cup (1 stick) butter, melted

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8X11 baking dish with non-stick cooking spray and set aside. In a medium-size mixing bowl coarsely mix 3/4 cup of the sugar, the flour, and 1/4 cup melted butter together. Sprinkle about one-third of this mixture on the bottom of the baking dish.
  • Add the peaches and juice. (If the juice from the peaches does not cover the peaches, add a small amount of water just to cover the peaches. Too little liquid will make the cobbler dry. Too much liquid will make it soupy.)
  • Top the peaches with the remaining sugar/flour mixture. Sprinkle the top with the remaining 2 tablespoons sugar and the remaining 1/4 cup butter. Bake for 30 to 40 minutes or until brown and bubbly. Serve hot! ***HINT: Fresh peaches can be used. When using fresh peaches, peel and slice them, sprinkling the slices with an additional 1/2 cup sugar. Refrigerate them for 2 to 3 hours before using. ***ALSO: If you do not have self-rising flour, you may substitute all-purpose flour.
