BLUEBERRY BANANA CAKE WITHOUT EGGS
Easy eggless blueberry banana cake is made using fresh blueberries and ripe bananas which makes it a simple and delicious dessert filled with lots of fresh blueberries. This is a homemade eggless cake made from scratch using blueberries and bananas as the main ingredients.

Steps:
- Preheat oven to 350 degree Fahrenheit.
- In a large bowl, mix together the dry ingredients together until well combined - flour, baking powder and baking soda until well combined.
- Wash the blueberries very well, mix with the extra 2 tablespoons of sugar and keep aside.
- In a separate bowl, mash the bananas very well, add the softened butter and stir well until well combined. You can use a balloon whisk to make the mixing easier.
- Add the sugar to the banana butter mixture and mix well.
- Add the milk and vanilla essence also to the banana butter sugar mixture and stir well everything until all ingredients are well combined.
- Transfer the wet mixture to the dry flour mixture, mix well without any lumps, use a balloon whisk to stir if any lumps are formed.
- Finally add the blueberries to the mixture, gently stir in almost evenly.
- Bake in preheated oven for about 50 to 60 minutes or until a toothpick inserted at the center of the cake comes out clean. Mine took exactly 60 minutes to bake and I had to cover the top of the cake pan with an aluminium foil after baking for about 50 minutes of time since the top of the cake browned already.

- Preheat oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
- Mix flour, baking soda, and salt together in a bowl.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract. Beat mashed bananas thoroughly into the mixture. Add flour mixture in small increments while beating until just combined into a thick batter. Fold blueberries into the batter; pour into prepared loaf pans.

- Preheat the oven to 350˚F (180˚C).
- In a medium bowl, mash bananas. Mix eggs, yogurt, honey, vanilla extract, and baking soda into mixture.
- Add flour and mix.
- Add blueberries and gently fold into mixture.
- Pour the batter into a greased 9 x 5-inch (23 x 13 cm) bread pan. Bake for about 50 mins, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)

- Preheat oven to 325F. Butter and line a 9×5″ baking pan with parchment paper.
- In a small bowl, toss together the first 3 ingredients for the streusel. Add in melted butter and stir until mixture looks like wet sand.

Steps:
- Preheat the oven to 350 degrees.
- Mix the first five (dry) ingredients together in a large mixing bowl.
- In a separate bowl, mash the bananas well.
- Stir the butter or margarine, vanilla extract and applesauce into the bananas.
- Add the banana mixture into the mixing bowl with the dry ingredients.
- Mix gently by hand, just enough to form a thick, clumpy batter. If the mixture seems too dry, add more mashed banana or applesauce to adjust the consistency.
- Fold in chocolate chips and/or walnuts, if using.
- Pour batter into greased loaf pan and bake for 45 minutes or until the bread is a deep golden brown and a knife inserted in the center comes out clean.
EASY EGGLESS BANANA BREAD MUFFINS
Steps:
- Preheat the oven to 425ºF (220ºC). Line 12-cup regular muffin tin with muffins liners. If you prefer, you can also spray the muffin tin with baking spray and skip the liners.
- In a large bowl, mash bananas with a fork until only small chunks remain. Add brown sugar, oil, yogurt, and vanilla; mix until well combined.
- Add flour, baking soda, baking powder, and salt. Combine wet and dry mixture until just combined. Do not over-mix.
- Spoon the batter evenly into the muffin cups or liners, filling each one all the way to the top.
- Bake for 5 minutes, then reduce the oven temperature to 375ºF (190ºC) and continue baking until golden brown and a toothpick inserted in the center comes out clean, another 15 to 20 minutes.

- Grease and line a 9 by 5 inch loaf pan with baking or parchment paper. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
- In a large mixing bowl, sift flour, baking soda and baking powder. Add sugar and cinnamon and gently stir.
- In the microwave, heat the butter until just melted, stirring in between 10 second bursts. Remove the butter and set aside to cool slightly.
- Next, add eggs, vanilla and buttermilk to your cooled butter and whisk gently until combined. Make a well in the middle of your dry ingredients, add the wet ingredients and the mashed banana.
- Throw in the blueberries. Very gently stir until the mixture is just combined - be careful not to over mix.

- In a medium bowl, combine the 2cups of flour, baking soda, and salt.
- Place granulated sugar and butter in a large bowl, beat with a mixer at medium speed until mixture is fluffy and well blended (about 1 minute).
- Add mashed banana, eggs, yogurt and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist.
- Place the blueberries in a bowl with 1 tablespoon of flour and toss to coat.
- Gently fold blueberries into the batter. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Press additional blueberries into the top of the batter for decoration.
- Bake for 60-70 minutes or until a wooden pick inserted in center comes out clean. Cool the bread 10 minutes in pan on a wire rack; remove the bread from pan.
- Cool completely on wire rack.
