Blueberry Banana Cake Without Eggs image

Easy eggless blueberry banana cake is made using fresh blueberries and ripe bananas which makes it a simple and delicious dessert filled with lots of fresh blueberries. This is a homemade eggless cake made from scratch using blueberries and bananas as the main ingredients.

1.5 cups blueberries
2 large ripe bananas
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 stick butter (softened (equivalent to 1/2 cup butter))
1.5 cups sugar
2 tablespoons extra sugar (to coat blueberries)
1 cup whole milk (at room temperature)

Steps:

  • Preheat oven to 350 degree Fahrenheit.
  • In a large bowl, mix together the dry ingredients together until well combined - flour, baking powder and baking soda until well combined.
  • Wash the blueberries very well, mix with the extra 2 tablespoons of sugar and keep aside.
  • In a separate bowl, mash the bananas very well, add the softened butter and stir well until well combined. You can use a balloon whisk to make the mixing easier.
  • Add the sugar to the banana butter mixture and mix well.
  • Add the milk and vanilla essence also to the banana butter sugar mixture and stir well everything until all ingredients are well combined.
  • Transfer the wet mixture to the dry flour mixture, mix well without any lumps, use a balloon whisk to stir if any lumps are formed.
  • Finally add the blueberries to the mixture, gently stir in almost evenly.
  • Bake in preheated oven for about 50 to 60 minutes or until a toothpick inserted at the center of the cake comes out clean. Mine took exactly 60 minutes to bake and I had to cover the top of the cake pan with an aluminium foil after baking for about 50 minutes of time since the top of the cake browned already.

½ cup 2% plain greek yogurt
⅓ cup honey
1 teaspoon vanilla extract
1 teaspoon baking soda
1 ½ cups wheat flour
1 cup blueberry

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, yogurt, honey, vanilla extract, and baking soda into mixture.
  • Add flour and mix.
  • Add blueberries and gently fold into mixture.
  • Pour the batter into a greased 9 x 5-inch (23 x 13 cm) bread pan. Bake for about 50 mins, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)

1/4 cup (50g) sugar
1/2 tsp cinnamon
2 tbsp (30ml) melted unsalted butter
1/2 cup (114g) melted unsalted butter
1 cup (240g) mashed bananas
1/4 cup (60ml) milk
1 & 3/4 (220g) cups all-purpose flour
1 cup (200g) sugar
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup (150g) blueberries

Steps:

  • Preheat oven to 325F. Butter and line a 9×5″ baking pan with parchment paper.
  • In a small bowl, toss together the first 3 ingredients for the streusel. Add in melted butter and stir until mixture looks like wet sand.
  • In a medium bowl, whisk together the melted butter, bananas and milk. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking soda, salt and cinnamon together. Toss in the blueberries to coat.
  • Add the wet ingredient to the dry and mix until just combined.
  • Pour into prepared baking pan. Sprinkle with streusel on top and press down lightly.
  • Bake for about 1 hour or until a toothpick inserted into the center comes out clean.

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup sugar
3 large ripe bananas
1/2 cup applesauce
4 tablespoons butter or 4 tablespoons margarine, melted
1/4 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Mix the first five (dry) ingredients together in a large mixing bowl.
  • In a separate bowl, mash the bananas well.
  • Stir the butter or margarine, vanilla extract and applesauce into the bananas.
  • Add the banana mixture into the mixing bowl with the dry ingredients.
  • Mix gently by hand, just enough to form a thick, clumpy batter. If the mixture seems too dry, add more mashed banana or applesauce to adjust the consistency.
  • Fold in chocolate chips and/or walnuts, if using.
  • Pour batter into greased loaf pan and bake for 45 minutes or until the bread is a deep golden brown and a knife inserted in the center comes out clean.

3/4 cup (150 g) brown sugar
1/2 cup (120 ml) light tasting oil ((I use vegetable oil))
¼ cup (60 g) plain regular yogurt
1 teaspoon pure vanilla extract
1 1/2 cups (210 g) all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
1 -2 teaspoon milk

Steps:

  • Preheat the oven to 425ºF (220ºC). Line 12-cup regular muffin tin with muffins liners. If you prefer, you can also spray the muffin tin with baking spray and skip the liners.
  • In a large bowl, mash bananas with a fork until only small chunks remain. Add brown sugar, oil, yogurt, and vanilla; mix until well combined.
  • Add flour, baking soda, baking powder, and salt. Combine wet and dry mixture until just combined. Do not over-mix.
  • Spoon the batter evenly into the muffin cups or liners, filling each one all the way to the top.
  • Bake for 5 minutes, then reduce the oven temperature to 375ºF (190ºC) and continue baking until golden brown and a toothpick inserted in the center comes out clean, another 15 to 20 minutes.
  • Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling. Drizzle with glaze, if desired.

1 teaspoon baking soda
1 and 1/2 teaspoons baking powder
90 grams (1/2 cup) brown sugar
1 teaspoon ground cinnamon
115 grams (1/2 cup or 1 stick) butter
2 large eggs
1 teaspoon vanilla extract
60 ml (1/4 cup) buttermilk
160 grams (2/3 cup) mashed banana, (2-3 overripe bananas)
110 grams (1 cup) fresh blueberries*

Steps:

  • Grease and line a 9 by 5 inch loaf pan with baking or parchment paper. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
  • In a large mixing bowl, sift flour, baking soda and baking powder. Add sugar and cinnamon and gently stir.
  • In the microwave, heat the butter until just melted, stirring in between 10 second bursts. Remove the butter and set aside to cool slightly.
  • Next, add eggs, vanilla and buttermilk to your cooled butter and whisk gently until combined. Make a well in the middle of your dry ingredients, add the wet ingredients and the mashed banana.
  • Throw in the blueberries. Very gently stir until the mixture is just combined - be careful not to over mix.
  • Pour the mixture into your prepared tin and bake for approximately 45-50 minutes* or until a knife inserted into the middle comes out clean. Leave to cool completely on a wire rack.
