BLUEBERRY BRAN MUFFINS
Steps:
- Preheat the oven to 350 degrees. Brush the top of a muffin pan with vegetable oil and line it with 12 paper liners.
- Stir together the flour, salt, baking powder, baking soda, and cinnamon in a medium bowl. In a large bowl, whisk together the yogurt, sugar, 1/2 cup vegetable oil, honey, eggs, and vanilla until combined. Add the dry ingredients, stirring just until combined. Gently stir in the wheat bran and blueberries until combined.
- Scoop the batter into the muffin cups with a rounded 2 1/4-inch ice cream scoop. Bake for 25 to 30 minutes, until the tops are golden brown and a cake tester comes out clean. Allow to cool for 5 minutes and serve warm or at room temperature.
WHOLE WHEAT BLUEBERRY BRAN MUFFINS
Moist, delicious, full of blueberries, healthy, very low in fat. To change them up use apples instead of blueberries and add 1/2 ts. nutmeg.

Steps:
- Mix dry ingredients together in one bowl.
- Mix wet ingredients together in a different bowl.
- Combine wet into dry with Blueberries and just mix together.
- Grease bottom of muffin tin, and scoop in muffin mix.
- Bake at 350f and enjoy!
- Will make 12 regular sized muffins or 6 large muffins. Muffins will be done about 20 mins for reg. and 30-35 mins for lg.
INCREDIBLE OAT BRAN MUFFINS, PLAIN, BLUEBERRY OR BANANA
I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

- *Blueberry or banana variations are at bottom.
- Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
- Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
- Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
- *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
- These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

Steps:
- Measure cereal into mixing bowl and stir in milk.
- Let sit a few minutes to soften.
- Stir in baking powder, salt, sugar, almond extract, egg and margarine.
- Mix well.
- Stir in flour.
- Gently fold in blueberries.
- Spoon into 12 muffins cups that you have sprayed well with Pam.
- Sprinkle more sugar on top of each muffin, if desired.
- Bake in preheated 400 degree oven for 25 minutes.

- Preheat oven to 400 degrees Fahrenheit and lightly spray a nonstick miniature muffin pan with cooking oil spray.
- In a medium bowl, combine bran, flour, flaxseed, baking soda, cinnamon, salt and set this aside. In another medium bowl using a hand mixer or blender, combine the milk, honey, banana, egg, olive oil, and vanilla extract until smooth.
- Make a well in the center of the dry ingredients. Pour in one-third of the liquid mixture and stir until smooth. Slowly add remaining liquid mixture and stir until combined. Add blueberries and stir again, do not over mix.
- Carefully spoon 2 tablespoons of batter into each muffin cup. Bake approximately 8 minutes, or until the tops spring back when pressed gently, do not overbake. Place pan on a wire rack and cool 10 minutes before removing muffins from cups.

- Grease muffin cups or use paper muffin liners.
- Mix together wheat bran and milk, and let stand for 10 minutes. (I didn't do this and muffins turned out fine.).
- In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.
- Beat in bran mixture.
- Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
- Stir into bran mixture until just blended. Fold in blueberries.
- Scoop into muffin cups.
- Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.
