- Put the oats in a dry blender and pulse until finely ground. Dump them out into a bowl. Pour milk over the oats. Let stand for 15 minutes.
- In the meantime, make the sauce. Combine the blueberries, sugar and lemon juice in a saucepan over medium heat. Bring to a simmer and cook until the blueberries just start to boil, about 5 minutes. Remove from the heat and set aside.
- When oatmeal is ready. Add eggs and beat, then add and stir in coconut oil, baking powder, vanilla sugar, cinnamon and salt. Fold in the blueberries.
- Heat your waffle iron on medium-low. Lightly coat with oil or butter and add 2 tablespoons of batter per waffle onto the iron. Bake until waffles are golden brown. Repeat with remaining batter, coating your iron with more butter. Serve topped with Greek yogurt and blueberry sauce. Or if you have any leftover whipped cream, use it to top up your waffles. Enjoy!
BLUEBERRY OATMEAL WAFFLES
A whole grain waffle that is actually light and fluffy felt as likely as unicorns being real... until this recipe! These are a favorite in our house because they feel like a treat (which makes the boys happy) but are packed with whole grains and some fruit (which makes me happy). We love to have them with syrup on the first day and then make cream cheese sandwiches with them throughout the week for an easy, portable breakfast.

- Preheat and grease your waffle iron. Preheat oven to 200.
- Grind the oats in your food processor or blender until they are the consistency of whole-wheat flour.
- In a medium bowl, whisk together the oat flour, other flour, sugar, baking powder, salt, and baking soda.
- In another bowl, melt the butter and then whisk in the eggs. When well combined, whisk in the yogurt.
- Add the wet ingredients to the dry and stir until just combined. Gently mix in the blueberries.
- Ladle the recommended amount of waffle batter into the hot waffle iron, close the lid, and cook until the waffle is golden. Put cooked waffle in the oven to keep warm and repeat the process until all waffles are baked. Serve with extra blueberries and maple syrup.

- Start with preparing and measuring all the ingredients. I like to use measuring cups.
- Take the blender and add all ingredients. Note: add wet ingredients first for easier blending.
- Mix everything at high speed until you get a smooth texture.
- Taste the batter and add additional sweetener if you think the mixture is not sweet enough.
- Let the batter rest for a few minutes.
- Turn on the waffle maker and let it heat until it's hot (the green light must be on).
- Coat waffle plates with cooking spray or melted coconut oil using the brush.
- Pour the batter onto the hot waffle plates, close the lid and allow the waffles to cook. Depending on your waffle maker it will take between 8-10 minutes per batch.
- Once baked, remove waffles from the waffle maker and place them on a cooling rack. Fresh baked waffles will be soft when you take them out of the waffle maker but they will harden as they cool on the rack.
- Repeating the process with the rest of the batter. Make sure to grease the waffle plates before adding the batter to prevent sticking.
- Transfer cooled waffles to a plate.
- Add toppings (optional): I used banana, blueberries, and maple syrup. Be creative here and add toppings you like.
- Serve and enjoy!

- In a large mixing bowl, whisk together flour, oats, baking powder, cinnamon and salt. Set aside.
- To a second large mixing bowl, add milk, eggs, melted butter and vanilla. Whisk until fully combined.

- Sift flour, baking powder, salt and allspice into a mixing bowl. Mix in the oats. Make a well in the center and add applesauce, milk, maple syrup, oil and vanilla. Stir with just until combined.
- Let batter rest for 5 minutes or so, it will thicken a bit. Fold in the blueberries. Dont worry too much about the blueberries bleeding into the batter, its no biggie.
- Cook in waffle iron according to manufacturer directions. In my 8 inch waffle iron, I use a heaping 1/2 cup of batter. Remember to spray or brush the iron with oil in between each waffle.

- In a separate, smaller bowl, beat eggs, then beat in milk and melted butter.
- Add the milk mixture into the dry mixture and stir until just combined. Allow to sit for 5 minutes.
- Stir in blueberries gently.
- Meanwhile, heat up your waffle iron. When hot enough, grease with a bit of butter/oil. Pour/plop batter onto pan (how much at a time will depend on the size of your pan), close lid, and bake according to timer.
