1 1/2 Sticks Unsalted Butter (Softened)
1 1/2 Cups White Sugar
3 Eggs
1 1/2 teaspoons Vanilla Extract
1 1/4 Cups Sour Cream
2 1/2 Cups Cake Flour
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
2 Cups Blueberries
1/4 Cup Brown Sugar
1/2 Cup Flour
1 1/2 teaspoons Cinnamon
1/4 teaspoon Salt
3 tablespoons Butter (Cubed)
1 Cup Powdered Sugar
2 tablespoons Whole Milk

Steps:

  • Preheat oven to 350 degrees F. Spray a bundt pan with non stick baking spray. Set aside.
  • In a large bowl, cream butter and sugar. Add eggs one at a time, sour cream, and vanilla.
  • In a medium bowl, combine flour, baking powder, baking soda, and salt.
  • Gradually add flour mixture to batter a little at a time until just combined. Do not over mix.
  • Fold in blueberries.
  • Pour half of batter into prepared pan.
  • In a small bowl, combine brown sugar, cinnamon, flour, salt, and butter until mixture resembles coarse crumbs.
  • Sprinkle over batter, and top with remaining batter. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
  • In a medium bowl,combine milk and powdered sugar. Drizzle over cake.

For the Bundt Cake:
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
12 tablespoons butter (softened)
1 2/3 cup sugar
4 large eggs
2 teaspoons vanilla
8 ounces sour cream
2 cups blueberries (rinsed, picked over, stems removed)
For the Vanilla Icing:
1 1/2 cups powdered sugar
Dash salt
1 tablespoon soft butter
1/2 teaspoon vanilla extract
2 to 3 tablespoons milk

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F and grease and flour a Bundt cake pan (10- to 12-cup size).
  • In a bowl, combine the all-purpose flour, baking powder, soda, and salt. Set aside.
  • In a large mixing bowl, with an electric mixer, cream the 12 tablespoons of butter and granulated sugar until light and fluffy.
  • Beat in eggs, one at a time, beating well after each addition.
  • Beat in the 2 teaspoons of vanilla.
  • Slowly beat in the flour mixture, alternating with the sour cream and ending with the flour. Blend well.
  • Fold in the blueberries.
  • Pour the batter into the Bundt pan.
  • Bake for 50 to 60 minutes, or until a cake tester or wooden pick comes out clean when inserted into the center of the cake.
  • Cool in the pan on a rack for 10 minutes.
  • Remove from the pan and cool completely.
  • Gather the ingredients.
  • Combine the confectioners' sugar with the salt, 1 tablespoon of salted butter, and the vanilla.
  • Beat in milk, a few teaspoons at a time, until a good drizzling consistency is reached.
  • Drizzle or spoon over the cooled cake.

2 Cups Flour
1 1/2 Cups Sugar
1 Pack Instant Vanilla Pudding
3 TSP Baking Powder
4 Whole Eggs
2/3 Cup Oil
1 1/4 Cups Milk or Milk Alternative
1 Cup Blueberries (Fresh or Frozen, if using frozen - keep frozen until use.)
2 TBSP Flour
1 Pack Graham Crackers (Crushed)
1/2 Cup Brown Sugar
1/4 Cup Oil
2 Cups Confectioners Sugar
3 TBSP Oil
1 TBSP Vanilla Extract
2-3 TBSP Milk or Milk Alternative

Steps:

  • Preheat oven to 350°.
  • Fully grease a Bundt pan with baking spray*
  • In a large bowl mix flour, sugar, pudding and baking powder.
  • Add oil, eggs and milk and mix thoroughly.
  • Toss flour with blueberries, this prevents them sinking in the cake.
  • Toss graham cracker crumbs, brown sugar and oil. Combine with fingertips to create a course crumb. Set aside 2 TBSP.
  • Pour 1/3 of the batter into the greased pan.
  • Place half the blueberries on the cake and top with the half the graham streusel.
  • Repeat with remaining batter and filling, ending off with batter.
  • Bake on 350° for 40 minutes. Check cake with a skewer - if it comes out clean, cake is ready.
  • Allow cake to cool for about 45 min to 1 hour.
  • Turn cake onto serving plate and allow to completely cool.
  • Mix first 3 ingredients and add milk until glaze reaches desired consistency. You want it to slowly slide off the spoon but not drip off too fast.
  • Drizzle over cooled cake and top with retained crumbs.

1 cup all-purpose flour
1 tablespoon plus 1 teaspoon packed dark brown sugar
1 tablespoon plus 1 teaspoon granulated sugar
3/4 teaspoon cinnamon
1/2 stick cold unsalted butter, cut into 1/2-inch pieces
For cake:
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
3/4 teaspoon pure vanilla extract
1/2 stick unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1/2 pound blueberries (3 1/4 cups)
Accompaniment: sweetened whipped cream

Steps:

  • Preheat oven to 350°F with rack in middle. Line bottom and sides of a 9-inch square baking pan with heavy-duty foil, leaving an overhang on 2 sides. Butter bottom and sides of pan, then dust with flour, knocking out excess.
  • Make streusel topping:
  • Stir together flour, sugars, cinnamon, and a pinch of salt in a large bowl. Blend in butter with your fingertips or a pastry blender until mixture forms large clumps.
  • Make cake:
  • Whisk together flour, baking powder, baking soda, and salt in a bowl.
  • Stir together sour cream and vanilla in a small bowl.
  • Beat together butter and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 5 minutes. Add egg and beat until well blended.
  • At low speed, mix in flour mixture in 3 batches, alternating with sour-cream mixture and mixing until just combined.
  • Gently fold in blueberries.
  • Spoon batter into pan, smoothing top (preferably with an offset spatula). Crumble half of topping evenly over batter.
  • Bake 25 minutes, then remove from oven and crumble remaining topping evenly over cake. Bake until a wooden pick inserted into center comes out clean, about 25 minutes more. Cool in pan 10 minutes. Lift out cake using foil and cool completely on rack.

1/2 cup milk
2 cups blueberries

Steps:

  • Place the dry streusel ingredients in the bowl of a food processor. Drop in the butter, and pulse until small crumbs form. (This can also be done in a bowl with a pastry blender.) Set aside.
  • Preheat the oven to 375 degrees. Oil an 8-inch square pan.
  • To prepare the cake batter, cream the softened butter in a large mixing bowl. Add the sugar a little at a time, and beat until the mixture is light and fluffy. Add the egg, and beat well.
  • Sift together the flour, cornstarch, baking powder and salt. Add the vanilla extract to the milk. With the mixer on low speed, add the sifted dry ingredients to the butter mixture, alternating with the milk and vanilla mixture. Next, turn off the mixer, add the blueberries, and stir in by hand.
  • Spread the batter evenly in the oiled cake pan. Spoon the streusel topping evenly over the batter, place in the oven, and bake for 40 to 45 minutes, or until a toothpick comes out clean from the center of the cake. Let the cake cool for 15 minutes, then cut into squares, and serve warm.

1 cup blueberries
1 teaspoon lemon zest
4 eggs
1 1/2 cups sour cream (divided use)
1 tablespoon vanilla
2 1/4 cups flour
1 1/2 cups sugar
1 tablespoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup butter
3/4 cup flour
3/4 cup sugar
1/2 cup dark brown sugar (divided use)
2 tablespoons cinnamon
2 tablespoons butter
1 cup pecans, chopped

Steps:

  • Preheat oven to 350°F Place oven rack in lowest position and generously butter a bundt pan.
  • Make Streusel: In small food processor, process flour, sugar, 1/4 cup of dark brown sugar, and cinnamon for 15 seconds. Remove 1-1/4 cups of mixture; add 1/4 cup dark brown sugar to it and set aside. Add cold butter and chopped pecans to mixture in food processor; pulse 10 times and set aside.
  • In small bowl, combine blueberries and lemon zest and set aside. In another bowl, whisk the eggs, 1 cup sour cream and vanilla together and set aside.
  • Mix the flour and rest of dry ingredients together until blended in mixer. Add the butter and remaining sour cream and blend on low until ingredients are moistened.
  • Gradually add egg mixture in 3 additions, beating 20 seconds after each addition. Increase speed and beat till batter is light and fluffy.
  • Spread 2 cups of batter in pan and top with 1/2 cup blueberries. Sprinkle with half of sugar streusel. Repeat layers. Spread with remaining batter and top with pecan streusel.
  • Bake 50 to 60 minutes or until toothpick comes out clean when inserted in the middle. Cool on wire rack 30 minutes. Invert out on plate and turn so streusel is on top. Cool 2 hours. Wrap in foil and store at room temperature.
