Steps:
- Put cottage roll in large pot or dutch oven; add onion, carrots, bay leaves, and peppercorns.
- Cover with water.
- Bring to a boil over high heat; reduce heat and simmer for 1 to 1-1/2 hours, depending on the size of the roast.
- Remove meat from liquid and place in a baking pan; brush with honey mustard and brown sugar mixed to a paste. Reserve the liquid to cook the cabbage.
- Place roast in the oven, just on "warm" while you cook the cabbage.
- Thinly slice cabbage and cook in the liquid that the roast was in for approximately 10 to 15 minutes until desired tenderness.
- Good served with boiled new potatoes.

- Place pork roast in a large Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add the remaining ingredients; return to a boil. Reduce the heat. Cover and simmer for 1 hour or until the vegetables are tender; drain.

CLASSIC IRISH BOILED DINNER
I grew up eating this boiled dinner on Sundays When I visited my Irish Granny. One of the things that makes this recipe special is that instead of corned beef, it calls for Smoked Shoulder. Oh What A yummy smell will fill your kitchen as this cooks!

- Place the smoked pork into a large pot and fill with enough water to cover. Season with salt and pepper, cover and bring to a boil. Reduce heat to low and simmer for about 30 minutes.
- Add the carrots, potato, cabbage and onions; cover and continue to simmer. Use kitchen string to tie the green beans into a bundle. Add them to the pot, cover and continue to cook until the carrots and potatoes are tender, about 25 minutes.
- To serve, remove pork to a serving dish. Arrange vegetables around it. Allow the pork to rest about 10 minutes before slicing.

- In a large Dutch oven or soup kettle, place ham, onion, carrots, potatoes, rutabagas, salt and pepper. Add water just to cover; bring to a boil. , Place cabbage on top of vegetables. Steps:
- Let refrigerated pork sit on counter for 1 hour prior to cooking.
- Rinse the shoulder under cold running water.
- Place shoulder in large stock pot.
- Cover shoulder by 2 inches with cold water.
- Place stock pot over Medium-High heat on stove top. Cover.
- Let shoulder come to a rolling boil.
- Reduce heat to just below Medium.
- Boil ham, 20 minutes per pound or until done.
- Ham is done when internal temp reaches 150F degrees.
- Turn off heat. Let ham sit in pot to cool completely.
- Remove from liquid and place on a cutting board.
- Remove and discard the skin and the excess fat. Save the bones.
- Slice as desired.
- Enjoy!
MOM'S NEW ENGLAND BOILED SMOKED PORK BUTT DINNER

- 1. Have a large soup pan of boiling water.
- 2. Take the pork butt out of the plastic wrap and carefully remove the paper casing. Carefully place the pork butt in the boiling water and boil on low heat for about an hour.
- 3. Place the potatoes, turnips (or Rutabaga) and carrots in. When they are almost done cooking, place cabbage in. When the potatoes, turnips or rutabaga, carrots and cabbage are finished cooking take them all out of the pan. Take the pork butt out and slice it in not too thick slices. But about 1/3". Place on serving plater, place the vegetables around the pork and pour a little melted butter and chopped parsely or chopped dill on top of the vegetables. Serve hot!
- 4. Save the water to make a bean soup or chowder with.
- 5. Rose Packing Co. in Illinios sells both kinds of Smoked Pork Butt, rolled or square. I call them and spoke to Rick who is here in California. It is the exact recipe they used for making the Dainty brand my Grandmother, Mom and I used. They can have a case of it sent to their supplier here and I will pick it up next Friday. I am one happy camper!
BOILED DINNER WITH HAM HOCKS, GRANDMA'S
Grandma loved this boiled dinner with ham hocks. I use ham or corned beef when I make it but I want to post the original for the cookbook I am working on. If you like old fashioned ham hocks you might like this one.

- 1. In a 5 to 6 quart stock pot, combine potatoes, carrots, onion, and garlic. Place the meat on top of the vegetables; sprinkle with dill seed and pepper. Pour the broth over the all. Meat should be covered. Add water, if needed to raise level of liquid.
- 2. Cover and cook on simmer for 2-2 1/2 hours. Watch level of liquid while cooking to keep all ingredients in simmering liquid. Meat should be almost done, if so add cabbage. (Otherwise cook a bit longer before adding cabbage.) Cook 30-40 minutes more until meat and cabbage are done.
BOILED PORK DINNER
Originally from my mother-in-law and based on a New England dish. I've modified it over the years to fit my family's taste. The amount of vegetables can certainly be varied according to your own preference.

- Cut pork into 2 or 3 large chunks and trim extra fat. In large stock pot, saute pork in olive oil until browned on all sides. Sprinkle pork with thyme and garlic; remove to plate.
- Deglaze pan with white wine, stirring to bring up browned bits; return pork to pot.
- Add all other ingredients except cabbage. Bring to a boil; lower heat, cover and keep on low boil for about 2 hours or until pork starts to fall apart. This can take longer if pork simmers at a lower temperature. This is a good dish to make on cold winter days; the pork can simmer along for many hours if you'd like to hold it longer.
- About 15 minutes prior to serving, cut cabbage into large shreds; stir into pot. (If it looks like too much, add half now and stir in more after first addition starts to wilt.) Bring to a boil and cook until cabbage wilts and is soft.
- This makes a soupy roast, not a thickened gravy. Serve in large bowls with good bread to sop up the au jus. It's even better the second day.
- This can be made in a crock pot, but needs to be adjusted: use less broth (only a cup or two); transfer everything to a pot when ready to add the cabbage in order to boil it down (hence, "boiled dinner"). You can skip the browning, but the flavor is not as good.
