BOILED YUCA WITH SAUTé ONIONS
Boiled Yuca with Sauté Onions is a simple and flavorful cassava dish popular in Caribbean cooking that can be made for lunch or dinner in less than 30 minutes.

Steps:
- In a small bowl, combine onion, vinegar, salt and pepper. Let it soak for about 15 minutes or while yuca cooks.
- Place yuca into a medium-sized pot. Pour in water and salt. Simmer over medium heat for 10-15 minutes, or until tender (test by poking with a fork). Remove the yuca from the water.
- Heat olive oil, in a small pan, over medium-high heat. Add onions and sauté until onions begin to cook and start becoming translucent. Remove from pan.
- Serve boiled yuca and top with sauté onions. Pair with fried Dominican cheese, salami and/or eggs.

- Place the yuca into a pan and fill with enough water to cover. Stir in salt. Bring to a boil over medium-high heat, cover, and cook until tender, about 15 minutes. Drain, and place yucca on a serving plate.
- Meanwhile, place the olive oil, onion, garlic, and lemon juice into a pan. Cook over medium heat about 5 minutes. Pour the hot olive oil mixture over the yuca, and serve immediately.

MARINATED YUCA WITH PICKLED RED ONIONS

- Put the yuca pieces in a heavy-bottomed saucepot and cover with cold water. Season with salt. Bring to a boil and cook until tender, about 10 minutes. Drain and set aside to cool.
- Meanwhile, add the vinegar, lime juice, sour orange juice, olive oil, garlic and red onions to a bowl. Season with salt and pepper. Add the cooled yuca and allow it to marinate for 30 minutes. Just before serving, stir in the parsley.
BOILED YUCA WITH PICKLED RED ONION AND ROASTED GARLIC

- To cook yuca, place pieces in a saucepot and cover with cold water and bring it to a boil over medium-high heat. Once at a boil, lower the temperature and simmer until yuca is tender. Next, place red onion slices in a sauce pot with the vinegar, water, peppercorns, coriander, and 1 bay leaf. Bring the onions to a boil and remove from the heat to cool at room temperature. Once the yuca is tender strain and place in a serving bowl. Spoon the onions over the yuca. Serve with roasted garlic and hot sauce. Season with salt and pepper.
YUCA FRITTERS WITH PICKLED RED ONIONS
Steps:
- Over medium heat boil yuca in salted water until tender, approximately 20 minutes. Make sure not to overcook. Drain yuca and remove the stringy center portion. In a small skillet cook scallions and garlic in 1 tablespoon olive oil until fragrant, approximately 3 minutes; then set aside to cool.
- In a food processor place eggs, parsley, baking powder and sauteed scallion and garlic mixture. Puree until smooth then season to taste with salt and pepper. Allow it to cool then add the yuca and puree all together. In a small skillet heat 2 tablespoons oil and saute red onion, vinegar and oregano for 5 minutes until soft. Season to taste with salt and pepper and set aside to cool.
- Bring the yuca mixture to room temperature. In a heavy bottom skillet heat 2 to 3 inches of oil to 375 degrees. Shape batter in an ice cream scooper and fry the fritter until golden. Place fritters on towel. Season with salt and pepper.
- Arrange fritters on a serving platter and top each fritter with a little pickled red onion on top.

- Place the yuca, 3 quarts water, and salt in a 4-quart saucepan and bring to a boil over high heat. Reduce the heat to medium and cook at a gentle boil until either fork-tender (Paraguayan style), about 25 minutes, or very tender (Cuban style), 30 to 40 minutes. Drain, quickly removing the spindles, and serve at once; or keep warm in the cooking water over very low heat until ready to serve. Douse with a table sauce if you wish, and serve piping hot.

- In a saucepan, add yuca with enough salted water to cover the yuca. Bring to a boil then reduce heat. Cover and simmer for about 30 minutes until the yuca is fork tender. Careful not to overcook it or you run the risk of the yuca getting too mushy.
- Meanwhile, in a large saucepan, heat the olive oil at medium heat. Add the sliced onions and sauté for 5 minutes until they are softened and translucent. Add in the minced garlic, pinch of black pepper, and salt to taste (start with 1/4 teaspoon then adjust to taste). Sauté the garlic for 30 seconds until fragrant then whisk in the sour orange juice until all is combined. Set aside.
- Drain the yuca, transfer to a large bowl with a lid and remove the stringy, fibrous core from the center of each piece of yuca, if desired.
- Pour the hot garlic mojo sauce over the yuca making sure it is all well coated. Cover the bowl and allow it to cool for 10-15 minutes so the yuca absorbs the mojo. Serve immediately and enjoy!

- Place yuca in a large saucepan and add cold water to cover by 2 inches. Add vinegar and 1 1/2 teaspoons salt. Bring to a boil over medium-high; reduce heat to medium and simmer until yuca splits open and is soft throughout, 30 to 45 minutes, depending on thickness of yuca.
