This recipe comes from the book of Traditional Portugese Cooking, which I bought in Lisbon. I have not tried this recipe but am posting it by request. Sorry for the vagueness of the recipe but it's all the information I have! Cooking and serving times are an estimation.

2 cups milk, room temperature
1 tablespoon baker yeast
500 g flour
2 teaspoons salt
125 g margarine, melted
5 eggs
700 g pork or 700 g beef, cooked and cut into pieces
100 g sausage, cooked and chopped
100 g smoked ham
1 egg yolk

Steps:

  • In a large bowl, dilute the yeast with the milk.
  • In another bowl, mix the flour, salt and melted margarine.
  • Now add this to the diluted yeast, slowly so as not to make any lumps.
  • Knead all together.
  • Continue kneading as you add the whole eggs, one by one.
  • Allow the dough to leaven in a warm place for 2 hours.
  • Divide the dough into three parts.
  • Roll out each part and cover the bottom of a greased baking tin with one of the parts.
  • Cover that with half of the meat.
  • Add another piece of pastry and again cover with meat.
  • Finish with the last piece of pastry.
  • Put in the oven for a short while.
  • The book says it should only go in the oven "to give it some consistence".
  • Remove and brush the top with the egg-yolk.
  • Place it again in a medium hot oven to bake.

1 tablespoon active dry yeast
3/4 cup unsifted semolina (durum) flour
1 cup very warm water (110 to 115 degrees F)
3 cups sifted unbleached all-purpose flour
1 teaspoon salt

Steps:

  • Combine the yeast, semolina flour, and water by pulsing 10 seconds in a large heavy-duty food processor (about 11 cup capacity) fitted with the metal chopping blade. Scrape down the side of the work bowl, recover, and let stand until foamy, about 15 minutes.
  • With the machine running, add 1 1/2 cups of the all-purpose flour down the feed tube. It's easier if the flour is poured from a spouted measuring cup into a wide-mouth canning funnel inserted in the feed tube, or a stiff piece of paper rolled into a cone (the opening at the bottom should be at least 1-inch across).
  • Using a plastic spatula scrape the work bowl and, if necessary, redistribute the dough so that it evenly surrounds the blade. Be careful of the blade. Add the salt and remaining flour, distribute evenly over the dough, and pulse for 10 seconds. Again scrape the work bowl and redistribute the dough.
  • Pulse the dough for 20 seconds nonstop, shut the machine off, and let the dough rest covered in the work bowl for 5 minutes. Now pulse for another 20 seconds.
  • Leaving the blade in place, carefully redistribute the dough until it's of uniform thickness. Recover the work bowl, keeping the pusher from the feed tube in. Note the level of the dough, estimate what it should be when doubled in bulk, and mark that level on the side of the work bowl.
  • Let the dough rise in the sealed work bowl until doubled in bulk, about 1 hour. Meanwhile, lightly coat an 8-inch springform pan or 8-inch pie pan lightly with nonstick cooking spray and set aside.
  • When the dough has fully doubled, pulse quickly 4 to 5 times to punch down, then pulse for 20 seconds nonstop. Let the dough rest in the sealed work bowl for 5 minutes, then pulse for another 20 seconds. The dough will roll into a ball and leave the sides of the work bowl reasonably clean.
  • Turn the dough onto a lightly floured surface, shape into a ball, then roll in the flour to dust lightly. Place the loaf in the prepared pan, cover with a clean, dry dish towel, and set in a warm, dry spot until nearly doubled in bulk, this will take about 30 minutes.
  • When the dough has risen for 10 minutes, position 1 rack in the middle of the oven and slide a second rack in the slot just below. Place a large shallow baking pan on the lower rack?I use a 15 1/2 by 10 1/2 by 1-inch jelly roll pan?and half-fill with water. Preheat oven to 500 degrees F.
  • Center the risen loaf on the middle rack and bake uncovered for 15 minutes. Reduce the oven temperature to 400 degrees F. and continue to bake until richly browned and hollow sounding when thumped, about 20 to 25 minutes longer.
  • Remove the bread from the pan as soon as it comes from the oven, set right-side up on a wire rack, and cool to room temperature before cutting.

This traditional Portuguese recipe is courtesy of Emeril Lagasse. The sauce complements the meat pies very well, but could also be used on pasta or even as a pizza topping. It's a long recipe but really not that difficult. Read through the entire recipe first. Emeril wrote this to use as an appetizer, so there are 36 small meat pies. I suppose you could try to make the pies larger if you wanted to serve it as a main course. Enjoy!

1 1/2 lbs ground veal
3/4 cup fine dry breadcrumb, divided
2 tablespoons fresh cilantro, chopped
2 tablespoons flat leaf parsley, chopped
2 tablespoons buttermilk
2 large eggs, divided
1 teaspoon minced garlic
2 teaspoons salt
1/2 teaspoon crushed red pepper flakes
2 tablespoons water
1 tablespoon creole seasoning, divided (or Emeril's Essence)
1/2 cup all-purpose flour
vegetable oil, for frying
2 tablespoons extra virgin olive oil
3/4 cup yellow onion, finely chopped
1 tablespoon minced garlic
2 anchovy fillets, minced
1/4 cup kalamata olive, pitted and chopped
3/4 teaspoon crushed red pepper flakes
1 (16 ounce) can crushed tomatoes
1 tablespoon tomato paste
1/4 cup water
2 tablespoons flat leaf parsley, chopped
2 tablespoons cilantro, chopped
salt & freshly ground black pepper, to taste

Steps:

  • Meat Pies:.
  • Place the veal, 1/4 cup of the bread crumbs, cilantro, parsley, buttermilk, 1 egg, garlic, salt and crushed red pepper flakes in a large bowl and mix quickly but thoroughly.
  • Form the mixture into meatballs the size of a large walnut, about 2 tablespoons each.
  • Beat the remaining egg with 2 tablespoons water and 1 teaspoon Creole seasoning (or Emeril's Essence) in a shallow bowl.
  • Combine the flour and 1 teaspoon of Creole seasoning (or Essence) in another shallow bowl.
  • Combine the remaining bread crumbs with the remaining 1 teaspoon of Creole seasoning (or Essence) in a thrid shallow bowl.
  • Dip each meat pie first into the seasoned flour, then into the egg wash, letting the excess drip off, and finally into the bread crumbs, coating evenly.
  • Flatten each ball slightly to form a patty and place on a baking sheet lined with wax paper.
  • Cover tightly with plastic wrap and refrigerate until ready to cook. The pies may be made ahead of time and kept in the refrigerator for up to 5 hours.
  • Make the Sauce:.
  • Heat the olive oil in a saucepan over medium-high heat.
  • Add the onions and garlic and cook, stirring, until soft, about 4 minutes.
  • Add the anchovy fillets, olives and crushed red pepper flakes and cook, stirring often, until the anchovies dissolve, about 2 minutes.
  • Add the tomatoes, tomato paste, and 1/4 cup water.
  • Stir well and simmer, uncovered, until the sauce has thickened, about 20 minutes.
  • Add the parsely and cilantro, and season with salt and pepper.
  • Keep warm while you finish the meat pies.
  • Finish the Meat Pies:.
  • Add enough oil to come 1/2 inch up the sides of a large heavy skillet and heat over medium-high to high heat until very hot. In batches, fry the meat patties in the oil until deep golden brown, 3 to 4 minutes on each side.
  • Using a slotted spatula, transfer to paper towels to drain.
  • Serve hot with the sauce.

1 pound extra-lean ground beef
½ onion, diced
¼ cup tomato sauce
6 large pimento-stuffed olives, diced
2 tablespoons sofrito (such as Goya®)
1 (1.41 ounce) package sazon seasoning with coriander and achiote (such as Goya®)
2 small garlic cloves, minced and crushed
½ teaspoon oregano
2 (14 ounce) packages frozen empanada dough (such as Goya® discos)
vegetable oil for frying

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion, tomato sauce, olives, sofrito, sazon, garlic, and oregano. Bring to a simmer and cook until mixture thickens, about 15 minutes.
  • Spoon 1 heaping tablespoon of meat mixture into the middle of a disco. Fold dough over, moisten edges, and press with a fork to seal. Repeat with remaining meat mixture and discos.

I'm a seventh-generation French Canadian, and my ancestors started the tradition of serving this meat pie on Christmas Eve. One year I didn't make it, and my daughter and I felt something was missing. The savory pie goes well with salad and fresh rolls for a lighter meal, and it's good served in small portions with turkey and all the trimmings, too.

1/2 pound ground beef
1/4 pound ground veal
1 cup grated peeled potatoes
1/2 cup grated onion

1/4 teaspoon rubbed sage
1/8 teaspoon ground cloves
1/4 cup plus 2 tablespoons water, divided

Steps:

  • In a large skillet over medium heat, cook the pork, beef, veal, potatoes and onion until meat is no longer pink; drain. Stir in the garlic, seasonings and 1/4 cup water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes, stirring frequently., Remove from the heat; cool to room temperature. Stir in bread crumbs. Combine egg and remaining water; stir into meat mixture. , Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Fill with meat mixture. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. 1 cup shortening
1 cup boiling water
3 cups all-purpose flour
1 teaspoon salt
FILLING:
4 cups shredded peeled potatoes
1-1/2 pounds lean ground beef (90% lean)
2 cups shredded carrots
1 medium onion, chopped
1/2 cup shredded peeled rutabaga
1-1/2 teaspoons salt
1/4 teaspoon pepper
EGG WASH:
1 large egg
1 tablespoon 2% milk

Steps:

  • Place shortening in a large bowl. Add boiling water; stir until shortening is melted. In a small bowl, mix flour and salt. Add to shortening mixture; stir until a soft ball forms. Cover and refrigerate until cooled, about 1 hour., Preheat oven to 350°. Divide dough in half. On a lightly floured surface, roll 1 dough portion into a 17x13-in. rectangle. Transfer to an ungreased 13x9-in. baking dish. Press onto bottom and up sides of dish. Trim pastry to 1/2 in. beyond rim of dish., In a large bowl, combine filling ingredients. Spoon into pastry. Roll out remaining dough into a 13x9-in. rectangle. Place over filling. Fold bottom pastry over top pastry; press with a fork to seal. In a small bowl, whisk egg and milk; brush over pastry. Cut slits in top. Bake 1-1/4 hours or until golden brown.
