I've been making this super moist bread for 14 years. My son used to enjoy this spread with peanut butter almost every day of his toddler years! Beating the egg whites separately and baking at a lower temperature give this bread a spongy texture that's "light as a feather."

2 -3 bananas (depending on size)
1/2 cup shortening
1 cup sugar
3 eggs, separated
1 teaspoon baking soda
2 tablespoons hot water
1/4 cup chopped nuts (optional)
1 teaspoon vanilla
1/2 teaspoon banana extract (flavoring) (optional)
1 3/4 cups all-purpose flour
1/4 teaspoon salt

Steps:

  • Mash bananas (I like to puree mine).
  • Cream shortening, sugar and egg yolks and add to bananas.
  • Add soda dissolved in hot water.
  • Add nuts, vanilla and banana extracts.
  • Sift flour and salt together and add to mixture.
  • Fold in beaten egg whites(stiff).
  • Put in greased 9 x 5 loaf pan.
  • Bake at 325 degrees for 45 to 55 minutes, until toothpick comes out clean.
  • Makes one large loaf.

Number Of Ingredients 8

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1 tablespoon plus 1/3 cup sugar, divided
1 cup warm 2% milk (110° to 115°)
1/3 cup shortening
2 eggs
1-1/2 teaspoons salt
4 to 5 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Stir in 1 tablespoon sugar; let stand 5 minutes. Add the milk, shortening, eggs, salt, 3 cups flour and remaining sugar. Beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough (mixture will be sticky). Do not knead. Cover and refrigerate overnight., Punch dough down. Turn onto a lightly floured surface; divide into 24 portions. Divide each portion into three pieces; shape each into a ball. Place three balls in each greased muffin cup. Cover and let rise in a warm place until doubled, about 1-3/4 hours. , Preheat oven to 350°. Bake 13-15 minutes or until golden brown. Remove from pans to wire racks. Serve warm.

Love baking bread and rolls. When wrists began to make kneading difficult I got a bread maker - my hand made recipe#146085 now only made for those special occasions when family gather. This recipe goes back to my first bread maker and is the one I turn to when needing fresh bread or rolls with the taste of old fashioned bread ... in my bread maker perfect bread every time which is a real plus when expecting guests. Great on the dough cycle for rolls and those recipes calling for frozen bread dough - especially for the pull apart breads. Just the right amount of dough to fill a bundt pan when making Manda's awesome Monkey Bread recipe#17248. Do check your bread maker recipe book to assure it can make a dough using four cups of flour.

1 1/2 cups lukewarm water
3 tablespoons margarine
2 teaspoons salt (I use one teaspoon)
2 tablespoons sugar (I use 1tablespoon for bread and dinner buns - 2 - 3 tablespoons for the sweet roll.)
4 cups flour (I whisk the flour before measuring)
1 1/2 teaspoons bread machine yeast (I use Fleishmans bread maker yeast. Keep jar in fridge when not using, take out five minutes before )

Steps:

  • Be sure to whisk that flour before measuring - I soften the margarine in the micro wave.
  • Place ingredients in order listed with the flour and yeast going in last.
  • Choose your cycle.During the first mixing check to assure your dough has the right amount of flour and water - dough should look nice and shiny.Flours differ so you may need to add lukewarm water a teaspoon at a time if it is too dry- a sprinkling of flour if too sticky. Never add more then 3 tablespoons of either the flour or the water. In my breadmaker the whisked flour and the carefully measured ingredients are right on. Makes a large loaf.
  • FOR DOUGH use dough cycle - when cycle complete shape into bread, buns or rolls. I often make braided loaves topping with sesame seeds.
  • Brush tops with softened butter or margarine.Rise 20 to 30 minutes or until double in size.
  • Bake in a 350 oven until nicely golden brown brushing with softened butter or margarine just before they are done - I brush them again when I take them out - makes for nice tops.
  • Time varies - check your machine. Cooking time is machine and baking time.

6 cups buttermilk baking mix
1/4 cup sugar
1 package (1/4 ounce) active dry yeast
1/3 cup shortening
1 to 1-1/4 cups warm water (120° to 130°)
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the baking mix, sugar and yeast. Cut in shortening until mixture resembles coarse crumbs. Stir in enough warm water to form a soft and slightly sticky dough. Turn onto a floured surface; knead gently 3-4 times. , Roll dough to 3/4-in. thickness; cut with a 2-1/2-in. round biscuit cutter. Place on ungreased baking sheets. Brush tops with melted butter. Bake at 400° until lightly browned, 10-12 minutes.

I had some leftover bread that I had baked, and decided to make a bread pudding to attempt to duplicate the recipe at Chuckarama, a buffet located here in St. George. It was a success, as this recipe tastes identical to the restuarant's bread pudding. Since I had just dumped it all in the dish without measuring, I then had to figure out the amounts to write the recipe! I hope you enjoy this pudding as much as we did! Enjoy! - pudding:
5 - thick slices of my bread recipe, torn into pieces
1/4 - cup bourbon whiskey
1 - pint heavy whipping cream
1 - tablespoon mexican vanilla
1/4 - cup brown sugar
1 - egg
2 - teaspoons cinnamon
1 - teaspoon nutmeg
- milk to add, see directions
3 - tablespoons real butter, cut
- optional : raisins 1/2 cup
- ~~~~~~~~~~~~~~~~~
- pouring glaze:
2 - tablespoons melted butter
1 - cup powdered sugar
1 - teaspoon mexican vanilla
2 to 4 - tablespoons hot water

Steps:

  • HOW TO DO IT: Use Pam to spray your casserole dish. Use 2 1/2 to 3 quart size. Tear up the bread into pieces into the dish. Add all of the ingredients: bread, whiskey, whipping cream, vanilla, brown sugar, egg, cinnamon and nutmeg. Add raisins if you want them. (Do not add the glaze ingredients.) Gently mix until well combined. Dot the top with the butter cut into small pieces. Add just enough milk to bring it almost to the top of the bread mixture, but not covering it.
  • BAKE IT: Preheat the oven to 350 degrees. Place the pudding in a shallow 9X13 pan of water and place in the oven. Bake for one hour. Carefully remove the dish from the pan of water and set on the stove. Using mitts, remove the VERY HOT pan of water. Be careful not to spill it on yourself! Put the pudding back in the oven on the rack for 15 minutes or until golden brown. It should be set. Do not overcook or it will dry it out. The pudding should still be moist, but lightly browned, like my photo.
  • GLAZE IT: Make a pouring glaze of 2 tablespoons, melted butter, 1 cup powdered sugar, 1 teaspoon Mexican vanilla and add water gradually 1 to 4 tablespoons and stir until you have a nice pourable glaze. Pour that all over the pudding and let it soak in. Serve warm. Enjoy!
  • Cook's Tip: I use the leftover bread from my recipe: White Bread -- Feather Light! It makes terrific bread pudding!

When I was little, I had an "Aunt" that used to visit, and would always make an incredible banana bread. It was my job to lick the bowl :). I was much to young to ever think about asking for the recipe. So now, many, many years later, I'm still looking for that illusive recipe.....until now. I think I found it this morning. I can only tell you that after licking the bowl......I felt like a little girl again. This bread is so very light and flavourful. Not surprising really.....it's from Bonnie Stern. I don't think I've ever been disappointed in any recipe of hers. Hope you enjoy this as much as I am.....right now.

1 cup banana, mashed
1/2 cup buttermilk
1 teaspoon baking soda
1/2 cup butter, soft
1 cup brown sugar

Steps:

  • Preheat oven to 350*.
  • In a small bowl combine bananas with buttermilk and baking soda.
  • In a medium sized bowl beat butter with brown sugar until light. Beat in egg and vanilla.
  • In yet another bowl combine flour with baking powder and salt.
  • Add flour to butter mixture alternately with buttermilk/bananas beginning and ending with flour.
  • Transfer to a 6 cup/1.5L loaf pan lined with parchment paper.
  • Bake for 50 to 60 minutes.

Number Of Ingredients 9

2 to 2 2/3 - cups of bread flour
3 - tablespoons sugar
1 - teaspoon salt
1/4 - teaspoon soda
2 1/4 - teaspoons active dry yeast in a jar
1/4 - cup water
1 - tablespoon real butter
8 - ounces (1 cup) creamed cottage cheese, blended smooth.
1 - egg , beaten

Steps:

  • EQUIPMENT: You will need a medium sized mixing bowl, thermometer, blender, and an electric mixer.
  • DRY INGREDIENTS: Measure one cup of the flour and put into a medium sized mixing bowl. (you will not use all the flour) Add sugar, salt, baking soda and yeast, stir to mix.
  • WET MIXTURE: In a small saucpan, add the water, cottage cheese and butter. Heat while stirring until the thermometer reads 120 degrees.
  • FIRST RISING: Break the egg into the dry ingredients and beat it with a fork, then add the wet mixture and mix well. Blend with the electric mixer until moist, then beat for 3 minutes at medium speed. Trade your mixer for a wooden spoon and stir in the remaining 1 to 1 2/3 cups of flour by hand to form a soft dough. Use the same bowl you mixed it in. Cover with a tea towel and place in a warm place to rise. I use my oven with the light on. Let it rise until doubled in size. about 45 to 60 minutes.
  • PREPARE YOUR CASSEROLE DISH FOR BAKING: Choose a 2 1/2 to 3 quart casserole dish and grease it or use Pam spray. Set aside. Pre-heat the oven to 350 degrees.
  • SECOND RISING: After the dough has risen, uncover and punch it down to remove the air bubbles, add as little flour as necessary. Turn the dough into the greased casserole dish, and cover and let rise until doubled in size about 45 minutes, then uncover and place in the pre-heated oven (350 degrees) and bake for 35 to 45 minutes. It sounds hollow inside when tapped lightly. Remove the bread from the casserole dish, and butter the top, and place on a wire rack to cool before slicing. Enjoy!
