Boom chakalaka! Born in the townships(probably Johannesburg) of South Africa(Sub-Saharan Africa), chakalaka is a simple, spicy dish of onions, tomatoes and often beans. It has been a staple for generations of black South Africans, and is a required condiment at South African braais, or barbecues. Chakalaka can be served hot or cold, over mealie pap, with slices of bread, or as a condiment for grilled meats. Adapted from whats4eats.

3 tablespoons vegetable oil
2 onions, chopped
2 bell peppers, chopped
2 -3 hot chili peppers, minced (more or less depending on heat desired)
2 -3 garlic cloves, minced
2 teaspoons curry powder
3 tomatoes, chopped
1 (15 ounce) can vegetarian baked beans in tomato sauce
salt, to taste
pepper, to taste
minced fresh ginger (added with the onions)
grated carrot (added with the onions)
shredded cabbage (added after the tomatoes and simmered until cooked)
chopped cauliflower (added after the tomatoes and simmered until cooked)
chopped cilantro (stirred in at the end)

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the onions, bell peppers, chile peppers, garlic and curry powder(if using ginger and/or carrots, add now).
  • Saute, stirring frequently, until the onions and peppers are cooked down and wilted, about 4 to 5 minutes.
  • Stir in the tomatoes and bring to a boil(if using shredded cabbage and/or chopped cauliflower add now). Reduce heat to medium-low and simmer for about 5 minutes.
  • Stir in the baked beans, salt and pepper and stir to heat through. (If using chopped cilantro add now).
  • Serve hot or cold.

1 tablespoon oil, or as needed
3 medium onions, diced
2 medium green bell peppers, diced
3 medium carrots, diced
3 medium tomatoes, diced
2 small Thai green chiles, chopped
¼ cup water
1 cube vegetable bouillon
1 teaspoon curry powder, or to taste
1 teaspoon chili powder
salt and ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat; stir in onions and bell peppers. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Add carrots, tomatoes, green chiles, water, bouillon cube, curry powder, chili powder, salt, and pepper. Cook until mixture is well combined and thickened, 15 to 20 minutes.

2 tablespoons red rooibos tea leaves
1 tablespoon vanilla extract, split open (or 1 vanilla bean) (optional)
1 cinnamon stick
2 teaspoons cinnamon
1 teaspoon ginger powder
3 cardamom pods, split and crushed
2 cups cold water
1/2 cup raw honey

Steps:

  • To make the chai syrup:.
  • Combine all ingredients in a saucepan and cover with a lid. Simmer on medium-low for 1/2 hour to 1 hour or until the mixture reduces to a syrup(mine was not real syrupy, I simmered 1 hour). Then strain the mixture through a fine sieve (discarding solids) into a clean jar with a lid and store in the refrigerator.
  • How to use the chai syrup:.
  • Simply mix 1 teaspoon to up to 1 tablespoon of the chai syrup into hot milk(I use almond milk) and serve. Or mix in a teaspoon to a tablespoon of the syrup into hot water for a great chai tea.

2 cups raw sugar
2 cups fresh grated coconut (or dried grated coconut moistened with a few tbs milk)
1/2 teaspoon ground cinnamon or 1/2 teaspoon freshly ground cardamom
1 pinch sea salt
1/2 cup flour (optional)

Steps:

  • NOTE: 2 cups roasted peanuts, shells and skins removed, briefly heated in a lightly oiled skillet -- or -- a mixture of both coconut and peanuts may be used in place of the grated coconut.
  • In a hot skillet, heat the sugar until it melts and just begins to brown.
  • Reduce heat and quickly add all other ingredients, stirring well as each ingredient is added. When all ingredients have been added to the mixture, continue stirring for about a minute, making sure everything is well mixed.
  • Scoop the mixture into a pan that has been lightly greased or lined with waxed paper. Let rest for a few minutes. Cut into squares or diamonds while still warm.
  • Let cool and serve.

1 fresh vanilla pod, seeds of
15 egg yolks
250 g caster sugar
750 ml whole milk (whole milk)
500 ml fresh cream
375 ml Amarula cream liqueur

Steps:

  • Cut pods in half lengthways and scrape out seeds.
  • Mix egg yolk with sugar until fluffy and white.
  • Heat milk, cream, liqueur and vanilla seeds.
  • DO NOT BOIL!
  • Using a fine mesh strainer remove the vanilla seeds from the mixture.
  • Add the milk mixture into the egg and sugar bit by bit stirring constantly.
  • Place over a double boiler stirring until you have a custard consistency.
  • Never let it boil.
  • Process through your ice cream machine until set.
  • If you do not have an ice cream machine, allow to set in the freezer for 8 hours.
  • Beat into a smooth texture when icicles form in the setting process.
