BOOM CHAKALAKA(VEGETARIAN-SOUTH AFRICA)
Boom chakalaka! Born in the townships(probably Johannesburg) of South Africa(Sub-Saharan Africa), chakalaka is a simple, spicy dish of onions, tomatoes and often beans. It has been a staple for generations of black South Africans, and is a required condiment at South African braais, or barbecues. Chakalaka can be served hot or cold, over mealie pap, with slices of bread, or as a condiment for grilled meats. Adapted from whats4eats.

Steps:
- Heat the oil in a large saucepan over medium heat. Add the onions, bell peppers, chile peppers, garlic and curry powder(if using ginger and/or carrots, add now).
- Saute, stirring frequently, until the onions and peppers are cooked down and wilted, about 4 to 5 minutes.
- Stir in the tomatoes and bring to a boil(if using shredded cabbage and/or chopped cauliflower add now). Reduce heat to medium-low and simmer for about 5 minutes.
- Stir in the baked beans, salt and pepper and stir to heat through. (If using chopped cilantro add now).
- Serve hot or cold.

- Heat oil in a skillet over medium heat; stir in onions and bell peppers. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Add carrots, tomatoes, green chiles, water, bouillon cube, curry powder, chili powder, salt, and pepper. Cook until mixture is well combined and thickened, 15 to 20 minutes.

- To make the chai syrup:.
- Combine all ingredients in a saucepan and cover with a lid. Simmer on medium-low for 1/2 hour to 1 hour or until the mixture reduces to a syrup(mine was not real syrupy, I simmered 1 hour). Then strain the mixture through a fine sieve (discarding solids) into a clean jar with a lid and store in the refrigerator.
- How to use the chai syrup:.
- Simply mix 1 teaspoon to up to 1 tablespoon of the chai syrup into hot milk(I use almond milk) and serve. Or mix in a teaspoon to a tablespoon of the syrup into hot water for a great chai tea.

- NOTE: 2 cups roasted peanuts, shells and skins removed, briefly heated in a lightly oiled skillet -- or -- a mixture of both coconut and peanuts may be used in place of the grated coconut.
- In a hot skillet, heat the sugar until it melts and just begins to brown.
- Reduce heat and quickly add all other ingredients, stirring well as each ingredient is added. When all ingredients have been added to the mixture, continue stirring for about a minute, making sure everything is well mixed.
- Scoop the mixture into a pan that has been lightly greased or lined with waxed paper. Let rest for a few minutes. Cut into squares or diamonds while still warm.
- Let cool and serve.

Steps:
- Cut pods in half lengthways and scrape out seeds.
- Mix egg yolk with sugar until fluffy and white.
- Heat milk, cream, liqueur and vanilla seeds.
- DO NOT BOIL!
- Using a fine mesh strainer remove the vanilla seeds from the mixture.
- Add the milk mixture into the egg and sugar bit by bit stirring constantly.
- Place over a double boiler stirring until you have a custard consistency.
- Never let it boil.
- Process through your ice cream machine until set.
- If you do not have an ice cream machine, allow to set in the freezer for 8 hours.
- Beat into a smooth texture when icicles form in the setting process.
