4 chicken breasts
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons minced dried onion
1/2 cup packed brown sugar
3/8 cup Bourbon
1/2 teaspoon garlic powder

Steps:

  • Place chicken breasts in a 9x13 inch baking dish.
  • In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder.
  • Mix together and pour mixture over chicken.
  • Cover dish and place in refrigerator.
  • Marinate overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove dish from refrigerator and remove cover.
  • Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.

1/2 cup lemon juice
2 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
1 cup good olive oil
2 chicken breasts, bone-in and skin-on

Steps:

  • In a small bowl, whisk together the lemon juice, mustard, 1 teaspoon salt and 1/2 teaspoon pepper. While whisking, slowly add the olive oil until the vinaigrette is emulsified. Set aside.
  • Place the chicken breasts in a baking dish large enough to hold them in a single layer and sprinkle generously with salt and pepper on both sides. Pour half the marinade over the chicken, reserving the other half to use later. Allow the chicken to marinade for at least two hours in the refrigerator.
  • Preheat the oven to 350 degrees F.
  • Roast the chicken for 35 to 40 minutes, or until cooked through. Remove the chicken from the oven and pour the remaining marinade over the top of the chicken. Cover the dish with aluminium foil and allow to rest for 10 minutes.

1 lb chicken tenderloins, boneless

Steps:

  • In a large bowl, combine all ingredients except chicken and stir to mix.
  • Add chicken and stir to coat. Cover and refrigerate for several hours or overnight.
  • Preheat over to 350°F Place chicken and marinade in baking dish.
  • Bake for 30 minutes, basting occasionally with marinade.
  • Remove from oven. Baste chicken with remaining marinade and serve.
