Steps:
- As you peel and slice the apples, toss them with the lemon juice in a bowl.
- In a medium saucepan over medium heat, melt the butter, then add the apples with lemon juice. "Fry" the apples for several minutes in the butter, stirring frequently, for 5 - 10 minutes or until they begin to get tender.
- Stir in the remaining ingredients. Cook for about 5 - 10 minutes longer. Store in a covered glass jar or airtight container in the fridge. Serve warm over French toast, pancakes, cake, ice cream ... anything that goes well with apples ... or just eat them with a spoon.

- Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
- Combine sugar, corn syrup and water in a large saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until thermometer registers 290 degrees F (143 degrees C). Remove from the heat and stir in the bourbon if desired.

- Prepare Big Green Egg or other grill for indirect cooking. Maintain grill temp of 300⁰. Add cherry wood chunks to hot coals for smoke.
- Cook bacon for 8 minutes in a large sauté pan until fat renders but bacon is still soft not crispy. Drain the bacon on paper towel. Reserve 1 TBS of bacon grease for sautéing.
- Add onion to pan and sauté for 2-3 minutes. Add the jalapeno and garlic and continue to sauté for 2 minutes. Add the diced apple and season with a pinch of AP rub. Cook the apple mixture for 2-3 minutes and add ½ cup of brown sugar. Stir to combine then add the bourbon. Reduce the liquid by half then transfer to a small bowl.
- Pour the beans into a dutch oven iron pot. Add the apple mixture, pulled pork, bacon, BBQ Sauce, Dijon Mustard, remaining brown sugar, and seasonings. Stir to combine and place uncovered on the bbq grill.
- Cook beans for 2 hours stirring occasionally and serve.

- Preheat oven to 375°F (191°C).
- Using a handheld or stand mixer with a paddle attachment, or simply using a fork or spoon, beat/mash the butter, sugar, cinnamon, and nutmeg together until combined. Stir in the oats, then the raisins/dried cranberries/nuts, if using. Set aside.
- This can be tricky, but I recommend using a sharp paring knife and a spoon. (Or an apple corer.) I find cookie scoops can easily break or crack the apples. Using a sharp paring knife, cut around the core, about halfway or 3/4 down into the apple. Use a spoon to carefully dig out the core. Takes a bit of patience and arm muscle. Once the core is out, use a spoon to dig out any more seeds.
- Place cored apples in an 8-inch or 9-inch baking pan, cake pan, or pie dish. Spoon filling into each apple, filling all the way to the top. Pour warm water into the pan around the apples. The water helps prevent the apples from drying out and burning.
- Bake for 40-45 minutes or until apples appear slightly soft. Bake longer for softer, mushier baked apples. The time depends on how firm your apples were and how soft you want them to be.
- Remove apples from the oven and, if desired, baste the outside of the apples with juices from the pan. This adds a little moisture to the skin, but it's completely optional.
- Serve warm with salted caramel, whipped cream, or ice cream. Cover and store leftovers in the refrigerator for up to 2 days.
