SESAME GINGER SALMON
A super easy salmon dish bursting with so much flavor, and it's hearty-healthy too!

- To make the glaze, whisk together honey, soy sauce, sesame oil, Sriracha, ginger and sesame seeds in a small bowl; set aside. In a medium bowl, whisk together olive oil, soy sauce, rice vinegar, sesame oil, brown sugar, garlic, ginger, sesame seeds and green onions. In a gallon size Ziploc bag or large bowl, combine ginger marinade and salmon filets; marinate for at least 30 minutes to overnight, turning the bag occasionally. Preheat oven to 400 degrees F. Lightly coat a 9×13 baking dish with nonstick spray. Place salmon filets along with the marinade onto prepared baking dish and bake until the fish flakes easily with a fork, about 20 minutes. Serve salmon immediately with honey ginger glaze.

Steps:
- The marinade- Put the ginger in a fine sieve, or a sieve lined with muslin, and press the juice into a bowl.
- You need to extract 7 tbs ginger juice - add a little water to the ginger pulp and squeeze again if necessary. Add the remaining ingredients, except the sugar, and stir to mix.
- Put the meat or seafood in a non-metallic shallow dish and rub the marinade all over. For meat, cover and leave in the fridge for at least 4 hours or overnight. Fish and shrimp only need marinating for up to 30 minutes in the refrigerator.
- Remember to give the marinated food at least 20 minutes to return to room temperature before cooking.
- To cook- While cooking the food, season and baste it with the marinade. Before brushing the final few strokes on, add the sugar and stir to dissolve; this helps glaze the food, but if the sugar is added too soon, it will burn and stick.

- Combine the lime juice, sesame oil, soy sauce, ginger, orange juice, rice vinegar, vegetable oil, brown sugar, and orange zest together in a large zip lock bag. Mix until well combined. Add the pork chops to the bag and seal and shake to coat the chops evenly. Place into the refrigerator for 40 minutes then remove from refrigerator for the remaining 20 minutes.
- Heat a large pan that has been coated in cooking spray over medium high heat. While the pan is heating up, place a couple of paper towels on a large plate. Remove the pork from the marinade and place on the paper towel covered plate. Pat the meat dry with another paper towel then season with sea salt and freshly cracked pepper, to taste. Place into the hot grill pan and cook for 4-5 minutes, or until golden brown. Flip the meat and cook for another minute to two minutes, or until cooked through. Remove from the grill pan and let the meat rest for 5 minutes before serving. Enjoy.
